Driving factors for school milk demand in Germany AgEcon
Christoph, Inken B.; Gonzalez-Mellado, Aida A.; Peter, Guenter; Petra, Salamon; Weber, Sascha A..
School milk consumption has declined steadily in Germany. A research project was set up to retrieve quantifiable information on the different factors of influence and to develop solutions to improve the school milk consumption.. The main goal is to evaluate the impact of price, product range, distribution form, information campaigns, regional situation, county based social index, socially-funded school milk distribution, and gender shares, as well as the immigration background share within a class. A total of 400 primary schools were selected by stratified random sampling. Surveys for principals and school milk managers were used to gain information on distribution problems throughout the milk chain, on the handling, and their attitudes towards school milk...

EINE LOGIT-ANALYSE ZUR DIFFERENZIERUNG VON KÄUFERN UND NICHT-KÄUFERN VON SCHULMILCH IN DEUTSCHLAND AgEcon
Peter, Guenter; Salamon, Petra; Christoph, Inken B.; Weible, Daniela; Burgelt, Doreen.

Individual and context factors determine gender-specific behaviour: the case of school milk in Germany AgEcon
Salamon, Petra; Weible, Daniela; Buergelt, Doreen; Christoph, Inken B.; Peter, Guenter.
A German federal research was established to analyse determinants on school milk demand. Among those, individual factors, like children’s eating habits, attitudes, preferences and socio-economic variables were considered but also contextual factors like attitudes and habits of class teachers and school variables were regarded; and more, price effects on demand were derived via a price experiment. As girls order significantly less school milk than boys this paper aims to analysis gender-specific decisions. In the analysis, a database is used in which individual order information are merged with survey results concerning pupils, parents, class teachers, school principals and school milk managers of the sampled schools. A multilevel analysis is applied,...

SCHOOL MILK DEMAND – INTERACTION BETWEEN POLICY AND OTHER FACTORS: SOME PRELIMINARY FINDINGS OF A REGIONAL PROJECT AgEcon
Christoph, Inken B.; Peter, Guenter; Rothe, Andrea; Salamon, Petra; Weber, Sascha A.; Weible, Daniela.
Given the recent steadily declining consumption of school milk in Germany, a research project was set up by the German Federal Ministry of Food, Agriculture and Consumer Protection, in affiliation with other institutions, to retrieve quantifiable information on the different influencing factors and to provide approaches for improving the school milk demand. Main objectives are to evaluate impacts of factors like price, attitudes and habits (especially consumption habits), social background, gender, economic situation, knowledge, product range and distribution form, as well as of nutritional education measures. Primary schools in North Rhine Westphalia were selected by stratified random sampling. Price impacts are derived by an experiment in which the price...

Willingness to pay for genetically modified food and non-food products AgEcon
Christoph, Inken B.; Roosen, Jutta; Bruhn, Maike.
This paper presents estimates of consumers’' willingness to pay for a GM food and non-food product based on data collected in a choice experiment. The choice experiment was part of a survey of 1510 randomly selected consumers in Germany that was mailed in spring 2005. Attitudes towards gene technology, institutions and technical progress were measured using 22 items. A factor analysis revealed five factors describing consumer attitudes: support, risk, trust, attitude towards technical progress and attitude towards technical innovation. Based on these factors we identify four different classes of consumers in a latent class model for both products. Analysis of these classes shows strong differences between willingness to pay estimates for benefits compared...
