Operações pós-colheita como beneficiamento, armazenamento e secagem podem causar danos às sementes influenciando a qualidade fisiológica. Em pesquisas recentes, tem sido confirmado que o endosperma é mais sensível ao processo de deterioração do que o embrião, sendo que este pode germinar e gerar uma plântula normal, quando isolado de uma semente deteriorada. O uso de antioxidantes pode melhorar o desempenho de sementes submetidas a estresses pela remoção de radicais livres presentes nas sementes deterioradas. Dessa forma o objetivo neste trabalho foi avaliar tratamentos antioxidantes em sementes inteiras e em sementes com parte do endosperma removido. |

O objetivo deste trabalho foi avaliar alterações fisiológicas e bioquímicas em sementes de café submetidas à secagem rápida, em sílica gel, e à secagem lenta, em soluções salinas saturadas. As sementes foram secas até que atingissem os seguintes teores de água: 40, 30, 20, 15, 10 e 5% (base úmida). Após a secagem, uma parte das sementes foi imediatamente avaliada quanto ao desempenho fisiológico e ao perfil de enzimas do processo oxidativo, e outra parte foi avaliada após armazenagem em condição hermética, em câmara fria e seca, por quatro meses. A velocidade de secagem e o teor final de água tiveram efeito significativo sobre a qualidade fisiológica das sementes. Seed deterioration induces the formation of free radicals and proliferation of microorganisms, but the application of external antioxidants may lessen these effects. The aim of this study was to investigate the antioxidant and antimicrobial activity of cathode and anode water on the physiological quality and health of Coffea arabica L. seeds. Para viabilizar a produção de sementes e mudas em épocas mais favoráveis, atendendo às necessidades dos produtores, é importante que a viabilidade das sementes de café seja mantida ao longo do armazenamento. Uma alternativa viável para a conservação de sementes de espécies recalcitrantes ou intermediárias, como as sementes de coffea SP, é a criopreservação (Chen 2011). The reduced longevity of coffee seeds has been attributed to their sensitivity to desiccation. Studies related to gene expression and enzyme activity in coffee seeds under drying are important for understanding the effects of drying on their physiological quality. The aim of this study was to investigate the molecular aspects of seeds under different drying methods and associate them with physiological quality. Cryopreservation is a viable option for conservation of coffee germplasm. However, for this technique to be completely successful, it is of fundamental importance to carry out studies that ensure maintenance of cell integrity before and after immersion in liquid nitrogen (LN). Coffee seeds are sensitive to desiccation and are used or stored with different moisture content values, which may affect the results of quality assessment. The aim of this study was to evaluate the changes in protein profile in electrophoresis gel in coffee seeds with different moisture content values under freeze-drying and without freeze-drying.
