Innovations at the Borderline of Food, Nutrition and Health in Germany - A Systems' Theory Approach AgEcon

This article deals with the innovation system in Germany at the borderline of food, nutrition and health. After an overview over existing concepts to analyse innovations in system theory, the major factors (technologies, economic competence, institutional infrastructure, development block) are studied which determine the innovation system in this area in Germany. Afterwards recommendations are outlined on how to modify the innovation system in future.

Modelling Reference-Dependent and Labelling Effects in Consumers’ Functional Food Choices AgEcon

This paper examines the reference-dependent and labelling effects when consumers make choices about functional foods, and explores how changes in reference points could alter individuals’ preferences. Functional food (Omega 3 milk) and regular food (regular milk) are used as examples to explore the potential reference-dependent effects and labelling effects. A consumer utility model with reference point effects is developed. The paper also explores how to model the effects of different labelling (health claim) policies, which could influence consumer preferences by changing consumers’ reference points.

Functional Ingredients and Food Choice: Results from a Choice Experiment AgEcon

In this paper we present the results of a Choice Experiment (CE) conducted to examine how the inclusion of an attribute for a functional ingredient affects consumer food choice. Specifically, we examine consumer attitudes towards bread and the inclusion of a functional ingredient (eg, inulin), which can be added to bread to increase the quantity and the effectiveness of fibre in the final product A novel feature of the design of this CE was the use of Means-End-Chain analysis via semi-structured interviews to reveal key attributes to be included in the CE. In addition, the CE included the Dutch Eating Behaviour Questionnaire (DEBQ) so as to collect information on all participants underlying eating behaviours. Media Impact of Nutrition Information on Food Choice AgEcon

This study estimated the impact of nutrition information provided by popular media on consumers’ purchases in U.S. grocery stores, taking omega-3 fortified eggs as an example. The media index was constructed from multiple information sources by utilizing computer-coded content analysis. Their probability of purchasing omega-3 eggs between 1998 and 2007 based on household-level scanner data was analyzed by logistic regression models to incorporate elements of information effects. The results showed the significant positive impact of nutritional information from the popular media on consumers’ food choices, thus publishing in popular media can be an effective communication approach to promote consumers’ health.

Cross-European and functional food related consumer segmentation for new product development AgEcon

Functional Food emerged as a constant segment in the European food market and offer potential for product innovations which make them attractive for the food industry in nearly stagnating markets. Target group research is one key factor for successful innovative food products. The aim of this project was to develop and test a Functional Food related consumer segmentation model. For this purpose a survey was conducted in Germany, the United Kingdom, Poland and Spain with a total of 590 respondents. Factor analysis revealed consumers' motivation to buy or to refuse Functional Food.
