What are the basic principles of 'how to act in an organic way'? In Denmark there has been a comprehensive discussion of this ethical question in connection with a major new organic research effort. Three related principles have crystallised in the discussion: the cyclical principle, the precautionary principle and the nearness principle. These principles have been used in an analysis of the acceptance of different technologies in organic farming and as a basis for making suggestions on future developments. In the process of planning new research in organic farming in Denmark, various issues concerning the principles of organic farming and its future development have come out for discussion. The new research is intended to be pro-active and forward-looking, and help to promote organic farming and a sustainable development of agriculture in general. These objectives can, however, only be fully satisfied if a degree of consensus is reached on the aims and principles of organic farming. We suggest that three general principles of action and development can be set out, the cyclical principle, the precautionary principle and the nearness principle. The institute for Food safety (RIKILT), part of Wageningen Univeristy and Research centre (Wageningen UR) has developed a method to verify the organic nature of eggs. The fingerprint of the natural caretonoids (carotenes and xanthophyllis) in eggs are used to discriminate between production systems. After extraction and processing the results are subsequently compared by statistical methods. MultiTrust projektet har til formål at udvikle metoder til vurdering og kommunikation vedrørende de effekter som økologiske fødevaresystemer har på miljø, menneske og samfund. Hensigten hermed er dels at gøre de økologiske producenter bedre i stand til at udvikle økologien i overensstemmelse med de økologiske principper og i synergi med samfundets målsætninger, dels at gøre det lettere for forbrugere, borgere og politikere at sætte sig ind i og bedømme de forskelligartede bidrag som økologiske fødevaresystemer tilbyder. Det forventes at sådanne redskaber til multikriteriel vurdering og kommunikation kan understøtte en integreret og troværdig udvikling af økologisk jordbrug, og dermed underbygge økologiens langsigtede vækst.
