Study on factors affecting Thai Hom Mali rice quality aims to investigate causal factors contributing to rice qualities such as production process, post-harvesting process and storage.This research was carried out in rice growing areas of northeast and upper north of Thailand during 2011-2014. Process design of quick cooking rice by using microwave has not been studied before. This project used microwave cooking and microwave drying in the process of quick cooking rice production. The white rice (KDML 105) was soaked in water for 1 hour until the moisture content of 30% was reached and then cooked by microwave at 800 Watt for 10 minutes using the rice and water ratio 1:9 until the moisture content was 63%. The cooked rice is dried by a continuous microwave of 1000 Watt, belt speed 6.72*10-3 m/s for 10 rounds. The total time of drying was 14.1 minutes. Khao Dawk Mali 105 (KDML 105) (Oryza sativa L) is well known as Thai jasmine rice. The major aroma component of KDML 105 is 2-Acetyl-1-pyrroline (2AP). Besides the 2AP, KDML 105 contains various volatile components which contribute aroma and flavor to the rice. Moreover, hydrocarbons, aldehydes, ketones, and alcohols are also found in the rice sample. Due to the complex nature of the sample, some volatile components which co-elute with rice matrix components are not easily identified using traditional GC-MS. GCxGC-TOFMS is a new technique that increases peak capacity and enhances peak sensitivity. อิทธิพลของการใช้สารเคมีป้องกันกำจัดโรคไหม้คอรวงในแปลงผลิตเมล็ดพันธุ์ขาวดอกมะลิ 105 Thai Agricultural

Studies was conducted to determine the effects of fungicide usage on rice blast disease, caused by Pyricularia grisea (Cooke) Sacc. [= Magnaporthe grisea (Hebert) Barr] on rice cultivar KDML105 in Mae Hong Son Province. The four fungicides usage were isoprothiolane (Fuji one) tricyclazol (Beam 75%wp) Azoxystrobin + Difenoconazole (Ortiva 32 SC and Carbendazim (Cardazin-F). The results showed the four fungicides were use in rice KDML105 to be more effective in suppressing blast and protecting yield, compared to control (non-treat). The fungicides that Azoxystrobin + Difenoconazole was moderately resistant to leaf and neck blast, with the lowest percentage unfilled grains per panicle and have highest yield (669 kg/rai) with compare to the other.

The objectives of this study were to compare the use of bio-fertilizers LDD 12 combination with compost between LDD recommendation and farmers use, which affect on rice (Khao Dowk Mali 105 variety) yield, the economic internal of return and soil chemical properties. Soil was the soil series group no.17 (Renu soil series). A randomized completely block design (RCBD) with 7 treatments were employed. The result of this study found that soil pH in all treatments was increased. Soil organic matter was increased (0.44-0.66%). The use of compost produced by farmer alone, compost produced by farmer with chemical fertilizer at the rate 1/2 and compost produced by farmer with chemical fertilizer at the rate 3/4 led to the highest available phosphorus in both 2 years...

Viability and quality changes of brown rice are important to find out the appropriate approach of brown rice management in trade. Two experiments, (1) Survey on viability and qualities of brown rice in trade and (2) Longevity and quality changes of brown rice after harvest, were carried out in Pathum Thani Rice Research Center during 2002-2004. Viability of brown rice sampled from millers and exporters at the range of 0, 1-25, 26-50 and 80-100% were found at 5, 6, 12, 23 and 54%, respectively. Low amylose content, soft gel consistency and 1-2 aromatic level were found in all samples. Free fatty acid was 14.04-50.78 mg KOH/100 g starch.
