ABSTRACT We investigated the effect of Alpinia zerumbet essential oil on the quality and shelf life of tambaqui (Colossoma macropomum) fillets stored under refrigeration (10.0 ± 0.5 °C) for 14 days. The treatments were A. zerumbet essential oil at 0.75% v v-1 (AEO 0.75%), A. zerumbet essential oil at 1.5% v v-1 (AEO 1.5%) and a control (no essential oil). The sample quality and shelf life were determined by the total psychrotrophic count (TPC) and chemical parameters (pH, total volatile basic nitrogen, centesimal composition and thiobarbituric acid reactive substances - TBARS) at zero, seven and 14 days of storage time. The TPC decreased significantly (p < 0.05) with an A. zerumbetessential oil level of 1.5% until seven days of storage. The... |

The seeds of a sesame crop contain approximately 50% oil content, one of the main reasons for their cultivation. However, information regarding methodologies for the assessment of quality seeds of this culture are scarce. Therefore, the objective of this study was to adapt the methods of accelerated ageing tests for sesame seeds and investigate changes in the behaviour of isoenzymes. The physiological characterization of the seeds and electrophoretic analysis of the isoenzymes superoxide dismutase, esterase, catalase, alcohol dehydrogenase, malate dehydrogenase and isocitrate lyase were also performed. For the accelerated ageing test, the seeds were subjected to the traditional method, with a saturated NaCl solution, at ageing times of 0, 24, 48, 72, and... |

The study was performed to identify the effect of delayed storage on the control of woolliness and leatheriness during cold storage of the late peach cultivars grown in Brazil. The fruits were harvested at the mature-green stage. All of the cultivars were exposed to temperatures of 20 ± 0.5ºC and 75 ± 3% of R.H. in a cold room for 0, 24, or 48 hours. Afterwards, the fruits were kept at 0 ± 0.5ºC and 92 ± 3% of R.H. for 28 days. The yellow pulp peaches, regardless of the length of delayed storage, did not present any symptoms of woolliness or leatheriness. The white pulp peaches not submitted to delayed storage developed either one or more of the other physiological disorders. Due to their lower level of pulp firmness, the control fruits of ‘Chimarrita’ and... |

In the specific case of sugarcane, producers in Brazil are currently paid by the content of total recoverable sugars (TRS) in the raw material when it reaches the industry, according to CONSECANA: TRS = 9.6316 *PC +9.15 * RSS, where PC is the Pol in cane (apparent sucrose) and RSS are reducing sugars in sugarcane (glucose + fructose). The objective of the project was to propose changes in the procedures used to mathematically determine the TRS, estimating the calorific value of moist cake and weight of moist cake. The final model is then proposed: TRS = 25.9892 + 0.02172*CVmc*WMC+0.536*WMC – 4.14*CVmc + + 4.8158*PC + 4.575*RSS. Thus we obtain the TRS calculated according to the calorific value of moist cake (CVmc), weight of moist cake (WMC), Pol cane (PC)... |

The antibacterial activity of propolis produced throughout the year by different methods of collection (‘intelligent’ collector of propolis - ICP; plastic screen - PC; conventional scraping - CS) on Staphylococcos aureus and Escherichia coli is investigated. Fifteen beehives (five per collector) of Africanized Apis mellifera were used. Monthly produced propolis, with the same collection technique, was mixed for the preparation of the extract. The ethanol extract of propolis (EEP) was prepared at the ratio of 30% (30 g of propolis, completing the volume for 100 mL with ethanol 70%). Two microorganisms, a positive bacterium Gram Staphylococcus aureus and a negative bacterium Gram Escherichia coli, through the methodology of diffusion in agar, were used for... |

The study on osmotic pretreatment of oyster mushrooms was carried out in order to remove the moisture prior to further mechanical drying. Three salt concentration level (10, 15 and 20 g/100 g), two temperature levels of osmotic solution (30 and 45°C) and constant solution to mushroom ratio of 10 (w/v) were selected and the observations on water loss and solid gain were taken at an interval of 30 min up to 300 min. The osmotically pretreated samples were further dried up to its equilibrium moisture content in a tray drier at 60°C and experimental data were fitted successfully using Page and Henderson & Pabis model. The osmo-convective dehydrated samples were evaluated for its quality parameters i.e. color (L, a, b, ∆E, C* and h°), rehydration ratio... |

Most of the world's consumers have used the natural coatings instead of chemical coatings. In this research, some quality properties of Thomson orange were evaluated using Chitosan edible coating (at concentrations of 0.5, 1 and 2%) and chemical coating of fungicide (Ortho Phenyl Phenol) as compared to uncoated samples during storage for three months. Fruit were maintained in cold storage at 6 °C temperature and 85-90% relative humidity, then pH, total soluble solid (TSS) of orange juice and percentage of fruit weight loss were measured during storage every month. The results showed that weight loss of fruit with 2% chitosan coating was lower than other treatments. Also this treatment had high resistance against fungal attacks due to high values of pH, so... |
