Carcass, meat, and fat quality were evaluated of 37 castrates of 4 different genotypes [Pi*Du*GLR (10), Pi*AS (7), Du (10), Du*GLR (10)] kept on grass clover and fed with coarse meal made up of farm grown cereal and grain legumes without optimising the amount of amino acids and their relation to the energy content. Due to the energy surplus in the diet and in relation to the diminishing muscularity of the genotypes (corresponding to the above-mentioned sequence) lean meat contents were on a low level whereas intramuscular fat contents increased distinctly. Die Mast intakter männlicher Tiere stellt eine Alternative zur Ferkelkastration dar. Neben dem Problem des Ebergeruchs, verursacht durch die Leitsubstanzen Skatol und Androstenon, unterscheiden sich Eber in der Mastleistung, der Schlachtkörper- und Fleischqualität. During weaning, piglets are under strain from the loss of their dam, the change in feed, and a new microbiological environment. How much this strain influences the piglets depends mostly on their immune system. Piglets from organic production are weaned later (at least 40 days) than piglets from conventional rearing, but the performance and health status of organic piglets are often not satisfying. Due to the minimum requirement of the EEC Regulation 2092/91 of 40 days organic piglet suckling period typically takes about 6 weeks. But piglets weaned in such a way are often characterized by inferior performance and health status. Therefore a study with a control group (42 days suckling period) and a test group (63 days suckling period) of 18 sows each should clarify whether an extended suckling period and therefore older piglets result in better performance and health status of the piglets. The suitability of indigenous or modern genotypes for organic conditions and the necessity of a specific organic breeding programme are intensively discussed in the organic pig fattening scene. To clarify both items information about Genotype-Environment-Interaction (GEI) is necessary. Therefore 682 pigs of 7 different genotypes with widely spread protein synthesis capacity were tested for growth performance and carcass quality under conventional and organic environments at two performance testing stations in order to verify GEI.
