Se describen los efectos de la UV-B sobre la síntesis de pigmentos fotosintéticos (clorofila total, clorofila a, clorofila b, carotenoides), protectores (compuestos absorbentes de UV-B) y azúcares solubles (glucosa, fructosa y sacarosa) en cinco variedades de quinoa de diferentes orígenes geográficos. En general, se demuestra que las variedades reaccionan desplegando diferentes estrategias para protegerse de la radiación UV-B. Estas estrategias pueden ser de tipo morfológico, fisiológico y/o bioquímico. Drying kinetics of quinoa-supplemented feed for laboratory rats during processing at 50, 60, 70, 80 and 90ºC was studied and modeled in this work. Desorption isotherm was obtained at 60ºC giving a monolayer moisture content of 0.04 g water/g d.m. The experimental drying curves showed that drying process took place only in the falling rate period. Several thin-layer drying equations available in the literature were evaluated based on determination coefficient (r²), sum squared errors (SSE) and Chi-square (χ2) statisticals. The quinoa moth, Eurysacca melanocampta Meyrick (Lepidoptera: Gelechiidae), is the main insect pest of the quinoa crop, Chenopodium quinoa Willd. This study explored the diversity of the quinoa crop in Chile from a nutritional perspective. Nutritional properties, minerals, vitamins, and saponin content were assessed in seeds of six Chilean quinoa (Chenopodium quinoa Willd.) ecotypes grown in three main production areas with distinctive climatic and edaphic conditions: Ancovinto and Cancosa in the North-Altiplano or High Plateau, Cáhuil and Faro in the central coastal area, and Regalona and Villarrica in the south of the country. Quinoa is considered a pseudocereal with proteins of high biological value, carbohydrates of low glycemic index, phytosteroids, and omega-3 and 6 fatty acids that bring benefits to the human health. The purpose of this study was to investigate the effects of quinoa on the biochemical and anthropometric profile and blood pressure in humans, parameters for measuring risk of cardiovascular diseases. Four varieties of an Andean indigenous crop, quinoa (Chenopodium quinoa Willd.), were evaluated as a source of dietary fiber, phenolic compounds and antioxidant activity. The crops were processed by extrusion-cooking and the final products were analyzed to determine the dietary fiber, total polyphenols, radical scavenging activity, and in vitro digestibility of starch and protein. There were no significant differences in the contents of total dietary fiber between varieties of quinoa. Abstract The study aimed to assess the influence of quinoa flour of different particle size and degree of wheat flour replacement on dough and bread characteristics. Dynamic rheology and farinographs were used to describe the dough parameters. Specific volume, texture, porosity, color, overall quality and chemical assessment were performed as well. It could be observed that the degree of wheat flour substitution by quinoa flour significantly influenced the G’ and G” values in linear and quadratic terms (p ≤ 0.01 and p ≤ 0.05). The present study was focused on the analysis of agronomical, nutritional, physicochemical, and antioxidant properties of six genetically different quinoa (Chenopodium quinoa Willd) genotypes cultivated in three distinctive geographical zones of Chile. Ancovinto and Cancosa genotypes from the northern Altiplano (19 ºS), Cáhuil and Faro from the central region (34 ºS), and Regalona and Villarica from the southern region (39 ºS) are representative of high genetic differentiation among the pooled samples, in particular between Altiplano and the central-southern groups.
