Abstract <img border=0 id="_x0000_i1034" src="../img/back.gif"> The present study describes the in vitro antimicrobial and antioxidant activity of methanol and water extracts of sweet and bitter apricot (Prunus armeniaca L.) kernels. The antioxidant properties of apricot kernels were evaluated by determining radical scavenging power, lipid peroxidation inhibition activity and total phenol content measured with a DPPH test, the thiocyanate method and the Folin method, respectively. In contrast to extracts of the bitter kernels, both the water and methanol extracts of sweet kernels have antioxidant potential. Abstract The aim of this study was to evaluate in sherbet formation the effects of sugar, milk, and jambolan pulp quantity on the overrun, color, physicochemical characteristics, microbiological characteristics, and acceptance of the experimental sherbets, in addition to evaluating the bioactive compounds of the selected product. Seven formulations were established through the Simplex method. The formulation with 20g 100g-1 sugar, 45g 100g-1 milk, and 35g 100g-1 jambolan pulp was selected (S5) because it was included among the most accepted sensorially (S4 and S5), and also presented higher overrun, chroma, SST/AT, and pH than S4, receiving the scores 8.0; 8.2, 6.4 and 7.1 and 6.1, respectively, for appearance, color, flavor, texture, and odor. Abstract Brazil is the world's largest producer of common beans (Phaseolus vulgaris L.), which are one of the most widely consumed grain legumes in the world. Seven improved genotypes of dry, coloured, Brazilian common beans were analysed for their nutritional (chemical composition, oligosaccharides, phenolic compounds and antioxidant capacity) and protein quality (amino acid profile, amino acid score, trypsin inhibitor activity and in vitro protein digestibility). The grain bean cultivars studied showed a high content of fibre, with some aromatic amino acids present at higher levels than the Food and Agriculture Organization reference protein. The physiological state of a fruit is closely related to ripening and climatic conditions during the growing period when the fruit undergo changes in color, texture, and flavor. The ripening of the fruit can involve a complex series of biochemical reactions with alteration in enzymes activities, phenols, tannins, and ascorbic acid. The activity of enzymes (carboximethylcellulase, polygalacturonase, and pectinlyase), the total concentration of phenolic compounds, condensed tannins, and vitamin C in five stages of maturation were studied. Comparative study of functional properties of eight walnut (Juglans regia L.) genotypes Ciênc. Tecnol. Aliment.

Abstract Eight walnut (Juglans regia L.) genotypes were assessed for the glutathione (GSH) and total phenolic contents (TPC), as well as their antioxidant capacities. The GSH contents were between 1.1 and 7.2 mg 100 g-1. The TPC contents ranged from 33 to 50.3 mg GAE g-1, while the ferric ion reducing antioxidant power (FRAP) values ranged from 156 to 302 mg FeSO4 g-1. A strong correlation (r2=0.8258) was determined between the FRAP values and the TPC. Cupric ion reducing antioxidant capacity (CUPRAC) values ranged from 13 to 35 mg trolox g-1. The correlation between the CUPRAC values and the GSH contents was weak (r2=0.2069). Physicochemical attributes and functional properties of flowers of Brazilian feijoa genotypes PAB

Abstract: The objective of this work was to characterize entire flowers of the feijoa (Acca sellowiana) genotypes 'Alcântara', 'Helena', 'Mattos', 'Nonante', and the accession 2316 for dry matter, total antioxidant activity (TAA), and the contents of soluble solids, ascorbic acid, total anthocyanins, total flavonoids, and total phenolic compounds (TPC), as well as for the petal surface areas and colors. The TAA was quantified by the ABTS and DPPH methods. Flowers of the accession 2316 and of the cultivars Alcântara and Helena showed the highest contents of anthocyanins and flavonoids, as well as the highest values of TPC and TAA.
