The rivers of Auray and Crach are the main French production centres of flat oyster spat. Consequently, their deposits are of great interest for French oyster culture. This is the reason why their evolution is closely monitored by the Fisheries Office, who takes part, on a regular basis, in the works conducted every six months by the Visit Commission, and makes it a point of principle to implement all the measures aiming to boost their vitality. |

The anchovy seems to cruise around the Bay of Biscay with less regularity than the sardine. Sometimes abounding, it is rare, or at least adults do not cruise at the surface, some years. It results in some important variations in the catches with, for example in Saint-Jean-de-Luz, 736 570 kg caught in 1928 and less than 150 000 kg in 1929 and 1930. However, despite some poor years, the anchovy accounts for an important part of the fisheries statistics of the Bayonne area. In Saint-Jean-de-Luz, many boat owners and industrialists organized themselves to transform it on the spot after selling it fresh for many years to the Mediterranean retailers, and their products can now compete with those from harbours with a tradition of anchovy preparation.... |

The following "biological statistics" summarize the observations carried out throughout the year 1930 on the "harenguiere" (herring) fisheries in the southern North Sea and the eastern entrance of the English Channel. They are the follow up of those published on a regular basis (1) since we started, in 1926, the monitoring of this herring population which gathers every year, from October to February, to lay eggs on the spawning areas located at the entrance of the English Channel: from Gris-Nez to the mouth of the Seine, then, around the Dyck and the Sandettié, in the southern part of the North Sea. |

All the studies dealing with the making of fat elements stress the necessity of a good separation of the oil or fat from the shell splinters and the diverse organic substances that can go with it, in order to obtain a product with a good preservation capacity. Indeed, the spontaneous acidification of fat, a hydrolysis phenomenon, is strongly accelerated by some soluble ferments: the lipases. The latter are widely spread in different tissues, in particular in the liver. They can also be exuded by many bacteria, mildews and by some yeasts. The presence of water and putrescible matters in the oil can favour the development of all these lower organisms. |

Some authors have already underlined a case of mouth malformation in the common bream (Pagelius centrodontus Delaroche). This way Yarrell (1), Dunn, Garstang (2) each observed a short nosed bream, which didn't have intermaxillary bone. As this anomaly had not been observed only on the coasts of Cornwall, Garstang asked himself if it only existed in the Plymouth area and if its distribution should not be widened. Today, we answer this question: over two years, we had the opportunity to observe directly some of these monstrosities in the harbour of La Rochelle. We will study some of them. |

Le processus du verdissement des huîtres est, sans doute, un des problèmes ostréicoles les plus discutés jusqu'à ce jour. La question n'a cependant guère avancé, au point de vue pratique, depuis un siècle : les huîtres sont placées dans les claires qui verdissent ou ne verdissent pas, sans qu'on ne puisse en rien le prévoir. La grande majorité des claires ont "boudé» - suivant l'expression du pays - cet hiver, et les ostréiculteurs marennais se sont trouvés dans l'impossibilité de satisfaire, au moins pour la couleur, leur clientèle française qui exige de plus en plus impérieusement des marennes vertes. On conçoit facilement leur préoccupation devant cette situation, d'où il peut résulter pour eux un gros dommage. [OCR NON CONTRÔLE] |

For a long time, chemistry has only provided this basic data to the field of physiology, supplemented by the global mineral matter content, or, in other words, the percentage of fixed residue obtained through calcination (not really taken into account). |
