AN EXPLORATORY ANALYSIS OF FAMILIARITY AND WILLINGNESS TO USE ONLINE FOOD SHOPPING SERVICES IN A LOCAL AREA OF TEXAS AgEcon
Hiser, Jennifer; Nayga, Rodolfo M., Jr.; Capps, Oral, Jr..
Online food shopping is not only one of the newest innovations in grocery shopping but also one of the many services integrating the changing needs of consumers and the increasing use of modern technology. A survey was conducted in the Bryan/College Station area of Texas to determine a quantitative profile of consumers, via logit analysis, who are familiar with the concept of online food shopping and who are willing to use an online food shopping service. Older people, females, major shoppers, and people with lower incomes are less likely to be familiar with the concept of online food shopping. Those consumers willing to consider using online food shopping services are those familiar with the concept of online food shopping, those who find convenience as...

ANALYSIS OF FOOD AWAY FROM HOME AND FOOD AT HOME CONSUMPTION: A SYSTEMS APPROACH AgEcon
Nayga, Rodolfo M., Jr.; Capps, Oral, Jr..
The demand for food away from home, food at home, and non-food items is investigated using a complete systems approach. Using the linear approximation of the dynamic version of the Almost Ideal Demand System, the results indicate that the share of total expenditure going to food away from home increases as the labor force participation rate of women increases. All expenditure elasticities are positive and all own-price elasticities are negative. Moreover, the demand for food away from home is more price sensitive than the demand for food at home. Seasonal patterns of consumption are also evident.

Assessing Korean Consumers’ Valuation for Domestic and Imported Rice: Importance of Country of Origin and Food Miles Information AgEcon
Han, Doo Bong; Nayga, Rodolfo M., Jr.; Lee, Ji Yong; Yoon, Jong Min.
The aim of this paper is to determine Korean consumers’ valuation for domestic rice and imported rice from China and the US. Using revealed preference data from random nth price auction mechanism, our results generally suggest that consumers’ willingness to pay (WTP) for domestic rice is higher than the WTP for imported rice. Results also suggest that while country of origin and food miles information positively influences consumers’ WTP for domestic rice, country of origin information provides higher valuation for domestic rice than food miles information. Country of origin and food miles information has no statistically significant effect on WTP for the imported Chinese rice product but food miles information has a negative effect on WTP for the imported...

Assessing the Demand for a Functional Food Product: Is There Cannibalization in the Orange Juice Category? AgEcon
Yuan, Yan; Capps, Oral, Jr.; Nayga, Rodolfo M., Jr..
The demand for functional foods has increased notably in recent years due to growing consumer interest in diet and health issues. Currently, the food industry is introducing many types of new food products with functional attributes. Consequently, cannibalization is a critical issue for firms that offer multiple products within a certain product category. The identification and assessment of cannibalization are integral factors when making strategic decisions about new product introductions. Using scanner data from Information Resources, Inc. (IRI), pertaining to a particular functional food, namely a phytosterol-enriched product for orange juice, we find that no cannibalization effects exist with respect to its introduction. We also provide estimates of...

Away-From-Home Lamb Consumption in the United States: Implications for Australia and New Zealand AgEcon
Nayga, Rodolfo M., Jr..
A logit model was developed to investigate the decision to eat lamb away from home in the United States. Using data from the United States Department of Agriculture's 1987-88 National Food Consumption Survey, this study identified several socio-demographic and economic characteristics of consumers who have eaten lamb away from home. The information derived from this study is useful for lamb processors and producers in Australia and New Zealand who wish to anticipate future market changes and derived demands for their products in the United States.

Body Weight Outcomes and Food Expenditures Among Older Europeans: A simultaneous equation approach AgEcon
Drichoutis, Andreas C.; Lazaridis, Panagiotis; Nayga, Rodolfo M., Jr..
We analyze the inter-relationships between body weight outcomes and food expenditures among older Europeans using a simultaneous equation model. Several statistical tests were conducted to assess endogeneity of selected variables, the exogeneity, relevance, and validity of instruments used, and the identification of the model. Our results generally suggest, contrary to normative views, that food-away-from-home expenditure is negatively related to body mass index (BMI). BMI is negatively related to the percentage of food spent away from home.

