Here we present a comparative study of caprine b- and as1-caseins behaviours at the air–water interface and in solution. Both caseinswere purified from the milk of a single goat homozygous at the as1- and b-Cn loci, with a high degree of purity (98%). Physicalmeasurements (ellipsometry, surface pressure and surface rheology) were performed at the air–water interface, whereas SAXSmeasurements were performed on casein solutions. Our results clearly show that self-organizations, both at the air–water interface and insolution are different for b- and as1-caseins. b-casein is unfolded in solution and forms a network at the interface, while as1-casein formscompact objects in solution and is organised in fluid domains at the interface. Le locus de la caséine αsl caprine se distingue par un fort polymorphisme et surtout par le fait qu’il existe, entre allèles ou groupes d’allèles, de nettes différences de niveau de synthèse protéique. Les premiers travaux ont établi que ce polymorphisme était déterminé par un minimum de 7 allèles, correspondant à 4 niveaux de synthèse différents : les allèles A, B et C s’accompagnent d’un taux "fort" de caséine αsl (environ 3,6 g/1), l’allèle E d’un taux "moyen" (1,6 g/1), les allèles D et F d’un taux "faible" (0,6 g/1), l’allèle 0 étant un allèle nul (pas de caséine s al chez l’homozygote). La caractérisation des races bovines françaises a débuté en utilisant comme principales sources de données des études morphologiques. Progressivement, grâce à l’évolution des techniques d’analyse de la variabilité génétique, d’autres critères ont pu être pris en compte. Des données concernant le polymorphisme des groupes sanguins, de certaines protéines sériques et des protéines du lait ont permis de distinguer 4 sous ensembles de races bovines françaises. Cette étude va être approfondie par une analyse du polymorphisme au niveau de l’ADN en utilisant de nouveaux marqueurs plus nombreux et plus polymorphes : les microsatellites. Organic farming is considered as a solution to preserve water quality in drinking water catchments. For local managers of these catchments it is thus important to identify conventional farmers for potential conversion to organic farming. The aim of this article is to assess technical similarity of conventional farmers concerned by a water catchment to organic farming. We build a typology of farmers based on technical logics related to cropping systems organization. We differentiated five types of farmers among 18 conventional dairy farmers and three recently converted organic farmers.
