In the proceedings of an iPOPY seminar, some results of the research project were presented. First of all, Anne-Kristin Løes and Benjamin Nölting give an overview of the iPOPY project and its first results. This outline of the holistic research approach helps locate the challenges of the supply side of POPY, some crucial aspects of which are analyzed in the following papers. Using an analytic framework grounded in New Institutional Economics and property rights theory, concepts of power and control over access to critical assets along a supply chain has laid the foundation for the analysis of the development of the organic vegetable chain in Denmark. Two commodities were chosen as detailed case studies: organic carrots and iceberg lettuce. By combining qualitative and quantitative data bargain power was revealed to be growing at the retailer node, and producer-retailer relations were examined in detail. The greatest challenge for agriculture is to reduce the trade-offs between productivity and long-term sustainability. Therefore, it is interesting to analyse organic agriculture which is a given set of farm practices that emphasise ecological sustainability. Organic agriculture can be characterised as being less driven by off-farm inputs and being better embedded in ecosystem functions. The literature on public goods and non-commodity outputs of organic farms is overwhelming. Die Untersuchungen konzentrieren sich auf den besonderen Aspekt der Qualitätserhaltung ökologischer Produkte in der Nacherntephase entlang der gesamten Wertschöpfungskette. Die hier geschätzten Verluste von über 1/3 der Erntemengen können zu einem beträchtlichen Teil auf unorganisiertes, unkoordiniertes und dadurch wenig produktangepasstes Handeln der beteiligten Akteure zurückgeführt werden. Mittels qualitativer Interviews wurden Akteure typischer Lieferketten in Deutschland und ergänzend dazu auch in der Schweiz und den Niederlanden zu ihren Aktivitäten zum Qualitätserhalt befragt. Drying of foods is one of the oldest food preservation techniques, but it gains particular importance when regarding food quality and shelf life. Meat snacks are of growing interest because they are high in protein but low in fat and carbohydrates. In organic food production the use of preservatives is limited, and for this reason product specific drying strategies and pretreatments are essential. In this study fresh beef slices were treated with salt (0,5 % and 1 %) and salt and vinegar (0.5% and 5 %) and were dried at 70 °C in a convection dryer. Increasing consumption of organic products in globalised food chains will require the involvement of thousands more smallholder farmers in many regions of the world. A study of Egypt, China and Uganda identified the three key factors of property rights regimes, cultural differences and social organisation as determents of the supply chain organization and farmers’ degree of direct integration in the export markets. The authors describe, how supply chains of organic school food might be organised in a sustainable way in order to serve high quality food to pupils. They present a best practice case of controlled food chains (filiera controllata) from Italy, the European champion of organic school food. From the province and the city of Piacenza in the region of Emilia-Romagna, we can learn a lot about a short and certified organic food-chain, a wide range of regional and organic products provided through a shared logistic organisation among local partners, and specific tender procedures. |
