Milk processing system of Amdo Tibetan pastoralists in Qinghai, China : From the case of a settled nomadic household and an agro-pastoral household in the eastern Qinghai OAK

本稿では,青海省東部におけるアムド系チベット牧畜民(遊牧民と農牧複合民)の乳加工体系を把握することを目的とした。アムド地域では,生業形態の枠組みを越え,発酵乳系列群,クリーム分離系列群,凝固剤使用系列群の 3 つの乳加工技術が広く採用されていた。発酵乳系列群の特徴は,1)生乳を自然発酵もしくは酸乳を添加してからチャーニングしていること,2)チャーンには攪拌桶・攪拌棒と革袋の両方の技術が存在していたこと,3)乳脂肪の分画が食用にはバターで終了していること,4)バターミルクの加熱・脱水により非熟成乾燥チーズを加工していること,5)自然発酵乳/酸乳添加した生乳を用いたバター・チーズの加工(非加熱自然発酵亜系列)と酸乳の加工(加熱乳発酵亜系列)とはそれぞれ別々に加工されていることにある。クリーム分離系列群と凝固剤使用系列群の乳加工技術は,主要な乳加工技術とはなっていなかった。今後,調査件数を増やし,周辺地域の事例と比較分析することにより,アムド系チベット牧畜民の乳文化の起原と発達史を解明していくことが課題である。

Spatial Competition of Milk Processing Cooperatives in Northern Germany AgEcon

In this paper we develop a theoretical model of competition among marketing cooperatives (co-ops) in a spatial market setting assuming uniform delivered pricing and Loschian conduct. The model is an extension to Alvarez et al.'s (2000) spatial competition model for investorowned firms (IOF). Theoretical results include i) that the prices for raw milk are, ceteris paribus, higher in a pure market of coops than in a pure IOF market; ii) that even coops may imperfectly transmit price changes upstream; and iii) that the price farmers receive for their raw product is a function of economic space (distance times transportation costs) between coops. Szarvasmarhafajták tejtermelésének gazdasági értékelése AgEcon

Azt vizsgáltuk, hogy a különböző mennyiségű, zsír- és fehérjetartalmú tejet termelő szarvasmarhafajták (holstein-fríz, magyar tarka, jersey) esetében miképpen alakulnak a tejtermelés bevételei és költségei, valamint azt, hogy a koncentráltabb tejért fizetett felárak és a feldolgozásukban jelentkező költségmegtakarítás milyen arányban állnak egymással. Megállapítható volt, hogy a tehenészetek mindhárom fajtánál, a jelenlegi árviszonyok mellett, némi jövedelmet csak a költségvetési támogatásoknak köszönhetően érnek el. Like in other CEEC, transition in the beginning of the 1990s had significant consequences for the agricultural and food sectors in Slovakia. For example, Slovakian consumers reacted to the abolition of consumer subsidies by drastically reducing their consumption of milk and milk products. Concurrently, milk production declined and now stands at fifty percent of its 1989 level. Dairies were closed down while those remaining carried on producing under constantly increasing overcapacities. In the years prior to EU accession, activities in the milk sector were primarily aimed at the adoption of EU standards. Report on the Position of the Hungarian Milk and Dairy Sector AgEcon

In recent years the Hungarian milk sector has had serious problems. Since the EU accession, domestic milk production has continuously declined, the balance of the foreign trade of milk and dairy products has deteriorated year after year and the degree of self-sufficiency has fallen below 100%. This paper, drawing on the study of Popp and Potori [2009], analyses why the competitive position of the Hungarian milk and dairy sector has collapsed in recent years.

The Dairy sector in Uganda has responded positively to agricultural sector liberalisation policies that took effect in the 1990s. Total national milk production has grown from 460 million litres in 1990 to 1.6 billion litres in 2011, with per capita milk consumption growing from 16 litres in 1986to 58 litres by 2010. A variety of dairy products that were previously imported are now being produced locally in the country. Driven largely by dairy, the livestock sector has maintained positive growth rates averaging 3 percent per annum compared to the declining (and often negative) growth rates registered in the food and cash crop sub sectors. Cheese and milk quality of F1 Holstein x Zebu cows fed different levels of banana peel Animal Sciences

This study aimed to evaluate the effects of the inclusion of different levels of sun-dried banana peel in the diet for crossbred cows on the quality of Minas fresh cheese and milk. Diets consisted of 0, 15, 30, 45 and 60% replacement of sorghum silage with banana peel. Ten cows were assigned to two 5 x 5 Latin squares experimental design. Milk samples were taken from each cow and analyzed for composition. Milk was pasteurized for the production of Minas fresh cheese, which was weighed to determine the yield and analyzed for texture, physical and chemical characteristics and consumer acceptance test.
