Miotto,Lidiane Carla Vilanova; Mota,Renata Vieira da; Souza,Claudia Rita de; França,Danilo Vieira Cardozo; Dias,Frederico Alcântara Novelli; Pimentel,Rodrigo Meirelles de Azevedo; Dal'Osto,Marite Carlin; Regina,Murillo de Albuquerque.
'Bordô' grapevines (Vitis labrusca) have great relevance to viticulture due to the quality they can impart to wines and juices. However, this cultivar has high variation in yield, ranging from 6 to 11 t ha-1. The use of clones with superior genetic potential related to scions currently marketed may increase crop profitability and revitalize its cultivation. The aim of this study was to evaluate the agronomical responses of twelve clones of the Bordô cultivar selected over a period of 15 years according to yield and quality. The vineyard was planted in 2008. Grape plants were grafted onto '1103 Paulsen' rootstock and trained on vertical shoot positioning. The agronomical evaluations, performed in the 2011, 2012 and 2013 seasons, covered the duration of...

Andean blueberry (Vaccinium floribundum) bread: physicochemical properties and bioaccessibility of antioxidants Ciênc. Tecnol. Aliment.
GUIJARRO-FUERTES,Michelle; ANDRADE-CUVI,Maria Jose; BRAVO-VÁSQUEZ,Juan; RAMOS-GUERRERO,Luis; VERNAZA,Maria Gabriela.
Abstract The Andean Blueberry (Vaccinium floribundum) is a fruit with a recognized antioxidant capacity. Its consumption is limited to typical food in the Andean Ecuadorian zones. In this study, the effect of the addition of Andean blueberry (AB) pulp on loaf bread quality was determined. The specific volume was affected by the low fermentation rate due to the acidic pH of the fruit. The texture profile measurement demonstrated a product with harder consistency, due to the low number and circularity of the alveoli. Higher air retention in the crumb was also found. Simulated Gastrointestinal conditions directly affected the antioxidant capacity of the AB, producing a reduction of 96.9%. On the other hand, the AB bread initially presented a value of 37 μM...

Anthocyanins standards (cyanidin-3-O-glucoside and cyanidin-3-O-rutinoside) isolation from freeze-dried açaí (Euterpe oleraceae Mart.) by HPLC Ciênc. Tecnol. Aliment.
Gouvêa,Ana Cristina Miranda Senna; Araujo,Manuela Cristina Pessanha de; Schulz,Daniel Filisberto; Pacheco,Sidney; Godoy,Ronoel Luis de Oliveira; Cabral,Lourdes Maria Corrêa.
Availability of analytical standards is a critical aspect in developing methods for quantitative analysis of anthocyanins. The anthocyanins cyanidin-3-O-glucoside and cyanidin-3-O-rutinoside were isolated from samples of freeze-dried açaí (Euterpe oleraceae Mart.), which is a round and purple well-known palm fruit in Brazil, and then used as standards. The isolation of the anthocyanins was performed by High Performance Liquid Chromatography (HPLC), using an adapted six-channel selection valve. The identification of anthocyanin pigments in açaí was based on mass spectrometric data for molecular ions and MS-MS product ions and on previous published data. After the collection procedure, standards with a high purity grade were obtained and an external standard...

ANTIOXIDANT COMPOUNDS IN SKIN AND PULP OF FRUITS CHANGE AMONG GENOTYPES AND MATURITY STAGES IN HIGHBUSH BLUEBERRY (Vaccinium corymbosum L.) GROWN IN SOUTHERN CHILE J. Soil Sci. Plant Nutr.
Ribera,A.E; Reyes-Diaz,M; Alberdi,M; Zuñiga,G.E; Mora,M.L.
We evaluated the genotype and maturity effects on antioxidant activity and phenolic compounds of whole, skin and pulp fruits from three highbush blueberry cultivare (cv. Brigitta, cv. Bluegold and cv. Legacy) grown in southern Chile. Total antioxidant activity (TAA) in ripe fruits varied among the cultivare in the order Legacy > Brigitta > Bluegold. We found that TAA in unripe green and fully ripe fruits was high and similar between them, whereas the lowest levels were found in intermediate ripe fruits. The same trend was observed for fruit total phenolic content. This could be attributed to the higher concentrations of phenolic acids (mainly chlorogenic acid) and flavonols (mainly rutin) at immature fruit stages; whereas the high TAA in mature...

Chemistry Inspired by the Colors of Fruits, Flowers and Wine Anais da ABC (AABC)
QUINA,FRANK H.; BASTOS,ERICK L..
ABSTRACT An overview is provided of the status of research at the frontiers of investigation of the chemistry and photochemistry of two classes of natural plant pigments, the anthocyanins and the betalains, as well as of the pyranoanthocyanin pigments formed from anthocyanins during the maturation of red wine. Together, anthocyanins and betalains are responsible for almost all of the red, purple and blue colors of fruits and flowers and anthocyanins and pyranoanthocyanins are major contributors to the color of red wines. All three types of pigments are cationic below about pH 3, highly colored, non-toxic, reasonably soluble in water or alcohol and fairly stable to light. They exhibit good antioxidant or antiradical activity and, as part of our diet, confer...
