Potenciais benefícios do sistema de rastreabilidade animal dos EUA para o setor de carnes americano AgEcon
Resende Filho, Moises de Andrade.
This article investigates the potential gains to the U.S. meat sector with the implantation of the U.S. National Animal Identification System (NAIS). The focus is on the effect that the NAIS could have on consumers’ risk perception about eating meat. System of demand equations are estimated using time series of food safety indexes variables used as proxies for consumers’ reactions to news on meat safety issues. The series of food safety indexes are built on the basis of the number of food safety news reported in top U.S. newspapers. Using the preferred model estimates, three scenarios are constructed in order to account for the cases wherein the NAIS is not implemented, is implemented only for beef and is implemented for beef and pork. The differences in...

Food Tracing and Interoperability of Information Systems in the Hungarian Meat Industry AgEcon
Fuzesi, Istvan; Herdon, Miklos; Pentek, Adam.
The manufacture, distribution and retailing of foodstuffs became an extraordinarily complex business activity. The complete food chain must provide for the implementation of the strictest quality standards and safety regulations. Problems of food safety can be solved by keeping (and enforcing) applicable regulations, by introducing modern quality assurance systems, by making possible the traceability of products and their identification. The safety of product lines and tracing of products cannot be solved without using information systems of a certain level. During our research, it came to light that, generally, agrarian traceability struggles with many more problems. Companies try to live up to expectation, but they often apply different solutions with...

Internationalization and Firm Performance in Agribusiness: Empirical Evidence from European Cooperatives AgEcon
Heyder, Matthias; Makus, Christian; Theuvsen, Ludwig.
The ongoing internationalization of markets has become a major issue also for companies of the agribusiness. Nevertheless, neither the degree of internationalization of agribusiness firms nor the internationalization-performance relationship in the agribusiness sector have been analyzed thoroughly so far. To help fill this void, we use panel data compiled from annual reports and balance sheets to investigate the internationalization as well as the internationalization-performance relationship of 21 leading European cooperatives in the dairy and meat sectors. Our results indicate that internationalization has a significant positive impact on firm performance.

Dynamics of Price-Cost Margins in the U.S. Meat Industry AgEcon
Chidmi, Benaissa; Fadiga, Mohamadou L..
This study analyses the stochastic behavior of price-cost margins (PCMs) in the U.S. meat industry. It, first, develops and estimates a vertical relationship economic model to derive PCMs in the U.S. meat industry (Beef, Pork, and Poultry). Second it analyzes the behavior of PCMs by decomposing them into their seasonal, cyclical, and trend components using the state-space and the Kalman filtering methods. Price-cost margins in the U.S. meat industry are governed by two common trends and two common cycles. The study also found cyclical variability of PCMs is the highest with chicken, secular variability of PCMs is the highest with pork, while seasonal variability of PCMs is the highest with beef.

The Role and Success Factors of Livestock Trading Cooperatives: Lessons from German Pork Production AgEcon
Theuvsen, Ludwig; Franz, Annabell.
In recent years the organization of meat supply chains has been among the most animatedly discussed topics in agriculture and the food industry. Many authors hypothesize that contracts and vertical integration are paramount for the future competitiveness of meat production. But most arguments do not take into account the complexity of today's meat supply chains and the pivotal role private and cooperative livestock traders still play in many countries. In this paper we analyze the role and success factors of livestock trading cooperatives in modern meat supply chains. The results show that livestock trading cooperatives are most successful when their service spectrum meets members' needs and offers an added value to farmers. From a theoretical perspective,...

Predictive efficiency of distinct color image segmentation methods for measuring intramuscular fat in beef Ciência Rural
Mello,Renius; Vaz,Fabiano Nunes; Pacheco,Paulo Santana; Pascoal,Leonir Luiz; Prestes,Rosa Cristina; Costa,Patrícia Barcellos; Kipper,Djenifer Kirch.
Intramuscular fat (IMF) influences important quality characteristics of meat, such as flavor, juiciness, palatability, odor and tenderness. Thus, the objective of this study was to apply the following image processing techniques to quantify the IMF in beef: palette; sampling, interval of coordinates; black and white threshold; and discriminant function of colors. Thirty-five samples of beef, with a wide range of IMF, were used. Color images were taken of the meat samples from different muscles, with variability in the IMF content. The IMF of a thin cross-section meat was determined by chemical lipid extraction and was predicted by image analysis. The chemical method was compared with the image analysis. The segmentation procedures were validated by the...
