La chía (Salvia hispanica) es una especie de origen Mesoamericano. Su amplia distribución y diversidad genética en México, aunado a su valor alimenticio, medicinal e industrial la convierten en un recurso vegetal promisorio. Con la finalidad de salvaguardar el patrimonio genético, tecnológico y cultural de S. hispanica se evaluó su variabilidad morfológica en materiales silvestres y cultivados, se determinó su número cromosómico y su tamaño del genoma y se caracterizó su sistema reproductivo. In recent years, there has been a growing concern related to soil and water contamination due to the constant dispersal of toxic metals. In addition to their ecotoxicological potential, these elements exhibit a cumulative character that favors their permanence in soil and passage to living organisms, which can lead to an ecological imbalance. Among toxic metals, cadmium (Cd) is an obstacle to agriculture because it can adversely affect food quality and human health, as well as diminish plant growth and productivity. Technological and sensory characteristics of hamburgers added with chia seed as fat replacer Ciência Rural

ABSTRACT: In order to improve nutritional and functional quality, chicken burgers were made with different amounts of chia seed (0, 2, 4 and 8%) as pork fat replacers and evaluated for the microbiological, technological and sensorial characteristics. The proximate composition and the microbiological characteristics of raw burgers were in accordance with Brazilian legislation. Higher additions of chia increased the amount of dietary fiber (up to 1.46%) and carbohydrate in the products and reduced the fat content by up to 29%. The addition of chia seed reduced the a* values and increased the h* values of the raw burgers and reduced the tenderness and degree of lipid oxidation in the cooked burgers.
