Identifying and Measuring the Effect of Firm Clusters Among Certified Organic Processors and Handlers 31

This paper investigates the certified organic handler sector, a specialized component of the middle part of the farm-to-table marketing chain, and documents the impacts of firm agglomeration (or firm clusters) on firm-level performance or firm-level decisions. After accounting for endogeneity in firm clustering, our findings confirm that firm clusters have significant impacts, though the estimate of the impact depends on how a firm cluster is defined. For example, significant impacts on sales per employee range from an additional $0.17 million to $1.47 million, depending on whether a small or large number of firms is used as the minimum number to define a firm cluster.

The objective of this study was to evaluate the influence of vitamin C (VC), vitamin E (VE), and two selenium sources on the performance, yield, and composition of Nile tilapia fillet. The experiment was conducted in a completely randomized design consisting of six treatments with the addition of 100, 200, and 400 mg kg-1 VC and VE and 0.1, 0.2, and 0.4 of two sources of selenium. Each treatment had five replicates of 30 fish each. The diet with 200 mg kg-1 VC and VE + 0.2 mg.k-1 organic selenium resulted in weight gain, length gain, and feed conversion ratio similar to that of the treatment with 400 mg kg-1 VC and VE + 0.4 mg kg-1 organic or inorganic selenium. Innovation in Food Products: First-mover Strategy and Entropy Metrics 31

The objective of this research is to investigate food product innovation in the context of the first-mover strategy among food manufacturers within agrifood supply chains. The emphasis of the analysis is on developing a useful metric for tracking new product development in the context of first-mover strategy. Entropy is introduced as a novel and useful means of examining first-mover strategy and new product development (NPD) in general. Understanding the complexities of the first-mover strategy and tracking NPD with entropy metrics holds promise for enhancing the analysis of agrifood supply chains and assisting firms in deciphering broad strategies of their rivals.

Japanese Consumers’ Valuation of U.S. Beef and Pork Products after the Beef Trade Ban 31

Analysis of survey data indicates that Japanese consumers discount their willingness to pay for U.S. beef and pork relative to that of domestic products, but that the discounts have declined from 2006 to 2009. The discounts for U.S. products were greater than those imported from other countries in 2006, but the 2009 discounts were statistically indistinguishable across origins. Our findings also suggest than Japan is a receptive market for meat produced with GM-free feed and for meat products meeting full organic standards.

Local and Organic: Substitutes or Complements? An In-Store Evaluation of Labels for Apples 31

Over the past two decades, consumer demand for niche products has grown substantially. The primary objective of this paper is to disentangle the value consumers place on two prominent food claims, organic and local (defined as Colorado Proud in this study) as they relate to fresh produce. Using primary data from a choice experiment conducted in a grocery store that has conducted co-promotional efforts with the Colorado Proud program, we found the value of the “local” claims trumps that of “organic” in apples. However, the difference in results between the experiments that offered participants either one- or two-pounds is far more pronounced, illustrating how scaling may influence estimates in such market-based research.

Organic foods now occupy prominent shelf space in the produce and dairy aisles of most mainstream U.S. food retailers. The marketing boom has pushed retail sales of organic foods up to $21.1 billion in 2008 from $3.6 billion in 1997. U.S. organic-industry growth is evident in an expanding number of retailers selling a wider variety of foods, the development of private- label product lines by many supermarkets, and the widespread introduction of new products. A broader range of consumers has been buying more varieties of organic food. Organic handlers, who purchase products from farmers and often supply them to retailers, sell more organic products to conventional retailers and club stores than ever before.
