Para se avaliar o perfil de ácidos graxos da carne de coelhos desmamados em diferentes idades, recebendo dietas com ou sem óleo de soja e oriundos de matrizes alimentadas com dois níveis de energia, foram abatidos 80 animais aos 70 dias de idade. O delineamento experimental foi em esquema fatorial 2 x 2 x 2 (dietas com 2600 e 2800 kcal ED até a desmama “versus” desmama com 28 e 35 dias versus dietas com ou sem inclusão de óleo de soja da desmama ao abate), com oito tratamentos e dez repetições. The objective of this study was to evaluate the plasma lipid profile and plasma fatty acids of dairy cows receiving diets supplemented with annatto. Our aim was to study the influence of weight loss on the fatty acid (FA) composition of liver and erythrocyte phospholipids and oxidative stress status in obese, non-alcoholic, fatty liver disease (NAFLD) patients. Seven obese NAFLD patients who underwent subtotal gastrectomy with a gastro-jejunal anastomosis in roux and Y were studied immediately and 3 months after surgery. Functional food presents specific physiological properties, supplies nutrients and can be naturally found in formulated food or added to it. Seafood plays an important role in human diet, representing the largest stock available of w-3 polyunsaturated fatty acids, especially eicosapentaenoic (EPA) and docosahexaenoic (DHA). Scientific researchers have intensified their studies on fatty acids due to their importance in preventing and/or curing diseases, especially cardiovascular and inflammatory ones. This review describes the most important aspects of w-3 fatty acids found in fish, as well as their roles in the mechanism involved in the prevention and control of diseases.

Effect of nutrients on total lipid content and fatty acids profile of Scenedesmus obliquus BABT

ABSTRACT The effect of nutrients on the total lipid content and fatty acid profile of Scenedesmus obliquus isolated from the south coast of the Caspian Sea was evaluated. The nutritional compositions of the media impacted the growth rate and biomass of S. obliquus that ranged from 0.175 day-1 to 0.209 day-1and 0.92 gr·l-1 to 1.79 gr·l-1, respectively. The alga grew better in the medium which was characterized by higher levels of sodium and trace elements such as Fe, Mn, Mo, and Co and poor in N and P as compared with the other media. The objective of this study was to evaluate the incorporation of omega-3 fatty acids (n-3 FA) on male Swiss mice livers receiving diets based on linseed oil (LO) for up to 56 days. The mice were sacrificed at 7, 14, 28, 42, 56 days and FA concentration was analyzed by gas chromatography. A total of 13 FA were identified on LO feeds presenting alpha-linolenic acid (LNA) contents of 26.97 %. A total 22 FA were identified in the livers of the mice. Part of the LNA was converted into n-3 FA (20:3n-3, eicosapentaenoic acid-EPA, 22:5n-3, and docosahexaenoic acid-DHA), and some of the LNA was stored in the liver. We previously reported that both the high-carbohydrate diet (HCD) and high-fat diet (HFD) given for two months promote lipid deposition and inflammation in the liver and brain of mice. The results obtained indicate a tissue-specific response to both diets. Herein, we compared the effects of HCD and HFD on fatty acid (FA) composition and inflammation in the gastrocnemius muscle. Synthesis of structured triacylglycerols enriched in n-3 fatty acids by immobilized microbial lipase BJM

Abstract The search for new biocatalysts has aroused great interest due to the variety of micro-organisms and their role as enzyme producers. Native lipases from Aspergillus niger and Rhizopus javanicus were used to enrich the n-3 long-chain polyunsaturated fatty acids content in the triacylglycerols of soybean oil by acidolysis with free fatty acids from sardine oil in solvent-free media. For the immobilization process, the best lipase/support ratios were 1:3 (w/w) for Aspergillus niger lipase and 1:5 (w/w) for Rhizopus javanicus lipase using Amberlite MB-1. The objective of this study was to investigate the fatty acid composition of Pimedolus maculatus fillets of fish fed with different diets. The fish were submitted to an adaptation period (over 30 days) and fed only a control diet (diet I). After this period, the fish were divided into two groups: one group received a diet enriched with flaxseed oil (diet II), and the other received a diet enriched with conjugated linoleic acid (CLA) (diet III). Subsequent collections were undertaken after 25 and 50 days. Abstract A factorial categorical design totalling six treatments was applied to investigate the influence of the substitution of corn starch with whole and partially defatted chia flour under the technical characteristics (centesimal composition, instrumental analyses, and sensory evaluation) and nutritional disorders (composition of fatty acids and index of the nutritional quality of the lipid fraction) of ‘dulce de leche’ concentrated to 72 and 78 °B. ABSTRACT: Vegetable oils have been used to substitute pork backfat to improve the fatty acid profile of fermented sausages. The aim of this study was to assess the chemical composition, microbiological properties, and fatty acid profile of Italian-type salami with pork backfat substituted (15% and 30%) by emulsified canola oil. Fat contents decreased while moisture contents increased in Italian-type salami with emulsified canola oil. Modulation of unsaturated fatty acids content in algae Spirulina platensis and Chlorella minutissima in response to herbicide SAN 9785 Electron. J. Biotechnol.

