Ocorrência de Listeria monocytogenes em queijo artesanal tipo coalho comercializado na cidade de Manaus-AM, Brasil Acta Amazonica

A ocorrência de Listeria sp. em queijo artesanal tipo coalho comercializado na cidade de Manaus foi estudada. No período de março a maio de 1998 foram coletadas 58 amostras do produto em feiras e mercados localizados em seis zonas da cidade de Manaus. Em duas amostras de queijo foram identificadas duas espécies de Listeria: L. monocytogenes e L. innocua. A primeira espécie é reconhecidamente patogênica para o ser humano. Os resultados apresentados demonstraram haver risco de transmissão de enfermidades pelo consumo de queijos processados sem os devidos cuidados de higiene.

Actividad antagonista de bacterias lácticas aisladas del medio marino contra cepas de Listeria ABCL

En el presente trabajo se estudiaron 74 bacterias lácticas para determinar su capacidad de inhibir el desarrollo de Listeria monocytogenes ATCC 7644 o L. innocua ATCC 33090. Dentro de las 7 que exhibieron actividad, 2 se seleccionaron para estudios complementarios y se identificaron por métodos fenotípicos y genotípicos como Enterococcus mundtii Tw 56 y Lactococcus lactis subsp. lactis Tw 34. Después de la neutralización con NaOH y tratamiento térmico (100 ºC y 121 ºC durante 5 min) la actividad antagonista del sobrenadante libre de células se mantuvo activa. The presented study aimed to verify the effect of different pH values, enzyme solutions and heat treatments on the antimicrobial activity of the bacteriocinogenic strain Lactococcus lactis subsp. lactis Lc08 and to test their antimicrobial activity against Listeria monocytogenes in reconstituted skim milk at refrigeration temperatures. This strain was previously described as a nisin Z producer and capable of inhibiting L. monocytogenes growth in in vitro tests. Avaliou-se a qualidade microbiológica da silagem produzida em Portugal e otimizaram-se alguns aspectos relacionados com a eficácia de detecção de Listeria monocytogenes mediante protocolo baseado na técnica de hibridação in situ fluorescente (FISH) para detecção directa desse microrganismo em amostras de silagens. O protocolo foi aplicado a 74 amostras, em simultâneo com o método bacteriológico convencional. Este último permitiu a detecção de L. monocytogenes em 11 silos (15%). ABSTRACT This study focused on assessing the microbiology of conveyor belts surfaces, cleaned or not with pressurized water, and verification of the influence of this process on the microbiological quality of poultry meat. A reduction on mesophilic, psychrotrophic and Enterobacteriaceae counts (P<0.05) on dry conveyor belts compared to wet ones was observed. For the chicken leg (consisting of drumstick and thigh) samples, no statistically significant differences were detected on counts of indicators of microorganisms on poultry legs (composed by drumstick and thigh). Cepas de bactérias lácticas recuperadas de 336 colônias isoladas e selecionadas foram submetidas ao teste de atividade antimicrobiana direta, que identificou as produtoras de substâncias antimicrobianas capazes de inibir in vitro o desenvolvimento de duas cepas indicadoras de Listeria monocytogenes. As 108 cepas que inibiram diretamente pelo menos uma das cepas indicadoras receberam a denominação DTEI e foram selecionadas para o teste de atividade antimicrobiana indireta contra as mesmas cepas de L. monocytogenes, assim como frente a outras cepas de bactérias lácticas de origens diversas. Relatam-se dois casos de listeriose ocorridos em ovinos leiteiros da raça Lacaune, mantidos em confinamento e alimentados com silagem de milho. O exame histológico do tecido nervoso mostrou meningoencefalite supurada, e a imunoistoquímica foi positiva para Listeria monocytogenes com isolamento da bactéria do tecido nervoso. Enfatiza-se a ocorrência dessa enfermidade em ovinos leiteiros que apresentavam lesões na cavidade oral e eram alimentados com silagem de baixa qualidade.

