Em virtude da escolha dos ingredientes e metodologia de fabricação serem imprescindíveis para a obtenção de novos sabores de sorvete, o presente documento descreve um processo tecnológico para obtenção de um sorvete saudável e com características sensoriais diferenciadas, utilizando frutas cultivadas na região Nordeste. Fazem parte da formulação polpa de melão (Cucumis melo var cantalupensis), fécula de mandioca, sementes de linhaça marrom (Linum usitatissimum L.) e coalhada dessorada caprina em substituição ao leite em pó, creme de leite, gordura vegetal hidrogenada, corantes artificiais, conservantes e flavorizantes. |

Abstract: The objective of this work was to evaluate the relationship among phenotypic and quality traits in a set of indigenous and exotic accessions of linseed (Linum usitatissimum). The experimental material consisted of 151 accessions of linseed belonging to landraces and cultivars collected from diverse agroecological zones. Five randomly chosen plants of each accession in each replicate were tagged, and data were recorded for the 12 following agronomic traits: days to flowering, days to maturity, plant weight, plant height, tillers per plant, secondary branches per plant, capsules per plant, seeds per capsule, 1,000 seed weight, harvest index, seed yield per plant, and oil content. O objetivo deste trabalho foi avaliar o efeito da adição de linhaça‑dourada e derivados sobre os teores de colesterol e a oxidação lipídica em hambúrguer bovino. Foram elaborados hambúrgueres com 5,0% de óleo, ou farinha, ou sementes de linhaça‑dourada, além de uma formulação‑controle (sem adição de linhaça ou derivados). Os hambúrgueres foram mantidos congelados, a ‑18ºC, por 90 dias. Determinou-se o teor de colesterol e a estabilidade oxidativa dos produtos crus e grelhados. Os menores teores de colesterol foram observados nos produtos com óleo de linhaça. No entanto, a adição de linhaça e derivados aumentou a oxidação lipídica em hambúrguer bovino (maiores valores de malonaldeído), após o armazenamento. |

This study aimed to verify the phenotypic responses when subjected to different doses of nitrogen fertilizer in the form of urea, to development of culture flaxseed. The experiment was conducted in Cascavel in the state of Parana / Brazil. Treatments considered were: T1: control, T2: 25, T3: 50 and T4: 75 kg ha-1 N as NH3. The planting was carried out in an area of 2.56 m2. After 120 days of culture were carried out analyzes of the following variables length of plant, number of capsules, fresh weight and dry weight of shoot, the parameters evaluated varied according to the amount of fertilizer applied. |

The objective of this work was to compare the physicochemical characteristics of quinoa and flaxseed bread. Sensory acceptance, color and texture were also appraised. They showed appropriate balances between their content of polyunsaturated and saturated fatty acids and low levels of trans fatty acids. Flaxseed bread had larger amounts of mono and polyunsaturated fatty acids, omega-6 and omega-3, as well as a more balanced omega-6/omega-3 ratio. Quinoa bread, on the other hand, had the advantage of presenting smaller contents of saturated fatty acids. With regard to color and texture, quinoa bread had similar characteristics to the flaxseed bread. The quinoa bread was well accepted by the consumers, who expressed high interest in buying it. |
