β-casein gene polymorphism permits identification of bovine milk mixed with bubaline milk in mozzarella cheese Genet. Mol. Biol.
Otaviano,Antonio R.; Lima,André Luis F.; Laureano,Monyka M.M.; Sena,Janete A.D.; Albuquerque,Lúcia G. de; Tonhati,Humberto.
Mozzarella cheese is traditionally prepared from bubaline (Bubalus bubalis) milk, but product adulteration occurs mainly by addition of or full substitution by bovine milk. The aim of this study was to show the usefulnes of molecular markers to identify the admixture of bovine milk to bubaline milk during the manufacturing process of mozzarella cheese. Samples of mozzarella cheese were produced by adding seven different concentrations of bovine milk: 0%, 1%, 2%, 5%, 8%, 12% and 100%. DNA extracted from somatic cells found in cheese were submitted to PCR-RFLP analysis of casein genes: α-s1-CN - CSN1S1 that encompasses 954 bp from exon VII to intron IX (Alu I and Hinf I), β-CN - CSN2 including 495 bp of exon VII (Hae III and Hinf I), and κ-CN - CSN3,...

β-Citronellol, an alcoholic monoterpene with inhibitory properties on the contractility of rat trachea BJMBR
Vasconcelos,T.B.; Ribeiro-Filho,H.V.; Lucetti,L.T.; Magalhães,P.J.C..
β-Citronellol is an alcoholic monoterpene found in essential oils such Cymbopogon citratus (a plant with antihypertensive properties). β-Citronellol can act against pathogenic microorganisms that affect airways and, in virtue of the popular use of β-citronellol-enriched essential oils in aromatherapy, we assessed its pharmacologic effects on the contractility of rat trachea. Contractions of isolated tracheal rings were recorded isometrically through a force transducer connected to a data-acquisition device. β-Citronellol relaxed sustained contractions induced by acetylcholine or high extracellular potassium, but half-maximal inhibitory concentrations (IC50) for K+-elicited stimuli were smaller than those for cholinergic contractions. It also inhibited...

SILVA,RENATA CRISTINA; TREVISAN,MARCELLO G.; GARCIA,JERUSA SIMONE.
Abstract The present study investigated the encapsulation of β-galactosidase in carrageenan, pectin and its hybrid hydrogels by using the ionotropic gelation method. The material obtained was characterized by Fourier transform infrared spectroscopy (FTIR), thermogravimetric analysis (TG/DTG) and scanning electron microscopy (SEM). The effects of pH, temperature and storage time were evaluated in terms of the catalytic activity of the free and encapsulated enzyme. Addition studies were conducted evaluating the performance of catalytic activity in vitro conditions. Carrageenan, pectin and hybrid hydrogels presented encapsulation efficiency of 58 ± 1%, 72 ± 1% and 77 ± 2%, respectively. The pectin hydrogel showed the higher β-galactosidase activity in pH and...

Sudério,Fabrício Bonfim; Gomes Filho,Enéas; Costa,José Hélio; Enéas Filho,Joaquim.
The aim of this work was to evaluate the properties and gene expression of isoforms of β-galactosidase, isolated from the stems of seedlings of the cowpea cv. Pitiuba, at different stages of development and sown in the absence and presence of NaCl. Seeds were sown onto sheets of filter paper soaked in distilled water (control) and a 100 mM NaCl solution. The plants were collected at the III (ED III) and VIII (ED VIII) stages of development. Isoforms of the enzyme β-gal I, II and III presented molecular weights of 89, 146 and 124 kDa respectively, and the same pH (4.0) and optimum test temperature (55 °C) under all the conditions studied. The three isoforms were stable up to 50 °C. The thermal inactivation curves of the enzymes as a function of time were...

Silva,Wellington dos Santos; Klautau-Guimarães,Maria de Nazaré; Grisolia,Cesar Koppe.
Five restriction site polymorphisms in the β-globin gene cluster (HincII-5'ε, HindIII-Gγ, HindIII-ªγ, HincII-'ψβ1 and HincII-3''ψβ1) were analyzed in three populations (n = 114) from Reconcavo Baiano, State of Bahia, Brazil. The groups included two urban populations from the towns of Cachoeira and Maragojipe and one rural Afro-descendant population, known as the "quilombo community", from Cachoeira municipality. The number of haplotypes found in the populations ranged from 10 to 13, which indicated higher diversity than in the parental populations. The haplotypes 2 (+----),3(----+),4(-+--+)and6(-++-+)onthe βA chromosomes were the most common, and two haplotypes, 9 (-++++)and 14 (++--+), were found exclusively in the Maragojipe population. The other...

β-Glucanase Addition in Brewing Malt Produced by Reduced Time of Germination BABT
Brazil,Crislane; Oliveira,Débora Francielly de; Duarte,Rafael Augusto; Galo,Juliana Minardi; Lucchetta,Luciano; Santos,Eder da Costa dos; Hashimoto,Elisabete Hiromi.
Abstract The β-Glucans content has straight influence on the quality of malt and beer, mainly during the filtration step. Barley presenting high β-Glucan content demands longer germination time at malting. The application of commercial β-Glucanase is an alternative to accelerate the process and preserve the quality of malt. This work aimed to evaluate the effect of commercial β-Glucanase addition in malt produced within reduced germination time (64 h). Micro-malting was conducted with BRS-Caue and Elis barley cultivars at germination time 64 h and 96 h. The β-Glucanase concentration applied were 0, 25, 50 and 100 mg.kg-1. Barley, malt and wort samples were analyzed to check their physical-chemical features. Beers were produced with BRS-Caue malt and the...
