O Brasil é o maior exportador mundial de carne bovina, neste sentido são necessárias estratégias para otimizar a produção e ao mesmo tempo garantir a qualidade da carne bovina. O objetivo foi avaliar as características sensoriais (aroma e sabor característico de carne bovina, maciez e suculência) de animais machos e fêmeas de nove grupos genéticos terminados em confinamento, por meio de análise descritiva quantitativa. Foram utilizados 54 animais, machos e fêmeas, filhos de fêmeas Nelore, ou cruzadas ½ Angus + ½ Nelore ou ½ Senepol + ½ Nelore com touros da raça Canchim, Charolês ou Angus. A maturação a seco ("dry-aging") é um processo em que a carne é maturada sem embalagem, em condições de temperatura e umidade controladas. Apesar de ter como desvantagem menor rendimento durante o processo, vários estudos ressaltam o impacto positivo no sabor do produto, tornando-o diferenciado.

This trial was conducted to evaluate some beef quality attributes of Nellore, F1 Simmental × Nellore and F1 Angus × Nellore steers finished on feedlot. The effects of feeding regime and genetic group on shear force, thawing losses, cooking (leak + evaporation) losses, total losses and muscle fiber type, as well as carcass pH and temperature during 24 h of chilling were evaluated. There was a genetic group effect on shear force, where the beef from F1 Simmental × Nellore and F1 Angus × Nellore animals had lower values than Nellore animals. A partir da década de 1940, diversas raças foram desenvolvidas com o uso do cruzamento de raças zebuínas, comprovadamente adaptadas ao clima tropical, com raças europeias de maior produtividade. Nos EUA, por exemplo, foi desenvolvida a raça Santa Gertrudis (5/8 Shorthorn e 3/8 Zebu), por meio de cruzamento alternativo e posterior seleção massal. Em gado leiteiro, temos o exemplo das raças Jamaica Hope e, no Brasil, temos a raça Girolando. A raça Canchim (5/8 Charolês e 3/8 Zebu) foi desenvolvida na Fazenda de Criação de São Carlos, SP (atualmente Embrapa Pecuária Sudeste), nessa mesma época (MOTTA, 1977).

Carcass Quality and Genetic Selection in the Beef Industry AgEcon

A lack of high-quality beef has been cited as one of the primary factors for the 50% decline in beef demand from the mid-1970s to the last 1990s. Cattle producers argue that appropriate price premiums are not sufficient to encourage the production of high-quality cattle. Although some improvement in carcass quality can be made by the cattle feeding and processing sectors, substantial improvements in quality must include genetic progress. A hedonic analysis of four major U.S. beef seedstock producers indicates that bull purchasers place relatively high values on a bull’s ability to produce progeny with improved carcass-quality traits.

Residual water intake (RWI) is a measure of water efficiency that can be used for selection in beef cattle. Currently, it is not known the association of RWI with carcass traits. Thus, the aim of this study was to evaluate the relation among RWI and ultrasound carcass traits in Senepol cattle. Records on 749 Senepol heifers of approximately 17 months of age, involved in feedlot performance tests, were used.

Meat quality is a complex trait that is influenced by genetic and environmental factors, which includes mineral concentration. However, the association between mineral concentration and meat quality, and the specific molecular pathways underlying this association, are not well explored. We therefore analyzed gene expression as measured with RNA-seq in Longissimus thoracis muscle of 194 Nelore steers for association with three meat quality traits (intramuscular fat, meat pH, and tenderness) and the concentration of 13 minerals (Ca, Cr, Co, Cu, Fe, K, Mg, Mn, Na, P, S, Se, and Zn). Factors Associated to Purchase of Quality-Labelled Beef AgEcon

The aim of the present study is to identify the factors associated to purchase of quality-labelled beef. For this purpose a total of 364 surveys were carried out on buyers of beef in three Spanish cities. The sample was divided into three groups of buyers according to the beef purchasing habits with a quality label. A logistic regression analysis was used to estimate the differences between groups. The results show the importance of the production region as a quality aspect. Income level, association of quality-labelled beef with “guarantee and tradition” aspects, purchasing frequency, place of purchase, production systems and lifestyles are all variables that enabled us to establish differences between groups.

The aims of the present study were to compare the quality of grain-fed and pasture-fed beef and to assess the effects of two feeding periods on grain for finishing steers. A group of 75 steers were fed one of 5 finishing diets (n = 15 per diet): pasture for 90 d (P), oat grain plus pasture silage for 35 d (SO), oat grain plus pasture silage for 75 d (LO), wheat grain plus pasture silage for 35 d (SW), and wheat grain plus pasture silage for 75 d (LW). The physicochemical and sensory attributes and the fatty acid composition of the longissimus lumborum muscle were determined. Abstract: The objective of this work was to estimate allelic frequencies of the polymorphisms IGF2/MboII (G > T) of the insulin-like growth factor 2 (IGF2) gene, DQ499531.1:g.134A > T of the pro-melanin-concentrating hormone (PMCH) gene, and DQ667048.1:g.3290G > T of the RARrelated orphan receptor C (RORC) gene in beef cattle of different genetic groups, and to evaluate the associations between these polymorphisms and traits related to carcass composition and meat quality. Beef tenderness, a complex trait affected by many factors, is economically important to beef quality, industry, and consumer?s palatability. In this study, RNA-Seq was used in network analysis to better understand the biological processes that lead to differences in beef tenderness. Skeletal muscle transcriptional profiles from 24 Nellore steers, selected by extreme estimated breeding values (EBVs) for shear force after 14 days of aging, were analyzed and 22 differentially expressed transcripts were identified. A qualidade da carne é determinada pela cor da carne, cor da gordura, textura, marmoreio e maciez, sendo esta última o atributo mais valorizado pelos consumidores. A análise dessas características só pode ser feita após o abate do animal, o que dificulta e encarece o processo de avaliação da influência dos fatores ambientais e genéticos na qualidade da carne. De forma a facilitar o melhoramento genético desses animais, recomenda?se o uso de marcadores genéticos.

The projected expansion in U.S. corn-based ethanol production over the next several years has created concern that large surpluses of distillers grains may result. Most of the distillers grains currently being produced are consumed by the domestic livestock and poultry industries, especially the beef industry. A recent study by the Center for Agricultural and Rural Development projects that the U.S. ethanol industry could produce between 40 million and 88 million metric tons of distillers grains (dry matter basis) per year by 2011. Valuing Fed Cattle Using Objective Tenderness Measures AgEcon

Beef tenderness is critical in consumer satisfaction with beef steak products. Current fed cattle valuation systems do not differentiate carcasses based upon tenderness variation. However, considerable research indicates consumers are willing to pay more for tender relative to tough beef steak. This article develops a tenderness-augmentation to current fed cattle grid pricing systems. Using a large set of actual carcasses, we determine that a tenderness-augmented price grid would reorder fed cattle value by on average nearly $5.00/cwt dressed relative to current valuation methods. Substantial opportunity is present to improve beef tenderness through new price signals to producers.
