A Study on Mathematical Models for Predicting Water Activity in Multicomponent Foods Taiwan Agricultural Research Institute

[[abstract]]A model to predict water activity (equilibrium relative humidity/100) in multicomponent food mixtures is developed. It is based on balancing masses of water and dry matter and assumes that no interactions affecting water activity of the ingredients occur during mixing. Explicit solutions are presented for the linear and Smith forms of the isotherm equations. A numerical procedure is used to calculate the water activity for nonlinear isotherm equations. An example using data from the literature illustrates very good fittings by using appropriate isotherm equation for calculating of water activity of the mixture....

[[abstract]]在此研究中探討乾燥溫度對於落花生等溫水份平衡線之影響。以非線性迴歸技術評估七種不同處理條件下其最佳適稱模式與其參數。實驗結果顯示乾燥溫度對落花生水份平衡線物性有顯著性影響。在相同相對濕度條件下,乾燥溫度愈高,其持水能力愈低。在比較品種或測定方法等因素對於ERH/EMC關係影響時,必須考慮其所受歷程。在決定貯存之含水率和其他作業條件時,必須考慮乾燥溫度之影響。

微波爐應用於穀物含水率之量測研究 Taiwan Agricultural Research Institute

[[abstract]]此研究中以家用Panasonic NW-7360型微波爐進行稻穀等穀物含水率快速量測之研究。以烤箱法所量測之含水率為標準值。研究結果顯示微波爐的輸出功率與乾燥時間為影響量測準確性的主要因子。高含水率的穀物較適用此項技術。利用420W的作業功率與14.0至15.0分鐘的作業時間,量測稻穀含水率可得到最準確的量測結果,量測值與標準烤箱法之差異為±1.5%。

[[abstract]]落花生收穫機開發時所遭遇的瓶頸在於脫莢機構之改良。在此研究中,以打擊式脫莢機構進行落花生脫莢性能之測定,由試驗結果顯示,作業方式之有關流量和投入方式對於脫莢性能並無顯著影響,作物含水率的影響則十分顯著。切蔓處理後的花生植株可顯著降低破莢率。承網與脫莢筒間隙減少時亦可降低破莢率。脫莢筒轉速的增加亦增加破莢率。 The bottle neck problem in the development of a peanut harvester is the design and improvement of threshing mechanisms. In this study, the threshing performance of an impact type peanut thresher is analyzed. The results indicate that the feed rate and feeding type have no correlation with the threshing performance. The moisture content of peanut pods significantly affect the amount of damaged pods. Vine-cutted peanuts have the lower percentage of damaged pods. 溫室環境模式於花卉設施栽培之應用 Taiwan Agricultural Research Institute

[[abstract]]在此研究中,以溫室內部微氣候模式評估國內花卉業者所使用之三型溫室其環控性能與降溫極限。玻璃溫室之熱累積十分嚴重因此必須以大量之機械通風方能克服。開放型塑膠布溫室則可疏解此類問題。國內溫室以蒸發冷卻技術在夏季不能符合蝴蝶蘭催花需求,使用冷凍機械為唯一選擇但增加投資成本。利用遮蔭網或遮雨棚均無法提供觀賞作物經年生產所需之微氣候。而以溫室之結構與控制設備可加以改善內部環境但將增加成本。因此必須以整合方式進行溫室作物栽培生產規劃作業。

