Assessment of food safety in organic farming Organic Eprints

Public concern about food safety in Europe has grown in response to the BSE scandal and problems with Salmonella and Campylobacter, etc. Such health and safety considerations are among the most important incentives for buying organic food, and have helped to promote rapid growth in the organic sector. Against this background the present article reviews food safety from an organic perspective. To our knowledge this has not been done previously. Consumer demand for organic foods – attitudes, values and purchasing behaviour Organic Eprints

In this paper, we use a unique combination of questionnaire data and real market purchase data on organic food to examine whether stated values can predict purchase behaviour. Our data cover around 2000 households during 1997-2001 and it is combined with a survey administered on the same panel in 2001. We distinguish between use values (health, taste and freshness attributes) and non-use values (environmental and animal welfare attributes). Non-use values are on average valued much more than use values according to consumers’ own statements. Dansk undersøgelse om forbrug af øko-varer Organic Eprints

Efterspørgslen efter økologiske fødevarer er vokset kraftigt i Danmark og mange andre vestlige lande de seneste ti år. Forbruget udgør dog stadig kun få procent af det samlede fødevareforbrug i de fleste lande. I dag er det en nicheproduktion, men den har måske potentialet til at sprænge alle rammer og opnå betragtelige markedsandele. I et nyligt afsluttet projekt “Efterspørgslen efter økologiske fødevarer” er det analyseret hvilke faktorer, der kan styrke en sådan udvikling. Projektet er udført af AKF og DMU i regi af Forskningscenter for Økologisk Jordbrug.

Designing and Testing the Questionnaire – Results and Considerations Organic Eprints

Abstract: In this working paper, we document the procedure and results from the test version of the questionnaire. The questionnaire is designed to provide information for model estimation, in addition to panel data. The questionnaire was first discussed with various researchers inside and outside the project, then tested in focus group interviews. Ultimately, it was mailed to 400 randomly chosen households. Elaborating on results from test sample gave rise to re-assessment of the questionnaire, resulting in a new version. All changes are documented in this working paper. In addition, the working paper highlights main results on behaviour and attitudes of the test sample.

Explaining Demand for Organic Foods Organic Eprints

We analyse the consumption of organic foods in Denmark in the late 1990s. The aim of our study is to identify the influence of price premiums on buying propensity. The methodological approach is econometric estimation based on four-weekly observations of purchases of organic and conventional dairy products. We apply the AIDS demand system and estimate dynamic as well as static specifications, homothetic as well as nonhomothetic specifications, and furthermore specifications with and without trends. The preferred model is a homothetic, static model with a linear trend. The price elasticities estimated in our study are higher than those estimated in other studies on food demand. In the end of the paper, we outline our current research on organic foods.

Forbrug af økologiske fødevarer Organic Eprints

Dette papir gengiver hovedresultaterne fra et studie, der estimerer en model for fordelingen af forbruget af fødevarer på den del, der er økologisk, og den del, der er konventionelt fremstillet. Modellen er udformet, så den kan anvendes i sammenhæng med makroøkonomiske modeller, først og fremmest med AAGE (Agricultural Applied General Equilibrium) modellens efterspørgselssystem. Integreres disse to modeller, forbedres grundlaget for at foretage beregninger af de samfundsøkonomiske konsekvenser af øget omlægning af landbruget til økologisk drift.

Forbrug af økologiske fødevarer : holdninger, værdier og faktisk købsadfærd Organic Eprints

I et FØJO-projekt om forbrugernes interesse i økologiske fødevarer kortlægges danskernes holdninger og markedsadfærd. I projektet kombineres data for 2000 husholdningers fødevareindkøb over en 5-årig periode med et spørgeskema, der afdækker deres holdninger og værdier. Både spørgeskema, projektbeskrivelse og arbejdspapirer kan ses på www.akf.dk/organicfoods. Projektet er et samarbejde mellem AKF, Københavns Universitet, GfK Danmark og det franske forskningsinstitut CIRED.

Hvilke barrierer hindrer øget salg, hvilke virkemidler fremmer salget, og hvor meget vil forskellige forbrugere egentlig betale for økologiske varer? Er det natur, dyrevelfærd eller kvalitet, som afgør købet? Hvis vi kendte svaret, ville meget være lettere.

Modeling demand for organic foods Organic Eprints

The market of organic foods has experienced tremendous growth during the period 1997-1998. Highest growth is experienced at the bread/cereal group where the volume share has increased by 143% during the whole period. During this period, relative organic prices have decreased, except for meat. Organic volume shares are highest for dairy products (10%), which is more than twice the share for bread/cereals (5%) and other foods (4%), which covers fruit and vegetables. In the bottom is the share of organic meat (1%). The model estimates price and budget elasticities. I et forskningsprojekt under FØJO har vi undersøgt det danske og britiske marked for økologiske fødevarer. De økologiske markedsandele er langt højere i Danmark end i Storbritannien. Men den danske udvikling er stagneret siden 1999, hvorimod det britiske marked stadig er på vej med fuld fart frem.

New tendencies in the organic food market Organic Eprints

We investigate the organic food market in two selected European countries, Great Britain and Denmark. Using unique household panel purchase data together with information on stated concern, values and attitudes, we find that the Danish and British markets share several important features. In both countries, most organic food is produced, processed and distributed at a concentrated and industrialised market, where consumer confidence is sustained by well-working organic labelling. We find that household propensity to purchase organic foods increases significantly with the household’s stated importance of private good attributes, thus making assigned private values determine the level of market participation. Økologisk landbrug – miljøpolitisk virkemiddel eller mål i sig selv? Organic Eprints

Der har gennem de seneste årtier været stigende fokus på landbrugets rolle i forbindelse med belastning af miljøet. Opmærksomheden har primært rettet sig mod erhvervets forbrug af gødning og sprøjtemidler, der kan være årsag til en række skader på naturen såsom iltsvind, grundvandsforurening og ændringer i naturens dyre- og planteliv. Hertil kommer, at den intensive jordbrugsproduktion kan indebære problemer med sikring af husdyrenes velfærd, ligesom der kan være sundhedsmæssige problemer i relation til brug af sprøjtemidler, antibiotika, vækstfremmere, etc. Økologisk jordbrug handler netop om disse problemer.
