The effects of water: shrimp ratio and xanthan gum (XG) concentration on characteristics of shrimp foam were investigated. Foams were prepared from shrimp puree by adding several xanthan gum concentrations (0.1, 0.2, 0.3 % w/w), water: shrimp ratios (2:1, 3.5:1, 5:1 w/w) and whipped for five minutes. Incorporation of 0.2% w/w XG with 3.5:1 w/w water: shrimp ratio was selected because of having better characteristics of produced foams and then dried at 50, 60 and 70°C. Results showed that stability and density of foam increased with increasing xanthan gum concentration. However, increasing water : shrimp ratio caused to decrease in stability and density of foam. As the temperature increased from 50 to 70°C, the drying time decreased to 55 minutes.... |

ABSTRACT This study aimed to describe the Macrobrachium rosenbergii hepatopancreas histomorphology. The hepatopancreas is constituted by a set of blind end tubules, divided into proximal, middle, and distal regions, with the epithelium formed by E, F, B, R, and M cells differently of other species. Measurements of the length and width of the tubules were 419.64+69.09µm and 117.42+16.99µm, respectively. The percentage of each cell type per region was: proximal region (40%B, 20%F, 6.7%M, 33.3%R), middle region (45.4%B, 18.2%F, 9.1%M, and 27.3%R) and distal region (36.4%E, 27.2%B, 18.2%F, 9.1%M, 9.1%R). Studies were carried out to investigate the effect of temperature, salinity, ammonia, nitrite and nitrate on food consumption of pink shrimp Farfantepenaeus paulensis. Juveniles (0.2 - 0.4 g) were acclimated for 15 days in seawater with different temperatures, salinities and concentrations of ammonia, nitrite and nitrate. After the acclimation period, 20 shrimps per treatment were individualized in order to have their ration intake analyzed through the amount of ration offered and left over within a 24-hour period. Mean food consumption presented significant alterations (P<0.05) for the tested temperatures and nitrite concentrations, whereas for the salinity, ammonia and nitrate treatments, shrimp presented no alteration on food intake (P>0.05).... |

Litopenaeus vannamei, which is the most common shrimp species cultivated in the northeast of Brazil, is very susceptible to microbial diseases, and this consequently affects productivity. There are reports of bacteria, viruses and protozoa in these shrimp, but not fungi. This study aims to isolate and identify fungi present in shrimp Litopenaeus vannamei, and in their nursery waters, at two breeding farms in Brazil. The pathogenic potential of the isolates was assessed through the qualitative detection of proteases and aflatoxin B production. The 146 isolated fungi comprised 46 species. The Pacific white shrimp, Litopenaeus vannamei (Penaeidae), represents about 95% of all Brazilian shrimp production. The Brazilian L. vannamei foundation broodstock was made up of specimens collected from different American Pacific sites, but little information was collected on the genetic structure of the broodstock. We used the fluorescence amplified fragment length polymorphism (fAFLP) method to study the genetic diversity of L. vannamei broodstock lines 03CMF1 and 03CBF1 originally produced by breeder-shrimps imported mainly from Panama and Ecuador, although wild individuals from other localities may also have been used in producing these two lines. The stages of gonadal development for the female of "barba-ruça" shrimp (Artemesia longinaris Bate, 1888) were characterized based on histological analysis. Four stages (immature, almost mature, ripe and spawned) were determined according to the structure and arrangement of cells in the ovary. Each stage corresponds macroscopically to a characteristic color, except stages I (immature) and IV (spawned), in which colors are very similar and can be distinguished only microscopically. The chromatic scale varies from white/translucent (stage I), neutral green (almost mature) to dark green (ripe). A molecular typing study on Vibrio strains implicated in shrimp disease outbreaks in New Caledonia and Japan was conducted by using AP-PCR (arbitrarily primed PCR). It allowed rapid identification of isolates at the genospecies level and studies of infraspecific population structures of epidemiological interest. Clusters identified within the species Vibrio penaeicida were related to their area of origin, allowing discrimination between Japanese and New Caledonian isolates, as well as between those from two different bays in New Caledonia separated by only 50 km. The causative agent of myonecrosis affecting cultured Penaeus vannamei in Brazil was demonstrated to be a virus after purification of the agent from infected shrimp tissues. Purified viral particles were injected into specific pathogen-free P. vannamei, resulting in a disease that displayed the same characteristics as those found in the original shrimp used for purification.
