ABSTRACT Pollination services performed by bees are essential for the reproduction of a great part of flowering plants. The pollen collected by Apis mellifera while performing pollination (bee pollen), has been incorporated into the human diet for its favorable nutritional components. Around 1,500 tons of bee pollen are produced annually worldwide, especially in Spain, China, Australia, Argentina, and Brazil. An experiment was conducted to evaluate the potential of honey, propolis, and bee pollen for the reversal of lipid peroxidation induced by tebuconazole (TEB) in South American catfish (Rhamdia quelen), in which the concentration of thiobarbituric acid reactive substances (TBARS), the activity of the antioxidant enzyme glutathione-S-transferase (GST) and the concentrations of non-enzymatic antioxidants, reduced glutathione (GSH), ascorbic acid, and non-protein thiols were assessed. Stingless bees in Brazil are indigenous and found all over the country. Bee pollen is used for its nutritional value in the human diet. It is made up of natural flower pollen mixed with nectar and bee secretions. In order to evaluate the chemical composition, free radical scavenging activity, and botanical origin, sample of pollen loads from stingless bee, Melipona rufiventris (Uruçu amarela) was studied. The EtOAc extract of pollen of Melipona rufiventris yielded the following compounds: p-hydroxycinnamic acid, dihydroquercetin, isorhamnetin, isorhamnetin3-O-(6"-O-E-p-coumaroyl)-β-D-glucopyranoside, luteolin, and quercetin. Bee pollen moisture value is one of the quality parameters for this product. Some countries such as Argentina, Brazil, Bulgaria, Poland and Switzerland have bee pollen regulations on quality parameters, but these are not clear regarding which method should be used for moisture determination. The aim of this paper was to compare six methods of moisture determination in dried bee pollen samples. The methods were: conventional oven at 100 °C, vacuum oven at 70 °C, desiccator with sulfuric acid, drying out process with infrared light at 85 °C, lyophilization and Karl Fisher's method. Abstract The aim of this study was to investigate the effect of hot air drying on quality characteristics, physicochemical properties, morphological structure and organoleptic characteristics of bee pollen, and compute the effective moisture diffusivity and activation energy during hot air drying of bee pollen. Bee pollen samples were dried at 40, 45, 50, 55 and 60 °C. Effective moisture diffusivity (Deff) values ranged from 1.38 × 10 −10 to 4.00 × 10−10 m2/s, and the activation energy (Ea) was found to be 42.96 kJ/mol. Protein, fat, total carbohydrates and vitamin C of bee pollen were affected by the drying temperature. Objetivou-se verificar as relações entre moringa (Moringa oleifera) e seus visitantes florais, identificando os possíveis agentes polinizadores e seu potencial como planta apícola. As observações foram realizadas de maio a junho de 2002 e de 2006, em populações existentes em áreas experimentais da Embrapa Semiárido. Para as observações da morfologia, biologia floral e visitantes, foram utilizados 100 botões florais marcados em 10 plantas ao acaso. As flores dessa planta se reúnem em inflorescência do tipo panícula e podem abrir ao longo do dia, cujo tempo de vida da flor é de, aproximadamente, 100 horas. Bee pollen is a product from beehives that is contained in corbiculae, generally monospecific and is currently considered as a functional food due to its nutritional and medicinal properties. This study investigates the antimicrobial activity of a Chilean bee pollen extract of known botanical origin. The purpose of this study is to characterize native bee plants regarding their capacity to extract and accumulate trace elements from the soil and its consequences to the sanity of the produced pollen. The trace elements Cu, Mn, Pb and Zn were analyzed in soil, plants and bee pollen from Teresina region (PI), Brazil, by flame atomic absorption spectrophotometer. Considering the studied plant species, Cu and Pb metals presented in the highest levels in the roots of B. platypetala with 47.35 and 32.71 μg.mL-1 and H. suaveolens with 39.69 and 17.06 μg.mL-1, respectively, while in the aerial parts Mn and Zn metals presented the highest levels in S. verticillata with 199.18 and 85.73 μg.mL-1.
