Methods for thermal inactivation of pathogens in mozzarella: a comparison between stretching and pasteurization Arq. Bras. Med. Vet. Zootec.

This study aimed to evaluate the efficiency of stretching in the reduction of pathogens when compared to milk pasteurization, the official method to ensure safe cheese production. Whole buffalo milk was contaminated with Mycobacterium fortuitum, Listeria monocytogenes, Salmonella typhimurium, and Staphylococcus aureus. Part of the milk was used in mozzarella production and the other part was submitted to holder pasteurization. Pathogens were quantified before and after thermal processing (mozzarella stretching and milk pasteurization). The present paper evaluated the microbiology of salmon by quantifying mesophilic heterotrophic microorganisms, total and thermotolerant coliforms, and the presence of Vibrio parahaemolyticus, Staphylococcus aureus, Salmonella sp., Escherichia coli and Aeromonas sp. in the meat. This study can provide technical support for the suggestion of a new regulation of a Brazilian legislation through specific microbiological standards concerning the consumption of raw fish. Nutritive and antimicrobial profiles of some seagrasses from bardawil lake, egypt OceanDocs

Seagrasses species in Bardawil Lake have been defined through broad quantitative sampling. From the biochemical constituent's point of view, two species namely; Cymodocea nodosa and Ruppia cirrhosa were evaluated as feed additives and antimicrobial active compounds. The obtained results showed an obvious increase in chlorophyll "a", carbohydrate and lipid contents in the C. nodosa than R. cirrhosa while protein contents was higher in R. cirrhosa than in C. nodosa. Pathogenic and opportunistic respiratory bacteria-induced apoptosis BJID

Several pathogenic or opportunistic bacteria have the ability to either induce or inhibit host cell apoptosis. The capacity to modulate cell pathways that result in the induction or delay of host cell apoptosis is considered to be an important bacterial virulence mechanism. These processes could be mediated by different host cell signaling pathways that are subverted by the bacteria. Pathogens are able to activate apoptotic proteins, such as caspases, or inactivate anti-apoptotic proteins, such as NFkB and the MAPKKs, or even up-regulate the endogenous receptor/ligand system that induces apoptosis, generally when the bacteria are bound to the host cell surface. Présence du genre Listeria dans les coquillages issus de zones conchylicoles du Finistère ArchiMer

Cette étude a porté sur la recherche des bactéries appartenant au genre Listeria (Listeria spp.) dans 61 échantillons de coquillages issus de quelques zones de production situées dans le département du Finistère. Ces investigations, effectuées au cours de deux périodes (janvier-février et juillet -août 1994), ont mis en évidence la présence régulière des Listeria dans les bivalves (L. spp.= 49.2% ), la part non négligeable de Listeria monocytogenes (L.m. = 11.5%), la multiplicité d'espèces sur quelques échantillons testés (Baie de Morlaix) ainsi qu'une large distribution de ce genre bactérien. L’algue brune Padina pavonica a été récoltée durant une période d’une année (Juillet 2006 à Juin 2007), dans la côte nord de la Tunisie (Cap Zebib) en vue d'évaluer l'activité antibactérienne d’extraits bruts de l’algue et leur variabilité saisonnière. Les extraits d’algue ont été préparés en utilisant le Dichlorométhane et le Dichlorométhane/Méthanol et testés périodiquement (tous les mois) sur une gamme de bactéries pathogènes et des bactéries associées isolées de l’algue. Selected bacterial strains protect <i>Artemia</i> spp. from the pathogenic effects of <i>Vibrio proteolyticus</i> CW8T2 OMA

In this study <i>Vibrio proteolyticus</i> CW8T2 has been identified as a virulent pathogen for <i>Artemia</i> spp. Its infection route has been visualized with transmission electron microscopy. The pathogen affected microvilli and gut epithelial cells, disrupted epithelial cell junctions, and reached the body cavity, where it devastated cells and tissues. In vivo antagonism tests showed that pre-emptive colonization of the culture water with nine selected bacterial strains protected <i>Artemia</i> juveniles against the pathogenic effects. The sediments of Morecambe Bay contain large numbers of salinity-tolerant, nitrogen-fixing Enterobacteriaceae (NFEs) mainly Klebsiella pneumoniae ) which appear to be derived from sewage. Sewage effluents, regardless as to whether they have received primary or secondary treatment, contain huge numbers of NFEs with salinity-tolerant and freshwater strains present in roughly equal quantities. The bacteria are discharged into the rivers and estuaries and carried out to sea. Once in the sea the salinity-tolerant strains retain their viability better than the freshwater strains so that the incoming tide, which doses the sediments, contains mainly salinity-tolerant NFEs. The effect of anaerobic digestion in biogas plants on survival of pathogenic bacteria OAK

The paper deals with the hygienic advantages of sanitation to treat dairy manure in full-scale biogas plants. Slurry samples were collected from two thermophilic biogas plants (55ºC) and two mesophilic biogas plants (38ºC) in Hokkaido, Japan. The detectable number of Coli-aerogenes group and Enterococcus in the slurries after anaerobic digestion could not be found in both thermophilic biogas plants. In both mesophilic biogas plants, however, the viable numbers of Coli-aerogenes group and Enterococcus were detected in the slurries even after anaerobic digestion. The mean decimation reduction time (T90) values of Coli-aerogenes group and Enterococcus in the slurries during mesophilic digestion were 13.3 d and 16.7 d, respectively.
