Influence of thermal treatment of wood on the aroma of a sugar cane spirit (cachaça) model-solution 116
Spoto,Marta Helena Fillet; Leão,Marcelo Machado; Brito,José Otávio Otávio.
The aging process of alcoholic beverages is generally conducted in wood barrels made with species from Quercus sp. Due to the high cost and the lack of viability of commercial production of these trees in Brazil, there is demand for new alternatives to using other native species and the incorporation of new technologies that enable greater competitiveness of sugar cane spirit aged in Brazilian wood. The drying of wood, the thermal treatment applied to it, and manufacturing techniques are important tools in defining the sensory quality of alcoholic beverages after being placed in contact with the barrels. In the thermal treatment, several compounds are changed by the application of heat to the wood and various studies show the compounds are modified,...

Chemical and physicochemical characteristics changes during passion fruit juice processing 116
Fernandes,Aline Gurgel; Santos,Gerusa Matias dos; Silva,Daniele Sales da; Sousa,Paulo Henrique Machado de; Maia,Geraldo Arraes; Figueiredo,Raimundo Wilane de.
Passion fruit is widely consumed due to its pleasant flavour and aroma acidity, and it is considered very important a source of minerals and vitamins. It is used in many products such as ice-cream, mousses and, especially, juices. However, the processing of passion fruit juice may modify the composition and biodisponibility of the bioactive compounds. Investigations of the effects of processing on nutritional components in tropical juices are scarce. Frequently, only losses of vitamin C are evaluated. The objective of this paper is to investigate how some operations of passion fruit juice processing (formulation/homogeneization/thermal treatment) affect this product's chemical and physicochemical characteristics. The results showed that the chemical and...

Using Computational Fluid-Dynamics (CFD) for the evaluation of beer pasteurization: effect of orientation of cans 116
Augusto,Pedro Esteves Duarte; Pinheiro,Talita Ferramola; Cristianini,Marcelo.
In-package pasteurization is the most used method for beer microbiological stabilization. The search for safer and better quality food has created a need to better understand the processes involved in producing it. However, little is known about the temperature and velocity profiles during the thermal processes of liquid foods in commercial packaging, which results in over-dimensioned processes to guarantee safety, decreasing the sensorial and nutritional characteristics of the product and increasing process costs. Simulations using Computational Fluid-Dynamics (CFD) have been used by various authors to evaluate those processes. The objective of the present paper was to evaluate the effect of packaging orientation in the pasteurization of beer in a...

Effect of blanching on physicochemical characteristics of potato flour 75
Nascimento,Revenli Fernanda do; Canteri,Maria Helene G.
ABSTRACT Offering new products obtained from potatoes is a market opportunity which may increase and motivate the consumption of this tuber. It also can contribute for waste reduction and ensure market for growers. Thus, we aimed to produce potato flour and to evaluate the effect of blanching on the physiochemical characteristics of this product after 3-month storage at room temperature. Potatoes cultivar Agata were used to make unblanched and blanched flour, through thermal treatment at 97°C for 5 min. The unblanched potato flour presented significantly smaller contents of moisture (p= 0.006), proteins (p= 0.001) and soluble fibers (p= 0.024), as well as color alteration. However, it presented higher phenolic compound content (23.77%). The blanched potato...

Migration of dissolved organic carbon in biochars and biochar-mineral complexes 86
Lin,Yun; Munroe,Paul; Joseph,Stephen; Henderson,Rita.
The objective of this work was to determine the contribution of dissolved organic carbon (DOC) from a biochar mineral complex (BMC), so as to better understand the interactions between DOC, biochar, clay, and minerals during thermal treatment, and the effects of BMC on amended soils. The BMC was prepared by heating a mixture of a H3PO4-treated saligna biochar from Acacia saligna, clays, other minerals, and chicken manure. The BMC was applied to a sandy loam soil in Western Australia, where wheat was grown. Liquid chromatography-organic carbon detection (LC-OCD) tests were carried out on water extracts from the untreated biochar, the BMC, the BMC-amended soil, and on a control soil to measure the DOC concentration. LC-OCD tests provide a fingerprint of the...

Effect of biomass composition on the condensable gas yield from torrefaction of plant residues 190
Macedo, Lucélia Alves; Rousset, Patrick Louis Albert; Vale, Ailton Teixeira.
This work assessed the effect of biomass composition (ash, volatile matter and fixed carbon content, carbon, hydrogen and nitrogen content, lignin, extractives and holocellulose content) on the condensable gas yield from the torrefaction of rice husk (Oryza sativa L.), jatropha seed husk (Jatropha curcas L.), elephant grass (Pennisetum purpureum Schum. var. mineiro); sugarcane bagasse (Sacharum officinarum L.) and bamboo (Bambusa vulgaris ex J.C. Wendl. var. vulgaris). Biomasses with a particle size between 0.5 mm and 1.0 mm were subjected to torrefaction process using a temperature gradient varying from 250 °C to 300 °C, for 15 min, with a heating rate of 20 °C min-1. Five trials were conducted for each biomass and solid, liquid and gas yields were...

Kinetics of Thermal Transformation of Synthetic Al-Maghemites into Al-Hematites 90
Nonaka,Adriele Galeti; Batista,Marcelo Augusto; Costa,Antonio Carlos Saraiva da; Inoue,Tadeu Takeyoshi; Bonadio,Taiana Gabriela Moretti; Souza Junior,Ivan Granemann de.
ABSTRACT Maghemite (γ-Fe2O3) and hematite (α-Fe2O3) are important iron oxides in Brazilian soils derived from basalt. Maghemite can transform into hematite when exposed to high temperatures. However, isomorphic substitution (e.g., Al3+) may largely influence this process. We analyzed the kinetics of thermal transformation of Al-maghemites into Al-hematites and some of its mineralogical aspects. Synthetic substituted maghemites with different degrees of Al-substitution (0.0, 1.0, 2.0, 2.9, 3.8, 5.6, 6.7, 10.0, 12.0, and 17.1 mol% Al) were subjected to a temperature of 500±10 °C for 0, 5, 10, 16, 64, 128, 192, 360, 720, 2160, 3600, 5040, and 6480 min. After thermal treatment, samples were characterized by X ray diffraction (XRD), differential thermal...
