Regionale Lebensmittel zeichnen sich durch ein hohes Maß an geschlossenen, regionalen Stoff- und Wirtschaftskreisläufe entlang der Wertschöpfungskette (WSK) aus. Sie leisten damit insbesondere auf regionaler Ebene einen Beitrag zur Nachhaltigen Entwicklung und Resilienz. Zur Quantifizierung dieses Beitrags wurde ein Bewertungsmodell entwickelt, welches die Themen regionale Wertschöpfung, regionale und betriebliche Resilienz sowie Produkteigenschaften abdeckt. Dairy farming in Finland is historically a mode of family farming, although modes like dairy farm companies and collaborative farms are increasing. Organic farmers are relatively young, well educated and their farms are modern and in the average, rather large. The use of automated milking systems (AMS) allows larger cattle sizes and makes work easier compared with previous methods. The organic cows’ feed is mainly grown on the farm, which makes organic milk production truly local business. The feeding is based on clover-grass silage, barley, oats, pea and rape-seed, the latter being often commercial. The Food Communities was chosen as a case for HealthyGrowth because they constitute a major novelty within the Danish foodscape. As indicated in section 3, the Food 2 Communities have emerged as the latest incarnation of a series of attempts to forge alternative food networks operating beyond the supermarket system. Denmark is distinguished by a large market share of organic food being sold via supermarkets, but The Food Communities are a novelty due to two factors, (1) they have experienced a rapid growth since the outset in 2010, and (2) they are organised in a decentralised manner, where they continue to split up the network in chapters, each operating within their distinct local area. In Norway, public procurement of food to youth is not well developed in comparison to many other European and Scandinavian countries. School meals are only offered in very few primary schools, and the common school meal is a packed lunch (sandwiches) brought from home, consumed in the class room. Subscription schemes for milk were introduced around 1970, and for fruit around 1995. Organic milk and fruit is offered only in some regions. Since 2007, fruit is served without payment in all schools with a lower secondary level (class 8-10 or 1-10). By a survey amongst companies in the natural/alternative non food sector (natural textiles, cosmetics, alternative pharmaceuticals, paints and building materials) the part of organic renewable raw materials should be identified. The questionnaire included questions about the status quo, the assessment of the further development and the reasons for the use and/or non-use of organic raw materials. 26 of 183 questionnaires have been sent back. The companies use 44 different raw materials in quantities from 2 kg to 1.600 tons. The rate of organic raw materials ranges from 0 to 100%. The contribution revisits the results of a case study conducted in 2009, eliciting quality aspects within a mid-scale values based supply chain. Its main objective is to show how organic values can be combined with new forms of relationships in enlarged regional food supply chains beyond direct marketing. Actors along the supply chain employ similar quality argumentations and a similar understanding of fairness and social sustainability. Moreover their perceptions comply to a large extend with the expectations of consumers. Regional embeddedness and spatial proximity is a key element to achieve this synergy. |
