Organic dairy farming (ODF) is different from conventional dairy farming in management practices, but so far the same breeding goal (BG) is used, based on the same economic models (EM). However, ODF is based on the principles of organic agriculture defined by the IFOAM, which are not easily interpreted in economic terms and it may be uestionable to use a BG for ODF based on EM. In this study we set up three BGs for ODF in Denmark, one based on the principles of organic agriculture, one focusing on roughage consumption and feed efficiency, and one focusing on disease resistance. The objective of the present study was to compare growth performance of 15 Danish Holstein bull (DHB) calves, 15 Limousine x Danish Holstein crossbred bull (CB) calves and 15 Limousine x Danish Holstein crossbred heifer (CH) calves reared under organic conditions. Spring-born calves were puchased at private farms and arrived at approximately 20 days of age with an average initial body weight of 52.9, 58.5 and 56.1 kg, (SEM 2.6) for DHB, CB and CH, respectively. Calves were kept indoor until weaning at 3 months of age. Calves were gradually introduced to a grass-silage based ration from 3 to 4 months of age. In this study, we attempt to assess the Danish organic dairy farmers' acceptance of the economic values derived from a stochastic, bio-economic model. We expect the results to show that farmers give increased priority to some traits above the objectively derived economic vaule. |

Abstract Milk fatty acid (FA) composition can be manipulated through feeding, and especially effects of grazing have been shown to promote a healthier milk FA profile due to increasing contents of beneficial FAs, like conjugated linoleic acid (CLA) and α-linolenic acid (C18:3, the main n3 FA in milk). In addition to diet-based manipulations, selective breeding for specific FA could also be a strategy for altering the FA profile as milk FA display low to moderate heritabilites (0.07-0.34 in Danish Holstein). The fatty acid (FA) composition of bovine milk may be related to human health and technological properties of dairy products. The FA composition can be altered both through management and breeding. Large scale FA profiling of the Danish dairy cattle population has now been implemented for more than a year. For the first time access to millions of FA observations across an entire dairy population enables in depth analysis of the factors affecting the FA profile of milk. This was the aim of this study. Projektet SOBcows har i samarbejde med RYK gennem 16 måneder i 2015/16 analyseret for indholdet af 11 fedtsyrer/fedtsyregrupper i kontrolmælken fra alle ydelseskontrollerede køer i Danmark. Dataanalyser af godt 3,5 mio. mælkeprøver viser, at det er muligt at påvirke sammensætning af mælkefedtet gennem avl. En foreløbig beregning af arvbarheden hen over laktationen viser, at alle fedtsyrekategorier har en genetisk variation og enkeltfedtsyrerne har arvbarheder på højde med den samlede fedtydelse. Det betyder arvbarheder i intervallet 0,25-0,44 afhængig af race og paritet. Projektet SOBcows har i samarbejde med RYK gennem 16 måneder i 2015/16 analyseret for indholdet af fedtsyrer i kontrolmælken fra alle ydelseskontrollerede køer i Danmark. Rapporten præsenterer opgørelser på målingerne og evaluerer potentialet i at bruge viden om mælkens fedtsyreprofil i avl og produktion samt i forhold til fedtsyrernes betydning for human sundhed. En litteraturgennemgang viser, at fedtsyresammensætningen i komælk varierer betydeligt og er påvirket af en række faktorer relateret til fodring, race og management. Fodring med græs- eller urtebaserede rationer øger mælkens indhold af umættede C18-fedtsyrer, og tilsvarende øger fodring med mættet fedt indholdet af palmitin– og stearinsyre (C16:0 og C18:0) i mælkefedtet. Overall summary of main results, discussion and conclusions WP1 The aim in WP1 was to map the performance of local breeds compared to commercial dairy breeds on organic farms in Austria, Switzerland, Sweden, Poland and Germany with regard to health associated traits, fertility and production traits. In a study covering the whole population of the selected breeds, managed under organic conditions during the period 1.7.2011 to 30.6.2014, we found lower milk yields for local breeds. In general we found better fertility performance (less days open, shorter calving intervals, lower number of inseminations) for at least one of the local breeds involved in each country.
