Applying the Payment Card Approach to Estimate the WTP for Green Food in China AgEcon

This paper uses a payment card approach to reveal consumers‟ willingness to pay for green food in China. We first present a brief introduction of the payment card approach and introduce several methods to estimate the WTP with payment cards, which we subsequently use to estimate WTP values regarding green vegetables, green meat and green eggs in China. Our results indicate that consumers in big cities are willing to pay a higher premium for green food and that WTP values are relatively higher for more expensive food than for cheaper food. In addition, the ratios of premium to price range mainly between 25% and 50% and WTP values obtained from interval midpoint approach are relatively higher than those calculated by other approaches.

Demand for value-added products is highly segmented among different types of consumers. In this paper, we assess consumer preferences for local, organic, and GMO-free potatoes in order to discover their potential niche markets. We identify socio-demographic characteristics that affect consumer preferences and compare the effects of different attributes on consumers' willingness to pay. Results suggest that the attribute "Colorado-Grown" carries a higher premium than organic and GMO-free attributes.

Using a Modified Payment Card Survey on Chinese Consumers’ Willingness to Pay for Fair Trade Coffee: Would the Starting Point Matter AgEcon

Coffee consumption in China is increasing rapidly over the recent years. This study offers one of the few initial attempts to not only understand general consumption behavior associated with Chinese coffee, but to explore the viability of niche markets for coffee with the credence attribute “fair trade”. A modified payment card approach was adopted as the consumer willingness to pay elicitation method. Survey results of 564 consumers from the city of Wuhan, China suggest a positive attitude toward coffee as an alternative drink and a willingness to pay a premium for “fair trade” coffee.
