Abstract: Biogenic amines (BAs) represent a considerable toxicological risk in some food and feed products. They are formed under unhygienic conditions during storage and processing; therefore, an increase in the concentrations of those metabolites is related to putrefaction. Because BAs are thermostable, they remain in food and feed that have undergone heat treatment. There are several toxicological effects, especially caused by histamine, when high concentrations of BAs are ingested by humans, depending on the food itself and also on individual susceptibility and individual health status. The present paper reviews the main BAs in meat products, their use as spoilage indicators, the risk on human health and also the contamination of by-product meals.... |

Two studies were conducted to evaluate the effects of crude glycerin on feed intake, performance, carcass characteristics, and total digestibility of Nellore bulls. In experiment 1, cattle (n = 30) were fed a control diet without crude glycerin and diets containing 7.5, 15, 22.5, and 30% crude glycerin, for 103 d. Animals were harvested and data of carcass characteristics were collected. In experiment 2, a digestibility trial was performed using indigestible acid detergent fiber (iADF) as internal marker, and five rumen-cannulated steers. Both experiments were conducted as a randomized complete block design and data were analyzed using mixed procedures. In experiment 1 no differences were observed among treatments on dry matter intake, and performance... |

ABSTRACT - The objective of this study was to find the best level of inclusion of crude glycerin (0, 60, 120, and 240 g kg−1 of dry matter of diet) in substitution of pearl millet in a feedlot diet. Twenty-eight Nellore young bulls with mean age of 18 months and average weight of 357±23.56 kg were used. The animals were distributed in a completely randomized design with four treatments and seven replications. The intakes of dry matter, crude protein, neutral detergent fiber, and total digestible nutrients were similar among the dietary levels of crude glycerin. The ether extract intake decreased with increase in the levels of crude glycerol in the diets. Apparent digestibility of dry matter, crude protein, and extract ether was similar among the dietary... |

Background Natural 2-phenylethanol (2-PE) is an important flavoring that emits the aroma of roses. During biotransformation, the aroma quality of natural 2-PE is affected by its main by-products, which include butanol, isobutyric acid, butyric acid, and isovaleric acid. Thus, controlling undesirable by-product formation can reduce the effect of odor on 2-PE aroma quality. Results 2-PE was produced through biotransformation using l-phenylalanine as a substrate and glucose as a carbon source. Ascorbic acid was added to the system to improve the redox reaction and suppress the generation of by-products. Principal component analysis of the aroma quality of 2-PE was performed using an electronic nose. Similarity analysis revealed that the effects of four... |

Abstract The aim of this study was to evaluate the effects of chitosan-tomato plant extract (C-TPE) edible coating (EC) applications on the physicochemical, microbiological, sensory and antioxidant capacity of chicken during storage. Edible coatings prepared with chitosan 1%, acetic acid 1%, glycerol and TPE (0.1 and 0.3%) were tested. The slices were submerged for 1 minute in different treatments (T1: C 1%; T2: C 1% + TPE 0.1%; T3: C 1% + TPE 0.3%; T4: control) and stored at 4 °C. At the end of the storage period, the treatments exhibited the greatest physicochemical and microbiological effects in the slices, reducing the microbial population relative to the control. The T2 treatment exhibited the highest antioxidant capacity, total phenolic content and... |

Long-term proteolysis of tuna by-products (head, viscera and tail) by the wide spectrum protease Protamex has been investigated and compared. After hydrolysis, two fractions (soluble aqueous phase and insoluble sludge) were collected. Chemical compositions of each fraction and molecular mass distributions of soluble peptides were determined. Degrees of hydrolysis obtained after 12 h of hydrolysis of head, viscera and tail were 32.3, 16.8 and 22.2 %, respectively. Nitrogen recovery in the soluble fractions was 73.6 % for the head, 82.7 % for the viscera and 85.8 % for the tail. Lipid distribution indicated that the majority of lipids remained in the sludge. Such proteolysis appears useful for the production of very different fractions: one rich in peptides... |

