The Food Communities was chosen as a case for HealthyGrowth because they constitute a major novelty within the Danish foodscape. As indicated in section 3, the Food 2 Communities have emerged as the latest incarnation of a series of attempts to forge alternative food networks operating beyond the supermarket system. Denmark is distinguished by a large market share of organic food being sold via supermarkets, but The Food Communities are a novelty due to two factors, (1) they have experienced a rapid growth since the outset in 2010, and (2) they are organised in a decentralised manner, where they continue to split up the network in chapters, each operating within their distinct local area. The Food Communities are a predominantly urban phenomenon. |

This review identifies the research done on nutrient budgeting and presents the latest input and output data for use in nutrient budgeting on farm to support rotation and soil management decision making. Based on the research and practice of Nutrient Budgeting (NB) the review provides a draft guide for farmers, advisors and others on the theory and use of NB, including a guide to nutrient budgeting on organic farms. The review identifies all the relevant organic and where appropriate, the non organic research undertaken on nutrient budgeting and related subjects. The review identifies sources of nutrient input/output data for nutrient budgeting, based on available information makes recommendations on updating exisiting data for populating a NB tool,... |

The focus of this work was to study which effects the type of protein and lipid source in the feed for organic Rainbow trout influences had on the sensory quality of final product. Two and four different protein and lipid sources were used in the experiment respectively. The protein sources were fishmeal and a mixture of protein from organic vegetable, while the lipid sources were fish oil and organic oil from linseed, sunflower, rapeseed and grape seed. Sensory analysis was performed after 3, 5, 7 and 14 days of storage in ice. The results showed that both protein and lipid source in the feed can influence sensory characteristics of the trout. After 3 and 7 days of storage in ice differences in the sensory characteristics between rainbow trout’s which... |

Abstract - Consumers who purchase organic foods are motivated primarily by the health benefits. What assurances are there that defining organic products based on inputs, methods, and ingredients will meet or exceed consumer expectations if there are no re-quirements to define, measure, and meet product quality standards? The future of the organic industry will depend on understanding and quantifying con-sumer expectations and then defining metrics for assessing organic product quality that satisfies these expectations. After establishing quantifiable product quality targets, the next challenge will be to correlate farming and processing methods so that the product quality criteria and consumer expectations are satis-fied. |

Value is a key concept for understanding how organic food networks function because values are the foundation of the organic production practice, thus value must be given a significant role in assessing and balancing the effects of organic food networks. At the same time value is a loose concept, widely used and with various meanings in different scientific perspectives, in which ontological difference produces different perceptions of what values are. Assessing organic food networks is thus a complicated process, since the perspective which is chosen has important implications for the analysis and for the outcome of the assessment. This paper reviews five perspectives which predominate in the assessment of food networks, 1) Food Science, 2) Discourse... |

This volume contains proposals for criteria for evaluation of plant protection products, fertilizers and soil conditioners1 to be used in organic agriculture. These ideas were developed in the course of the European Union (EU) Concerted Action project ‘ORGANIC INPUTS EVALUATION’ (QLK5-CT-2002-02565). For more information on this project see the last page of this volume or visit the project website www.organicinputs.org. The present documents were prepared by several working groups of this project, and discussed at a workshop held March 10-11, 2005 in Wageningen, The Netherlands. The proposals also include a “criteria matrix”, which is in Microsoft Excel format, and therefore stands as a separate file. The criteria matrix is discussed in section 5, but... |

A network of 42 sheep farms (including 13 in organic farming (OF)) shows that the gross margin per ewe is 24% lower in OF in the mountains because of high food costs and comparable in the lowlands because of the high level of food self-sufficiency based on the cultivation of fodder and grain; incomes are identical when structural costs are comparable. An analysis of four demonstration farms shows that, given the different conditions, specific livestock management is required depending on the presence of tillable land or not. If their proportion is limited, lambings are equally distributed between spring and autumn in order to maximise fodder self-sufficiency. When crops are possible, lambings are focused on autumn (with good sale prices), which requires... |

Conclusions (1) What can be solved: - Possibly quicker - More transparent, technical and objective evaluation that allows for development What can not be solved: - Differences between countries due to lack of active policy for local registration of Organic Inputs Conclusions (2) What should be considered System effects in: - “domino” effects in the use of other PPP” - substitution of PPP’s - preventing resistance - moving organic production to geographical areas where more Inputs are allowed Conclusions (3) A transparent, technical and system-based evaluation of input materials, aimed at further and equal development of organic agriculture in all EU member states would be highly welcome! |

Protecting water resources from pollutants generated by agricultural activities is becoming more strictly regulated in Europe today, with an obligation to achieveresults. This means that towns willing to improve quality of their domestic water supply are required to regulate farmers’ practices in the water catchment areas. In this paper, we studied three cases (Munich and Augsburg in Germany, and Lons-le-Saunier in France) often listed as successful initiatives/ experiences of preservation of water quality by local authorities that have developed coordination with farmers. In this paper, we carried out a comparative analysis of the construction of city-farmer agreements, based on in-depth surveys and with a particular focus on the role of conversion to... |
