The quality of dried meat products and the drying kinetics significantly depends on the status of the raw material going into the drying process. The aim of this study was the determination of the impact of meat status (fresh, mature, frozen-thawed) on the drying kinetics and the resulting quality in terms of colour changes and spectrally deductible information. Drying tests were conducted using meat from organically raised bulls. In fresh meat, freezing leads to a decrease of the drying rate, whilst for matured meat the opposite is true. Aging and freezing have little effect on the end product quality in terms of final product colour. Tomatoes (Solanum lycopersicum) are one of the most consumed vegetables worldwide. However, tomato allergies in patients suffering from birch pollen allergy occur frequently. Due to highly similar protein structures of the tomato allergen Sola l 4 and the major birch pollen allergen Bet v 1, patients cross-react with allergenic proteins from tomato as well as other fruits or vegetables. Die Veredelung von Forellen bietet vor allem kleineren Fischproduktions- und -verarbeitungsbetrieben die Möglichkeit, große Produktionsanteile direkt zu vermarkten und damit den Umsatz zu steigern. Die Gewichtsverluste betrugen im Versuch bis zum küchenfertigen Fisch 17 %, bis zur ganzen Räucherforelle 30 % und bis zum Räucherforellenfilet 51 %. Zur Herstellung von einem Kilogramm Produkt werden dafür im kleinen Verarbeitungsbetrieb 2,6, 10,2 bzw. 34,0 Arbeitskraftminuten benötigt. Bei einer Stundenentlohnung von 15,- EUR werden die Produkte „Küchenfertige Forelle“ mit etwa 0,70 EUR/kg, „Räucherforelle ganz“ mit 2,50 EUR/kg und „Räucherforellenfilet vakuumverpackt“ mit 8,50 EUR/kg durch Arbeitskosten belastet. |

Zur Einschätzung der Wettbewerbsfähigkeit der deutschen Öko-Milchproduktion und –verarbeitung wurde ein internationaler Vergleich mit vier (potentiellen) Konkurrenzländern angestellt. Einbezogen wurden Dänemark und Österreich, zwei EU-Ländern mit einem hohen Anteil an ökologischer Milchproduktion, Ungarn, das stellvertretend für die östlichen Beitrittsländer der EU steht und Argentinien, das stellvertretend für die flächenreichen Exportstandorte in der südlichen Hemisphäre steht. Die wichtigsten Ergebnisse: In Deutschland lag der Anteil der Biomilcherzeugung an der gesamten Milcherzeugung im Jahr 2002 bei etwas über 2 %. Die Trocknung ist einer der ältesten, kostengünstigsten und weit verbreiteten Methoden um Agrarprodukte und andere Arten von Lebensmittel zu konservieren. Am weitesten verbreitet ist der Konvektionstrockner. In den meisten Anwendungen arbeiten die Trockner mit thermischer Energie, die das Wasser im Trocknungsgut in den gasförmigen Zustand überführt und abtransportiert. Die Hochzeit der Forschung über Trocknungstechnik war in den 80er Jahren und in denen die Automatisierung noch nicht fortgeschritten war. Die Trocknungsparameter des komplexen Prozess mit Wärme- und Massenaustausch wurden experimentell ermittelt. Durch das Wachsen des Craft-Bier Sektors wird mehr Hopfen benötigt, der speziellen Qualitätsanforderungen entsprechen soll. Direct heat treatment of two milk types, skimmed and non-standardised, was performed by instant steam infusion and compared with indirect heating. Infusion conditions were temperatures of 72-120°C combined with holding times of 100-700 ms, and indirect heat conditions were 72°C/15s and 85°C/30 s. The activity of indigenous enzymes; alkaline phosphatase, lactoperoxidase, xanthine oxidase and -glutamyl transpeptidase was evaluated. Mainly the infusion temperature was determinant for inactivation. Whey protein denaturation represented by -lactoglobulin increased significantly with infusion temperature.
