Despite the possible influence of tannins on the nutritional value of the forages from Caatinga vegetation, there are few studies that evaluated their tannin concentration. This study was conducted to characterize condensed tannins present in the legumes species Mimosa hostilis (Jurema Preta), Mimosa caesalpinifolia (Sabiá) and Bauhinia cheilantha (Mororó), at three stages of their phenological cycle. Apesar da possível influência do tanino sobre o valor nutritivo das forrageiras da Caatinga, poucos são os estudos que avaliam a concentração de taninos nestas plantas. O objetivo do presente estudo foi caracterizar os taninos condensados presentes nas espécies Mimosa hostilis (Jurema Preta), Mimosa caesalpinifolia (Sabiá) e Bauhinia cheilantha (Mororó), em três fases do ciclo fenológico. Tempeh is a food obtained by fermentation of soybean grains by the fungus Rizophus oligosporus. It is a traditional Indonesian food that presents benefits for human health protecting against diarrhea and chronic diseases. Tempeh processing includes dehulling, cooking, inoculation, and fermentation. In this study, chemical characteristics of tempeh prepared with soybean cultivars specially developed for human consumption (BRS 216, BRS 232, BRS 257, and BRS 267) were investigated. Sapucaia (Lecythis pisonis Camb.) raw nuts collected from Brazil were analyzed to determine the proximate composition, amino acid profile of protein fractions, in vitro protein digestibility and antinutritional factors in order to evaluate their potential as a protein alimentary complement. The nuts contained adequate amounts of essential amino acids, fatty acids and minerals. Diferenças em níveis de inibidor de tripsina Kunitz e ácido fítico foram determinadas para cultivares de soja convencionais e transgênicas cultivadas em Londrina e Ponta Grossa, Sul do Brasil. Gluten-free foods are a growing trend in the domestic and international markets, contributing to health and wellness, especially the celiac public. The objective of this study was to create a new option of gluten-free food by replacing wheat flour by rice grit flour, cornstarch, and extruded split bean flour, and to aggregate value to low cost industrial byproducts. A new food product was developed and its components analyzed for their nutritional characteristics and changes during baking. Due to the importance of studies on yacon related to health, its in natura pulp, in natura peel, pulp flour, and peel flour were chemically analyzed in terms of its centesimal composition, specific minerals, total dietary fiber and fractions, pH, total soluble solids, total titratable acidity, tannins, oxalic acid, and nitrate. The polyphenoloxidase and peroxidase enzymatic activities were evaluated for in natura pulp and peel only. Yacon pulp and peel flour presented average yield of 7.94% and 10.86%, respectively. This study was carried out on a low-productive Brachiaria brizantha cv. Marandu pasture, mixed with Arachis pintoi cv. Belmonte (forage peanut), established 13 years ago in a Red-Yellow Latosol in Acre State, western Brazilian Amazon. The purpose was to evaluate the response of this pasture to different fertilizer combinations, aiming at identifying the nutritional factors responsible for the fall of pasture carrying capacity and for the reduced vigor of forage peanut.
