The aim of this work was to determine the influence of biomass reduction in the cider processing and the quality of the fermented product made on laboratory scale, but in the same conditions usually found in factory units. The must, made with apples of the Gala variety, depectinized and transferred to 500 mL-fermenters, was inoculated with 2.0x10(6) cfu/mL of natural or commercial yeast, and at each 12 hours biomass was removed by centrifugation in one flask of the experimental set, and the must was left to ferment. All seven flasks of the fermented beverage were analyzed for 20-26 days after the inoculation, and the results showed that the best moment for biomass removal was 1.5-2.0 days of fermentation, leading to a product with significant residual... |

Stability of minimally processed radicchio (Cichorium intybus L.) was evaluated under modified atmosphere (2% O2, 5% CO2, and 93% N2) on 3, 5, 7 and 10 days of storage at 5°C. The samples were hygienized in sodium hypochlorite or hydrogen peroxide solutions to identify the most effective sanitizing solution to remove microorganisms. Microbiological analysis was conducted to identify the presence of coliforms at 35°C and 45°C, mesophilic microorganisms, and yeast and mold. Physicochemical analyses of mass loss, pH, soluble solids, and total acidity were conducted. The color measurements were performed using a Portable Colorimeter model CR-400. The antioxidant activity was determined by 2,2-diphenyl-1-picrylhydrazyl and... |

Abstract There is no human activity that is risk free, including those most trivial and essential for survival, such as eating. Various factors impact the risk perception of a population, such as whether the risk is voluntary, known, brings some benefits or whether the information about the risk is provided by sources seen as trusted. Furthermore, regional and cultural aspects, gender and age can also have an impact on risk perception, and the level of scientific knowledge of the individual about the risks has in many cases little impact on the risk perception. In most countries, the perception of consumers to certain risks present in food, including genetically modified organisms (GMO), pesticides and food additives is high, probably due to the lack of... |

Abstract Myrciaria Cauliflora, popularly known as jabuticaba, is a Brazilian native fruit, rich in antioxidants, such as anthocyanins, flavonoids and tannins. In the wake of its properties, the jabuticaba is the study object of current paper which verifies worldwide research and technological development on the fruit. Data on academic research were retrieved from the following databases: Web of Science (WoS), Scopus and Scientific Electronic Library Online (SciELO) and the patents were retrieved from Instituto Nacional de Propriedade Industrial (INPI), European Patent Office (ESPACENET), Derwent World Patents Index (DWPI) and Patentoscope. Studies on the jabuticaba have been frequently developed in recent years and are concentrated in areas of agriculture... |

ABSTRACT: This study aimed to investigate factors influencing the adoption of improved cultivars (ICs) in peach production in Khyber Pakhtunkhwa province of Pakistan. A total of 270 respondents were randomly selected from the three different cultivated areas of Khyber Pakhtunkhwa, namely, Peshawar, Nowshera and Swat. Binary choice model was used in this study to categorise the ICs of peach farmers into adoption and non-adoption. The study identifies that socio-economic, institutional farm resources, and climatic factors are influencing the adoption of ICs of peach production. Results of the estimated model reveal that farmer’s age, education, household size, membership, cell phone, farm size, extension services and the role of the non-government... |

The paper compares two ambitious conceptual structures. The first is the understanding of social-ecological systems developed around the term "resilience," and more recently the term "panarchy," in the work of Holling, Gunderson, and others. The second is Wallerstein's "world-systems" approach to analyzing hierarchical relationships between societies within global capitalism as developed and applied across a broader historical range by Chase-Dunn and others. The two structures have important common features, notably their multiscale explanatory framework, links with ideas concerning complex systems, and interest in cyclical phenomena. They also have important differences. It is argued that there are gaps in both sets of ideas that the other might remedy.... |
