We assessed the effects of supplementing broiler diets with a combination of fermented red ginseng marc powder and red-koji on thigh meat quality of broiler chick during storage. Broilers (n = 120) were randomly assigned to one of two groups: control or treatment with 1% fermented red ginseng marc combined with red-koji. There were four replicates per group, each comprising 15 birds (10 male and 5 female). Neither the dietary supplementation group nor the number of storage days had a significant (p > 0.05) effect on meat pH. O presente experimento foi conduzido em lote de matrizes Cobb desde 46 até 60 semanas de idade. Os tratamentos foram definidos pelas dietas (com e sem adição de 6ppm de cantaxantina na dieta das matrizes) e pelos períodos de armazenamento dos ovos (três e sete dias), em delineamento inteiramente ao acaso, em arranjo fatorial 2x2 (duas dietas x dois períodos de armazenamento). A cantaxantina dietética elevou o escore de cor da gema de sete para 14. O armazenamento dos ovos por sete dias prejudicou a qualidade dos ovos, promoveu oxidação de ácidos graxos da gema e retardou o desenvolvimento embrionário. |

Avaliou-se o efeito da suplementação com óleo de linhaça na dieta, com ou sem injeção de selenito de sódio, sobre o perfil de ácidos graxos e sobre a estabilidade oxidativa do leite de vacas leiteiras. Catorze vacas foram distribuídas em três tratamentos: as do grupo 1, que receberam diariamente 400mL de óleo de linhaça (LIN); as do grupo 2, 400mL de óleo de linhaça + 0,2mg/kg de selenito de sódio IM (LINSe); e as do grupo 3 (controle), que não foram tratadas (C). RESUMO O objetivo deste estudo foi avaliar o efeito metafilático de minerais traços e vitaminas A e E injetáveis, em parâmetros do estresse oxidativo e na função de neutrófilos em fêmeas da raça Holandesa no período de transição. Sessenta animais foram divididos em dois grupos: animais que receberam minerais traços e vitaminas A e E injetáveis (GMTV) (n= 30) e grupo controle (GC) (n= 30). The aim of the present study was to investigate the effects of daily intragastric administration of bullfrog oil (oleic, linoleic and palmitoleic acid-rich oil), corresponding to 0.4% of body weight for four weeks, on fatty acid composition and oxidative stress (lipid peroxidation and catalase activity) in mouse liver. Abstract This study evaluated the sensory attributes and lipid peroxidation of smoked lamb sausage prepared with passion fruit meal, potassium chloride and calcium chloride. The samples were produced and smoked at Instituto Federal do Espírito Santo, where they were kept vacuum packed and frozen until laboratory analysis. The formulations with passion fruit meal presented lower weight loss by smoking. No microbiological growth was detected in the 90-day study period. Mortadella-type sausage manufactured using mechanically deboned chicken meat were reformulated replacing MDCM with increasing amounts of MDCM protein hydrolysates (10%, 20%, and 30%), and their physicochemical, microbiological, and sensorial characteristics were evaluated for 60 days of storage at 4 °C. The higher substitutions resulted in sausages more susceptible to lipid oxidation with higher TBARS values during storage; however, these values were lower than the organoleptic perception threshold. The effect of gamma irradiation (0, 2, 4, and 6 kGy doses) applied to frozen and packed headed shrimp on the fatty acid profile, cholesterol content, and lipid and color stability was evaluated. Myristic acid was higher in shrimp irradiated with 4 and 6 kGy and palmitic acid was higher in samples irradiated with 2 and 6 kGy compared to non-irradiated samples. Considering the extensive use of hot peppers and spicy sauces in the Mexican cuisine, in the present paper, three widely consumed Mexican condiments (mole sauce, achiote, and pasilla hot pepper) were analyzed for their total phenols, flavonoids and proanthocyanidins, antioxidant activity, and protective effect against lipid oxidation in chopped pork meat. All samples were extracted first with methanol and then with acetone, and the extracts were compared. Anemia due to worm infection is a major cause of loss in the sheep industry, due to deaths, drop in average daily gains and long recovery time following treatment. The present experiment was aimed at evaluating the oxidative status and the recovery of red blood cell (RBC) profile in lambs with induced anemia by bleeding, treated or not with dextran iron.