The accumulation of polyunsaturated fatty acids by algae Spirulina platensis and Chlorella minutissima was studied. Response of these organisms to the substituted pyridazinone, SAN 9785, an inhibitor of the long chain fatty acid desaturase, indicated that fatty acid synthesis and their desaturation were regulated differently in these organisms. While the pool of palmitic acid, the precursor for the unsaturated C18 fatty acids, was stringently maintained in the green alga C. minutissima, in the cyanobacterium S. platensis the level of palmitic acid was liberally maintained in spite of the enhanced accumulation of unsaturated C18 fatty acids.

The aim of this study was to assess the effect of dietary eicosapentaenoic acid (20:5n-3) on hemocyte parameters such as hemocyte concentration, phagocytosis, and non-stimulated reactive oxygen species (ROS) production in Pacific oysters Crassostrea gigas, as well on proximate biochemical and fatty acid compositions. Development of lipid oxidation during manufacturing of horse mackerel surimi ArchiMer

When fatty fish are transformed into surimi, lipid oxidation takes place, decreasing the quality of the product. This study was aimed to identify the critical stages of the process in terms of the development of lipid oxidation. Horse mackerels were transformed into surimi on a pilot line and samples taken (hand-skinned fillets = minced fillets, mince, washed and refined minces, paste, surimi and washing water). Most of the lipids were removed during the process and neutral lipids were lost in higher proportion than polar lipids. As a consequence, total lipids of surimi contained more polyunsaturated fatty acids (338 19 g kg(-1)) than total lipids of the minced fillets (220 8 g kg-1). The impact of diets upon the fatty acid composition of haemocyte polar lipids and consequently upon immune parameters has been tested in the oyster Crassostrea gigas and the clam Ruditapes philippinarum. Oysters and clams were fed each of three cultured algae: Chaetoceros calcitrans, which is rich in 20:5(n-3) and 20:4(n-6) and poor in 22:6(n-3) fatty acids; T-Iso (Isochrysis sp.), which is rich in 22:6(n-3) and deficient in 20:5(n-3) and 20:4(n-6); and Tetraselmis suecica, which is deficient in 22:6(n-3) and contains only small amounts of 20:5(n-3) and 20:4(n-6). لدراسة تأثير عملية تحويل سمك السردين واللاطشة إلى المعلبات على الجودة الغذائية، قمنا بمتابعة موشرات جودة الدهنيات و تركيبتها من الأحماض الدهنية و أثبتت النتائج أن تغيرات كمية و جودة الدهنيات متعلقة أساسا بتركيبة سمك السردين أو اللاطشة الطازج بالدهنيات و بتركيبة المادة الحافظة (زيت الزيتون أو الطماطم). كما أثبتت التحاليل بواسطة الكروماتوغرافيا ذات الطور الغازي ثراء المعلبات بالأحماض الدهنية التالية C18 :1 ω9 وC18 :2 ω6 . وأخيرا، يمكننا التأكيد أن سمك السردين واللاطشة المعلب بزيت الزيتون و الطماطم غني بالأحماض الدهنية من عائلتيωω3 وω6 .

Improved production of postlarval white shrimp through supplementation of L-ascorbyl-2-polyphosphate in their diet OMA

L-ascorbyl-2-polyphosphate (ApP) was used as a vitamin C source to study the ascorbic acid (AA) requirements for the early postlarval stages of white shrimp (<i>Penaeus vannamei</i>). First the stability of ApP in the diets was determined: ApP losses after pelletizing and 10 min immersion in seawater were 25-35% and 30%, respectively. Semipurified diets with five levels of ApP (0, 20, 40, 100 and 200 mg kg<sup>-1</sup> expressed as active AA were fed <i>ad libitum</i> to <i>P. vannamei</i> (PL-14 stage, mean dry weight 0.73 mg) for 26 days.
