| Los usos y costumbres son la forma de convivencia de las comunidades rurales, específicamente de las indígenas. Son normas y acuerdos que establece la asamblea comunitaria, donde predomina la confianza, la solidaridad, la ayuda mutua y el respecto para elegir a la autoridad del pueblo, los comités para la fiesta, del agua, del bosque, entre otras. De esta manera, la comunidad reproduce las tradiciones y costumbres que le dan identidad. | The background of the study is based on previous studies dealing with the areas of Transdanubia and Central Hungary. Those works have proved the hypothesis of author that local ingredients and dishes represent minimum role on menus. The question is how similar or different the choice of menus of Northern and Southern Great Plain is from the previously examined areas of Hungary.
