Olive oil consists mainly of triglycerides, in about 97 to 99% by weight. The minor compounds are a complex mixture of polar, apolar and amphiphilic substances, such as tocopherols, phenolic compounds, sterols, chlorophyll, carotenoids, terpene acids, monoglycerides and diglycerides, free fatty acids and volatile compounds. These volatiles are the compounds directly responsible for the aroma of the oil. Extra virgin olive oil has a complex aroma with more than 100 volatile compounds identified, among aldehydes, alcohols, esters, hydrocarbons, ketones and furans. A palma de óleo ou dendê (Elaeis guineensis) e o caiaué (E. oleifera) são espécies da família Arecaceae, podendo ser cruzadas entre si, com produção de descendentes híbridos férteis, chamados no Brasil de óleo de híbrido interespecífico de palma ou óleo de palma de alto oleico. A hibridização entre E. oleifera x E. guineensis pode elevar o conteúdo de ácido oleico e de compostos bioativos, como carotenoides e tococromanóis no óleo da polpa. Atualmente, no Brasil o Pará é o estado produtor de óleo do híbrido de palma com produção estimada em 7000 ton/ano, com aumento expressivo da área plantada nos últimos anos. Há um pleito no Codex Alimentarius para a adoção de um padrão para este óleo (“High Oleic Palm Oil”) e os resultados de composição são necessários... |

This work presents the study of nonpolar compounds from plants belonging to the genus Paepalanthus Mart. (Eriocaulaceae). Long-chain linear aliphatic hydrocarbons were identified by GC-FID and GC-MS. The results indicate that Paepalanthus subg. Platycaulon species present a very homogenous profile, with carbon chains of n-alkanes ranging from C25 to C31, most samples presenting higher frequencies of C27 and C29 homologues. Paepalanthus subg. Paepalocephalus species may be distinguished from one another by the distribution of main n-alkanes. P. macrocephalus, subsect. Fruits and nuts from the North and Northeast regions of Brazil were collected to determine the fatty acid profile of their oils. The species studied were Brazil (Bertholletia excelsa H.B.K.), Mucajá (Couma rigida M.), Inajá (Maximiliana maripa D.), Jenipapo (Genipa Americana L.), and Buriti (Mauritia flexuosa L.) nuts. Fatty acid methyl esters were analyzed by gas chromatography with flame ionization detection (GC-FID). Brazil nut major fatty acid was 18:3n-3 (α-linolenic acid), and Buriti nut had approximately 23 times more 18:3n-3 than the pulp. Mucajá nut presented high content of 12:0 (lauric acid) and 16:0 (palmitic acid), and Mucajá pulp showed significant levels of 18:2n-6 (linoleic acid).