烏龍茶葉吸濕性及其品質維持之應用研究 Taiwan Agricultural Research Institute

[[abstract]]在此研究中量測兩種烏龍茶葉的平衡相對濕度物性,實驗結果顯示電子式相對濕度計可適用於此種物性量測。溫度對等溫水份線的主要效應發生於70 RH%下範圍。修正Oswin模式適用於此項物性,此研究所得茶葉安定含水率範圍為3─4%。自GAB模式計算所得之安定含水率數值顯著地高於來自BET模式之數值。利用量測的平衡相對濕度和溫度數值計算所得之含水率其誤差約為0.5%。 The equilibrium relative humidity properties of the adsorption isotherms for two types of Oolong tea were measured in this study. The results indicated that electronic RH sensor can serve as good device on ERH measurement. The main effect of temp erature shirt on isotherm were found below the range of 50%RH. The Modified-Oswin equation was the adequate model for two types of Oolong tea. The critical M. C. value for maintaining quality of Oolong tea was 3%-4%. [[abstract]]為促使落花生收穫作業機械化,農試所著手開發一種曳引機承載單畦牽引式落花生收穫機。此種收穫機之特殊設計為莖蔓切割機構和振動犁。此機之作業方式為利用切蔓刀自主根切除花生莖蔓,以振動犁挖掘花生莢,再利用輸送鏈條清潔雜物。此機型設計時特點為結構簡單,成本低廉,容易操作,經局部調整可適用其他淺根類作物之收穫工作。

[[abstract]]穀物水份計的量測性能在農產品加工作業上十分重要。此研究中,以烤箱法所得之含水率為標準值。用以測定紅外線水份計和大發型電阻式水份計之精密性與準確性,所得數據以統計技術加以分析。實驗結果顯示紅外線水份計量測性能受到操作者技術影響。在適用範圍內準確性約0.5%。電阻式水份計有良好之精密性,每具水份計必須有其特定之校正曲線。經校正公式改良後的準確性約0.3%。此型水份計可適用於乾燥機之自動控制作業。

稻穀薄層乾燥模式研究 Taiwan Agricultural Research Institute

[[abstract]]薄層乾燥之基本資料對於穀物加工之乾燥與通風模擬作業十分重要。本研究進行稻穀臺農67號品種於35°C至60°C,五種相對濕度(10~50%)條件之薄層乾燥試驗。數量化乾燥數據係藉由標準相對濕度產生器之改良來進行量測。乾燥用熱風溫度與相對濕度係由兩股氣流混合控制而成。一股為絕對乾燥氣體,另一股為飽和氣流。利用時間控制器使電子天平於乾燥試驗暫停期間進行穀物重量量測作業。天平量測之訊號傳送至數據記錄器再轉換成穀物含水率。所量測之乾燥試驗數據以統計迴歸技術來評估四種薄層乾燥方程式的符合能力。相關係數與殘差圖被採用為模式適稱性之比較標準。比較結果發現具有兩項指數函數的雙成份模式為適合試驗數據之最佳模式,因此可推薦為稻穀薄層乾燥之適用方程式。此模式之四參數與乾燥溫度,相對濕度之關係均已建立量化方程式。

[[abstract]]在此研究中利用平衡相對濕度依序量測法以量取落花生全莢,仁與殼在5溫度下平衡相對濕度與平衡含水率之相關物性。平衡相對濕度之量測範圍為10至95%。利用平衡相對濕度量測法所得結果與傳統平衡含水率量測法之結果並無差別。去濕和吸濕數據對於四個平衡相對濕度模式適稱性的比較結果和參數估計值均列舉於此研究中。落花生全莢,仁與殼均具有明顯的遲滯現象。

[[abstract]]為設計良好的脫莢機構以解決落花生脫莢之損傷問題,落花生果莢系統之機械物性需要加以測定。在此研究中以物性分析方法探討影響落花生果莢系統機械物之主要因子。試驗結果顯示落花生果莢物性與重量並無顯著相關。果莢系統所能承受之作用力與受力之應力集中點都受到含水率的影響。作業速率並不影響作用力。果莢切斷能量因品種,栽培時期……等因素而不同。果莢切斷能受含水率之影響先增加而後減少。子房柄切斷能隨含水率之減少而急劇減少,此物性分析結果可用以解釋落花生脫莢機構對脫莢性能之影響。 In order to design an acceptable threshing mechanism to reduce damaged peanuts, physical properties of peanut peg-pod systems need to be tested. In this study, the factors affecting physical properties of peg-pod systems are analyzed. The experimental results indicate that physical properties have no correlation with the pod weight and the loading rate.
