Deficiencies of micronutrients such as vitamin A are widespread, expecially in Africa. Biofortified crops such as maize, bred for high levels of provitamin A might offer a solution, but these crops are often bright orange, and African maize consumers prefer white. To estimate the consumers interest in orange biofortified maize, sensory evaluations were organized in rural Ghana with white, yellow and orange maize. BIOFORTIFICATION, AN ALTERNATIVE TO REDUCE FOOD INSECURITY AND ITS ADVERSE EFFECTS IN DEVELOPING COUNTRIES: A HONDURAS CASE STUDY AgEcon

Food insecurity can generate nutritional problems such as iron deficiency anemia, which in countries like Honduras is a moderate public health problem. The AgroSalud project is enhancing the iron content of beans and rice in order to improve the iron intake of vulnerable groups, especially children under five years and pregnant women. Iron- biofortified rice and beans together can reduce the deficit in iron intake by more than a 100% depending on the age group, farmer adoption and other variables. This, in turn, would increase the number of healthy (disability-adjusted life years, DALYs) years that the Honduran population could live.

Thus, the objective of this study was to evaluate carotenoid retention in the kernels of minimally processed normal and vitamin A precursor (proVA)-biofortified green corn ears that were packaged in polystyrene trays covered with commercial film or in multilayered polynylon packaging material and were stored. However, traditional methods of impact assessment do not apply to biofortified crops as little or no yield increases are expected. Significant progress has been made to develop maize varieties with improved protein quality, collectively known as quality protein maize (QPM). Selenium (Se) is an essential element for many organisms, although in high concentrations it may become toxic, leading to the generation of reactive oxygen species (ROS). In this study, bean plants received different application rates of Se (0, 10, 20, 40, 80, and 160 μM) in the form of selenite and selenate to evaluate the activity of the detoxifying enzymes of H2O2. The results indicated that the activity of these enzymes in bean plants depended on the chemical form of Se: selenite at rates of 20 μM or greater diminished biomass and yield, increasing the activity of superoxide dismutase (SOD). The aim of this study was to characterize the Zn and Fe availability by phytic acid/Zn and phytic acid/Fe molar ratios, in 22 tropical maize inbred lines with different genetic backgrounds. The Zn and Fe levels were determined by atomic absorption spectrophotometry and the P through colorimetry method. Potential Impacts of Golden Rice on Public Health in India AgEcon

Vitamin A deficiency (VAD) affects millions of people world-wide, causing serious health problems. Golden Rice (GR), which has been genetically engineered to produce beta-carotene, is being proposed as a remedy. While this new technology has aroused controversial debates, its nutritional impact and cost-effectiveness remain unclear. We determine the current burden of VAD in India from a public health perspective,and simulate the potential alleviating impact of GR using representative household food consumption data. Given broad public support, GR could more than halve the overall burden of VAD. Juxtaposing health benefits and overall costs suggests that GR is very costeffective.

Under zinc deficiency conditions, many essential zinc-dependent physiological functions are unable to operate normally, and the cellular homeostasis is adversely affected. This paper described the potential damages that low-zinc bioavailability in soil can have for plants, humans, and animals.
