This work presented a review of energy requirements for cutting different vegetables in order to obtain products that can easily lend themselves to further processing. From the review, the role of some parameters related to cutting tool geometry such as blade sharpness, slicing angle, blade edge geometry, contact length, depth of cut, cutting speed, blade shape and the engineering properties of the vegetables such as crop variety, maturity stage, moisture content, average diameter, average length, average width and fibre orientation were seen to affect the operation of cutting in terms of energy consumption and the overall efficiency of the cutting operation. Campylobacteriosis is a worldwide distributed zoonosis. One of the main virulence factors related to Campylobacter spp. in animals and humans is the cytolethal distending toxin (CDT), encoded by three adjacent genes (cdtA, cdtB, cdtC). The occurrence of Campylobacter spp. in samples of vegetables has not been reported in Brazil yet, and has seldom been described in the international literature. We examined samples of irrigation water and vegetables from kitchen gardens in Campinas, Brazil. The bacterial analysis condemned 22.3% of the vegetable samples, and the parasitological examination condemned 14.5%. The criteria established by the Brazilian legislation condemned 11.8% of the irrigation water samples. Parasites were significantly more frequent in vegetables in the rainy season, while excessive fecal coliforms were more frequent in the dry season. A proper monitoring of the irrigation water supply is important to avoid the contamination of vegetables. |

Mapuche farmers in southern Chile have been cultivating local ecotypes of chili pepper (Capsicum annuum L.), called locally Cacho de cabra for many decades. It is used to make merkén, a condiment that is consumed locally and exported. Many factors impact on food consumption behaviours. The aim of the study is to determine the impact of socio-demographic and ecological factors on vegetable consumption. A 14-question questionnaire was applied on a voluntary basis to 200 individuals who accepted to participate in the study. Their socio-demographic attributes and the vegetable consumption habits of their families were determined. Their average monthly budget for vegetables is 31.82±12.72. The two attributes of purchased vegetables with most demand are cleanliness (61.5%) and freshness (22%). A complet factorial experimental design was applied to determinate the influence of the variable inlet air temperature, feed flow rate, and atomizer speed on the physical properties of the tomato pulp powder. Results showed that these variables had a significant positive effect on the moisture content, apparent density, and particle size and no significant effects on the porosity and true density. The best spray drying conditions to produce lower moisture content and higher apparent density tomato powder were inlet air temperature of 200 °C, feed flow rate of 276 g/min, and atomizer speed of 30000 rpm. |

Abstract The impact of white onion as a natural antioxidant on the lipid profile of “Vila Franca” shrimp (Litopenaeus schmitti Burkenroad, 1938), during storage under freezing, was evaluated by changes in the composition of fatty acids, carotenoids, centesimal composition and phenols. The lipid content in the shrimp samples in natura and with white onion was dimmed after 45 days of storage under freezing. At zero time and during storage, lower levels of fatty acids were detected in the shrimp with addition of white onion. There was a reduction in the total carotenoid content of fresh and white onion shrimp samples after 45 days of storage, corresponding to 30% and 43%, respectively. ABSTRACT: Problems with root-knot nematodes, caused by genus Meloidogyne, can be controlled through the introduction of resistance genes in commercial varieties of tomatoes. ABSTRACT: Toxic metals contamination of soil has become a serious problem in recent years. In this study, Chinese cabbage (a relatively high-accumulator of cadmium (Cd)) and cabbage (a relatively low-accumulator of Cd) were cultured in monoculture and in intercropping in the Cd-contaminated soil, to evaluate the effect of intercropping on the alteration of Cd extraction. Both the pot experiments and field experiments indicated that intercropping increased the Cd extraction by Chinese cabbage and decreased the Cd extraction by cabbage. High seed quality is essential for optimum stand establishment in lettuce. As a result, it is necessary to have seed vigour tests that permit rapid, objective and accurate evaluation of seed quality. This study evaluated physical and physiological seed quality components of four seed lots of six lettuce varieties obtained from a commercial company. Seeds were evaluated for seedling emergence under greenhouse conditions, standard germination, seed physical aspects, the Saturated Salt Accelerated Aging (SSAA) test and the Seed Vigour Imaging System (SVIS). For this research we used 15 day-old seedlings which were transplanted to 2 L pots and inoculated with 4,000 nematode eggs plus juveniles (J2). After 60 days, the root systems were removed and the number of galls and eggs evaluated and used to calculate the nematode reproduction factor (RF). The tomato cv. Santa Cruz was used as a susceptible control. The experimental design was completely randomized, with six replications. Averages were compared using the Tukey or Scott-Knott test at 5%.
