Alterations of palm oil (Elaeis guineensis) in the continuous industrial par frying of breaded chicken snacks Ciênc. Tecnol. Aliment.

The physical and chemical alterations in palm oil during continuous industrial par frying of breaded chicken snacks were evaluated using a pseudo first-order kinetic model. The acidity index, refractive index, concentration of polar compounds, viscosity, color, and absorbance (232 and 268 nm) of 238 samples of the frying oil collected during 26 days of production were analyzed. For all of the analyses, the results of the oil were below the limits recommended for oil disposal, indicating that the processing conditions were safe and that under these experimental conditions the oil remained suitable for frying. Absolute salinity measurement of seawater has become a key issue in thermodynamic models of the oceans. One of the most direct ways is to measure the seawater refractive index which is related to density and can therefore be related to the absolute salinity. Recent advances in high resolution position sensitive devices enable us to take advantage of small beam deviation measurements using refractometers. This paper assesses the advantages of such technology with respect to the current state-of-the-art technology. In particular, we present the resolution dependence on refractive index variations and derive the limits of such a solution for designing seawater sensors well suited for coastal and deep-sea applications. Salinity is the essential parameter for ocean dynamics studies. Its definition and using in the equations used to calculate the thermodynamic properties of seawater, were revised in 2010, opening the possibility of new sensors developments. In this context, NOSS (NKE Optical Salinity Sensor) has emerged as one of the first underwater instrument for in situ refractive index measurement in the past years open up the scope of possibilities to access to density parameter. This achievement is the fruit of the cooperation between several institutions and the fruit of several years of developments and trials. NOSS sensor is designed to be deployed in coastal environment and open-ocean waters up to 2000m, especially on profiling floats of the Argo network.