The majority of sheep milk produced in the world is transformed into cheese. Feeding is a major factor affecting the quality of sheep milk and, therefore, of sheep cheese. Because fat is the main compound of cheese, this review gives an update on the effects of feeding and nutrition on milk fat content and deeply discusses feeding strategies aimed at increasing the levels of healthy fatty acids (FA), such as conjugated linoleic acid and omega-3 FA, in milk and cheese in the human diet. In addition, the use of alternative feed resources such as by-products, aromatic plants, and phenolic compounds in the sheep diet and their effects on milk and cheese FA composition are also discussed. Among feeding strategies, grazing and the use of supplements rich in oils... |

This experiment was conducted to evaluate the protein and carbohydrate fractions, and to estimate the in situ rumen degradation kinetic parameters of Brachiaria decumbens grass silage with inclusion of rice bran. Five rice bran inclusion levels were tested: 0, 10, 20, 30 and 40% of the natural matter, distributed into a completely randomized design with five replications. The brachiaria grass was obtained at 60 days of regrowth by cutting the forage at 10 cm from the soil and ensiling it in 10-L experimental silo bags, which were opened after 40 days. The degradability profiles for DM, CP, NDF and of the feeds for each animal utilized made it possible to obtain the estimates of the parameters analyzed. The contents of total carbohydrates (TCH), fibrous... |

ABSTRACT In fish farming, the use of alternative ingredients has been studied, so that alternative sources can be used to minimize feed costs. This study evaluated the incorporation of grape, orange, guava, and fig residues in diets for silver catfish and its effects on growth, digestive enzymes and body composition. A total of 180 fish (initial mean weight = 22.93±0.75 g) were reared in a recirculation aquaculture system. There was no difference (P>0.05) in the parameters of growth, dry matter, mineral matter, plasma protein, cholesterol, triglycerides, lipase, and trypsin of fish. Glucose levels were higher in fish fed diets containing fig, orange, and grape residue (P<0.05). Lipase activity was higher in fish fed orange residue, compared to guava... |

Beyond the technical and technological advances in the conversion of marine by-products into useful products, the territorial, economic, social, political and environmental parameters, which govern all forms of approaches for fish by-products upgrading, must be taken in account. This is essential to understand why and how bioconversion technologies are applicable. The fishery sector is facing several issues such as fish stocks weakening, recourse to imports, aquaculture rising or consumers behaviors which complicate the approach of fish by-products upgrading as it is linked to the raw material processing. Thanks to some projects addressed this thematic in recent years, several quantitative and qualitative data about by-products deposits are available.... |

One third of the world's fishing produce is not directly used for human consumption. Instead, it is used for making animal food or is wasted as residue. It would be ideal to use the raw material thoroughly and to recover by-products, preventing the generation of residues. With the objectives of increasing the income and the production of the industry, as well as minimizing environmental and health problems from fish residue, chemical silage from Tilapia (Oreochromis niloticus) processing residues was developed after homogenization and acidification of the biomass with 3% formic acid: propionic, 1:1, addition of antioxidant BHT and maintenance of pH at approximately 4.0. Analyses to determine the moisture, protein, lipids and ash were carried out. The amino... |

Abstract The objective of this study was to extract collagen from chicken feet, determining optimal extraction conditions according to acetic acid concentration, pepsin content and time of enzymatic hydrolysis. A factorial design 23 was used, with three replications at the central point, totaling 11 experiments. The response variable studied was the collagen content of the isolate obtained. In addition to the optimization, the characterization of the isolates with higher and lower collagen content, in relation to the amino acid profile, electrophoretic profile, peptide hydrophobicity and functional properties, such as water solubility, water retention capacity and emulsifying activity, were carried out. The proposed model was statistically significant,... |

ABSTRACT This experiment was conducted to evaluate the effect of crude glycerin at differing inclusion levels on performance and carcass characteristics of broilers and litter moisture. 960 broilers of 21-42 days of age were used in a completely randomized design with six crude glycerin inclusion levels (0, 3, 6, 9, 12, 15%), with eight replicates containing 20 broiler chickens per experimental unit. There was a quadratic effect (p<0.05) for weight gain, feed intake and feed:gain ratio from 21 to 42 days of age. Higher levels of crude glycerin in diets increased (40.24%, p<0.05) the litter moisture and reduced (6.04%, p<0.05) the viability of of the birds. There were no effects (p>0.05) on carcass yield, breast, or liver percentages. However,... |