BUSINESS CLIMATE OF FOOD FIRMS: A COMPARATIVE ANALYSIS OF PROBLEMS FACED BY FOOD MANUFACTURERS, WHOLESALERS, RETAILERS AND SERVICE INSTITUTIONS IN NEW JERSEY AgEcon
Adelaja, Adesoji O.; Nayga, Rodolfo M., Jr.; Tank, Karen Rose; Schilling, Brian J..
This paper presents the problems facing food firms using information from focus groups of industry executives from New Jersey. The leading problems for food manufacturers are related to regulation, taxation, economic development, and high business costs. For food wholesalers the leading problems are transportation, regulation, labor quality, training and education, and public relations. Food retailers cite litigation and liability, high business costs, regulation, and insurance costs as leading problems. For food service firms, regulation, licensing and permits, labor quality and costs, and high business costs are the most pressing problems. Policy recommendations for improving the business climate are provided.

Childhood Obesity Risk and the Role of Primary Caregivers: A Triangular Semi-parametric Simultaneous Equations Approach AgEcon
Xue, Hong; You, Wen; Nayga, Rodolfo M., Jr..
This essay investigates the impacts of primary care giver’s (PCG) time allocation and food expenditure choices on childhood obesity using national panel study of income dynamic (PSID) data. A triangular system of equations is derived and estimated under parametric and semi-parametric model settings. The performances of the two modeling strategies are compared using predictive ability measures with the aid of bootstrap method. Test results suggest relatively better performance of the semi-parametric model than parametric model. Nevertheless, the comparison of the estimates from both parametric and semi-parametric estimation indicates no dramatic changes in our findings. Our results do not suggest significant impacts of PCG’s labor force participation...

Consumer Acceptance of Nutritionally Enhanced Genetically Modified Food: Relevance of Gene Transfer Technology AgEcon
Onyango, Benjamin M.; Nayga, Rodolfo M., Jr..
This study examines consumer's willingness to consume different types of a nutritionally enhanced food product (i.e., breakfast cereal with calcium, omega fatty acids, or anti-oxidants) derived from grains genetically modified using two types of technologies: plant-to-plant gene transfer technology and animal-to plant gene transfer technology. Findings indicate a majority of the respondents are willing or somewhat willing to consume the three types of nutritionally enhanced genetically modified breakfast cereal, but are less willing if the genetically modified product is derived from animal-to-plant gene transfer technology than from plant-to-plant gene transfer technology. However, the results of the ordered probit models suggest there are groups of...

CONSUMER CHARACTERISTICS ASSOCIATED WITH LOW FAT, LOW CHOLESTEROL FOODS AgEcon
Nayga, Rodolfo M., Jr..
This study identifies several characteristics and factors of individuals who are more likely to try low-fat, low-cholesterol foods. The analysis was performed using logit analysis. The results imply that the following individuals are more likely to try low-fat, low-cholesterol foods: those with high incomes, whites compared to blacks, females, those with smaller households, those with high body mass index, those who have a better perception of their own health, those who are aware of the link between diet and disease, nonsmokers, and those who do not agree that people are born fat or thin and that there is nothing one can do about it.

Consumer Willingness to Pay for Irradiated Beef AgEcon
Nayga, Rodolfo M., Jr.; Poghosyan, Arsen; Nichols, John P..
This study examines consumer willingness to pay for irradiated beef products. About 58 percent of the respondents are willing to pay a premium for irradiated beef. An ordered probit with sample selection model was estimated. Standard errors of the marginal effects of the ordered probit model were estimated using the bootstrap method. Our findings suggest that females and those who think that improper handling contributes to food poisoning are more likely to pay a premium of 50 cents per pound of irradiated beef than others. Those who trust the irradiation technology are also more likely to pay a premium of between 5 to 25 cents per pound for irradiated beef. Supply chain implications are discussed.
