How the perception of quality for beef evaluated by the buyer at the time of purchase: Study in three Brazilian cities of different sizes – Curitiba, Campo Mourão and Palotina Animal Sciences

In order to evaluate how beef buyers in the State of Paraná, Brazil south value meat quality indicators, and attributes of credibility, 519 interviews were conducted in three cities with different sizes (Big – Curitiba, Medium – Campo Mourão and Small – Palotina). The interviews were applied after the meat was placed in the shopping cart and were composed of five questions, including question of spontaneous response: (i) factors that the buyer considers at the purchasing time; (ii) information which the buyer considers important to appear on the meat label; and three questions of stimulated response: (i) preference for meat preparation and exposure for sale, (ii) factors that the buyer considers when purchasing the meat, and (iii) preference for marbling...

Meat quality of Maremmana young bulls Animal Sciences

Maremmana is a local Italian breed reared in southern Tuscany and northern Latium. Twenty-two young bulls were reared in pasture system with concentrate supply (PSCS), whereas 20 young bulls were reared in feedlot intensive system (IS) in order test differences between meat typologies. The bulls were slaughtered at 18 months old. The performances at slaughtering were similar between finishing systems. IS bull meat has shown higher cooking loss than PSCS bull meat (p < 0.001), higher moisture content (p < 0.01), and fat (p < 0.001), and lower crude protein (p < 0.001). O presente trabalho objetivou avaliar o uso de ractopamina em diferentes níveis de inclusão na dieta para suínos em terminação. Foram utilizados 50 suínos híbridos comerciais com peso inicial de 74,08 (1,42) kg, aleatoriamente distribuídos em cinco blocos casualizados. Havia dois animais em cada parcela experimental, macho e fêmea, alimentados com dieta suplementada com ractopamina (0, 5, 10, 15 e 20 ppm) durante 28 dias. Foram avaliados desempenho e características de carcaça dos animais. A ractopamina melhorou o desempenho, espessura de toucinho, profundidade, área de olho de lombo e rendimento de carne na carcaça, porém sem influenciar no consumo de ração, rendimento de cortes e qualidade da barriga. This study was carried out to evaluate carcass characteristics, chemical and fatty acid composition of the Longissimus muscle of 78 Purunã bulls (39 bulls/treatment) slaughtered at 18 or 24 months old. The experimental design was completely randomized. The bulls were distributed into two systems: 1) Finished in feedlot 13 to 18 months old (T18), or 2) Finished in feedlot from 21 to 24 months old (T24). The diet, roughage:concentrate ratio of 52:48 (dry matter basis), contained 12% crude protein and 72% total digestible nutrients. Effect of probiotics and Yucca schidigera extract supplementation on broiler meat quality Animal Sciences

The current study investigated the effect of dietary supplementation with probiotics and Yucca schidigera extract on physicochemical parameters, proximate composition, mineral content and fatty acid profile of broiler breast and thigh muscles. In total, 240 one-day old broilers were randomly allocated into two dietary treatments groups: 1) Control (basal diet), 2) experimental (basal diet with two probiotics Pediococcus acidilactici and Saccharomyces cerevisiae and Yucca schidigera extract). This study aimed to assess the influence of lamb finishing systems on zootechnical performance, as well as on carcass and meat quality. The experiment was conducted at the APTA’s experimental farm. Thirty-three lambs were used – both sexes, initial age of 90 ± 3 days, Texel with Santa Inês, each animal being one experimental unit, with 6 males and 5 females per treatment. The aim of this study was to evaluate the effect of increasing levels of concentrate on the quantitative and qualitative carcass characteristics of feedlot ewes. Twenty-four crossbred ewes were randomly distributed in four treatments: (1) diet with 20%; (2) 40%; (3) 60%; and (4) 80% of concentrate. Animals were slaughtered when those receiving the diet with 80% of concentrate reached adult weight, at around 50kg LW. The objective of this work was to investigate the effect of road transportation conditions on the occurrence of broiler PSE-(Pale, Soft, Exudative) and DFD-like (Dark, Firm, Dry) meats in the Brazilian commercial slaughterhouse plant. Samples of Pectoralis major m from 47-day-old broilers of commercial lineage were analyzed. The results indicated that water-bathing birds just before journey over 3.0km promoted the occurrence of 46.0% of PSE and 4.0% of DFD-like meat, while birds under non-water bathing conditions presented 14.7 and 2.0%, respectively. The aim of the present study was to produce fish silage by lactic acid fermentation and evaluate its use in feeding of quails (Coturnix coturnix japonica). An oven-dried mixture of fish silage and soybean meal (1:1 w/w) was used to prepare the diets with different levels of inclusion (0, 10, 20 and 30%) and evaluate its effect on the performance and meat quality of 160 quails. Meat quality and carcass characteristics of Merino Precoce suckling lambs raised under confinement in the Mediterranean semi-humid dryland of Central Chile Ciencia e Investigación Agraria

Twenty-eight Merino Precoce suckling lambs raised under confinement in the Mediterranean semi-humid dryland of Central Chile were studied to evaluate meat quality and major carcass characteristics. Animals were grouped by slaughter weight (10 and 15 kg) and sex (7 males and 7 females in each weight group). The average commercial and true dressing percentages were 53 and 55%, the average ribeye area was 11.7 cm², and the average dorsal fat thickness was 1.5 mm. The objective of this study was to evaluate the physicochemical and microbiological parameters of pork meat submitted to dry salting. Sodium chloride (NaCl) was added at levels of 0%, 2.5%, 5%, 7.5% or 10% by the meat weight. Dry salting technique was used, which consists of rubbing the sodium chloride manually, followed by a rest period. The data were submitted to analysis of variance using a completely randomized experimental design. The means were compared by Duncan test at 5%. The salting process reduced (P < 0.05) humidity and water activity, and it increased (P < 0.05) ash, chloride, palmitic acid, and water holding capacity levels compared to those of the control. Abstract The aim of the present study was to compare the proximate analysis and fatty acid profile of water buffalo meats. Samples were taken from three different local meat suppliers in Baklalı, Orcunlu, and Nakkas villages, Istanbul Province, Turkey. Animals were males 24 months old reaching final live weights of 420-440 kg. Significant differences were observed in pH, moisture, fat, color and fatty acid profile of water buffalo meats (p<0.05 and p<0.01). The results of proximate analysis demonstrated that the pH (5.03-5.46), moisture (48.60-59.73%), fat (18.90-30.02%), ash (2.48-3.56%), protein (15.12-17.65%), ‘L’ lightness (24.38-33.50), ‘a’ redness (9.88-13.81), and ‘b’ yellowness (5.66-8.53) were found in the samples.