Effect of eugenol on growth and listeriolysin o production by Listeria monocytogenes BABT

The inhibitory effect of eugenol, a naturally occurring compound mainly present in the essential oil fraction of cloves, was studied on the growth and listeriolysin O (LLO) production by Listeria monocytogenes. Potassium efflux from cells promoted by eugenol was also determined after 24 h incubation in phosphate buffered saline. Eugenol promoted a delay on the growth of L. monocytogenes at concentrations of 100, 300 and 500 µg mL-1and above 800 µg mL-1 the effect was bactericidal. Production of LLO by L. monocytogenes in the presence of eugenol was reduced 80-100%. Virulence genes and genetic relationship of L. monocytogenes isolated from human and food sources in Brazil BJID

ABSTRACT The herein presented assay provided a bacteriological and molecular characterization of 100 samples of L. monocytogenes isolated from human (43) and food (57) sources, from several regions of Brazil, and collected between 1975 and 2013. Antigenic characterization defined 49% of serotype 4b samples, followed by 28% of serotype 1/2b, 14% of serotype 1/2c, 8% of serotype 1/2a, and 1% of serotype 3b. Both type of samples from human and food origin express the same serotype distribution. Multiplex PCR analysis showed 13 strains of type 4b with the amplification profile 4b-VI (Variant I). Screening for antimicrobial activity among bacteria isolated from the Amazon Basin BJM

Bacteria producing antimicrobial activity were identified among 86 isolates from aquatic environments of Brazilian Amazon Basin. Antimicrobial activity against at least one indicator strain was detected for 59 isolates (68.6%). Inhibitory activity was mostly against Gram-positive bacteria, such as Listeria monocytogenes and Bacillus cereus. The antimicrobial substances produced by 19 strains that showed higher inhibitory activity were partially characterized. These antimicrobial substances showed thermal resistance for up to 100°C and partial resistance to proteolytic treatment. Inhibition of listeria monocytogenes in minas frescal cheese by free and nanovesicle-encapsulated nisin BJM

The effectiveness of free and nanovesicle-encapsulated nisin to control Listeria monocytogenes in Minas Frescal cheese was investigated. Commercial nisin was encapsulated into liposomes of partially purified soy lecithin. Free (0.1 mg/mL and 0.25 mg/mL) and nanovesicle-encapsulated nisin (0.25 mg/mL) were applied onto the surface of cheese samples, and L. monocytogenes was inoculated before incubation at 6-8°C for 28 days. A bactericidal effect was observed with 0.25 mg/mL free nisin; a bacteriostatic effect was observed for liposome-encapsulated nisin and 0.1 mg/mL free nisin. Considering the lack of information available in Brazil concerning listeriosis, the present study aimed to analyze phenotypic and genotypically Listeria monocytogenes clinical isolates from the Southwestern region of the State of São Paulo, Brazil. From January 1995 to May 2005, thirteen isolates of L. monocytogenes from twelve patients with listeriosis were sent to the Adolfo Lutz Institute (Campinas Regional Laboratory, São Paulo, Brazil). Bacteriocin-producing Lactobacillus sakei 1 was cultivated in Brain-Heart Infusion broth (24 h at 25ºC). The culture supernatant was neutralized, filter sterilized and used to test the activity of bacteriocin against Listeria monocytogenes 1/2a, at 8ºC and 15ºC. Non-bacteriocinogenic Lactobacillus sakei ATCC 15521 was used as a negative control. Behaviour of L. monocytogenes in sliced, vacuum-packed mortadella BJM

This study evaluated the growth of naturally occurring L. monocytogenes in sliced, vacuum-packed mortadella samples during storage at 5ºC until the expiration date. Tukey's test indicated that counts of L. monocytogenes on 0, 10, 20, 30 and 40 days of storage were significantly different (p<0.05), indicating growth during shelf life. In three trials, the mean increase was 1.72 log cycles. Vacuum packing and storage under refrigeration were not effective in controlling the growth of L. monocytogenes in sliced mortadella, indicating that good manufacturing practices and implemented HACCP programs are essential to assure safety of this product.
