The purpose of this paper is 1) to investigate the milk processing system in the Balkan Mountains,central Bulgaria,2) to analyze its characteristics,and 3) to discuss a development history of maturation / non-maturation,mold using / mold non-using in cheese processing. It was confirmed there are fermented milk processing series and solidifying-additives using series in the milk processing system of the central Bulgaria. Fresh basil (Ocimum basilicum L.) is used in food, phytotherapic industry, and in traditional therapeutic, due to its essential oil content and composition. Nevertheless basil can not be kept for long periods after harvest and its quality can be reduced. This work aimed to assess the influence of the season and harvest time in the postharvest conservation of basil stored for different periods. Basil was harvested at 8 am and 4 pm both in August/1999 and January/2000. Cuttings were conditioned in PVC packages and stored for 3, 6, and 9 days. Fermentation and aerobic stability of corn silage inoculated with Lactobacillus buchneri R. Bras. Zootec.

The characteristics of fermentation and aerobic stability were evaluated in corn silage inoculated with different doses of Lactobacillus buchneri. The whole corn plant (300 g/kg DM) was ensiled in quadruplicate laboratory silos (7L). L. buchneri 40788 was applied at 5×10(4), 1×10(5), 5×10(5) and 1×10(6) cfu/g of fresh forage. Silages with no additive were used as controls. After 130 d of ensiling, the silages were subjected to an aerobic stability evaluation for 12 days, in which chemical and microbiological parameters as well as the temperature of the silage were measured to determine the aerobic deterioration. Fermentation and aerobic stability were evaluated in high-moisture corn (HMC) silage inoculated with different levels of Lactobacillus buchneri. The HMC composed of 654 g/kg dry matter (DM) was ensiled in quadruplicate laboratory silos (7 L) per treatment. L. buchneri 40788 was applied at 5 × 10(4); 1 × 10(5); 5 × 10(5); and 1 × 10(6) cfu/g to the ground corn. Silages with no additive were used as controls. After 140 d of ensiling, the silages were subjected to an aerobic stability evaluation for 12 days in which the chemical parameters, microbiological parameters and silage temperature were measured to determine the aerobic deterioration. Ensiling is a method of preserving a moist crop. A moist crop can support the growth of a wide range of microorganisms, most of which will degrade the nutrient value to livestock. However, ensiling generally controls microbial activity by a combination of an anaerobic environment and a natural fermentation of sugars by lactic acid bacteria on the crop. This fermentation and the resulting low pH primarily suppress the growth of other anaerobic microorganisms. The fermentation can also inhibit yeasts, molds and aerobic bacteria, but the anaerobic environment is essential to preventing most of the spoilage microorganisms from growing.
