Tomato (Lycopersicon esculentum Mill.) fruits, cv. Santa Clara, were harvested at the breaker stage from commercial fields in Brazlândia, Brazil, to investigate the ability of 1-methylcyclopropene (1-MCP) to retard tomato fruit ripening. Fruit without external blemishes were graded for size (diameter = 80±5 mm) and mass (m = 130±10 g), placed inside hermetically sealed boxes, and 1-MCP was applied for 12 hours (T = 22±1°C; RH = 80-85%) at four different concentrations: 0 (control), 250, 500 and 1000 mL.L-1. Fruits were held at ambient conditions (T = 23±2°C; RH 80-85%) for 2 days and then stored inside a cold room (T = 20±1°C; RH = 85-95%). Carotenoids have antioxidant activity, but few are converted by the body into retinol, the active form of vitamin A. Among the 600 carotenoids with pro-vitamin A activity, the most common are α- and β-carotene. These carotenoids are susceptible to degradation (e.g., isomerization and oxidation) during cooking. The aim of this study was to assess the total carotenoid, α- and β-carotene, and 9 and 13-Z- β-carotene isomer contents in C. moschata after different cooking processes. ABSTRACT: The effect of atrazine, mesotrione, and joint activity of atrazine plus mesotrione on pigment, lipid peroxidation, and antioxidant enzyme activity was studied. Atrazine and mesotrione treatments significantly reduced chlorophyll a (Chl a), chlorophyll b (Chl b), carotenoid concentrations, and protein content in bermudagrass (Cynodon dactylon L.) plants, whereas they significantly enhanced lipid peroxidation. Abstract The aim of this study was to determine the content of bioactive compounds and antioxidant activity present in three fruit species from the Brazilian Cerrado: carnauba (Copernicia prunifera (Mill.) H.E. Moore), murici (Byrsonima crassifolia L. Rich)and oiti (Licania tomentosa (Benth) Fritsch). Among analyzed fruits, oiti showed the highest total phenolic content (1236.42 ± 34.06 mg GAE 100 g-1) followed by murici (468.90 ± 27.30 mg GAE 100 g-1) and carnauba (314.44 ± 9.50 mg GAE 100 g-1). Lately, tropical fruit consumption has increased due to a higher knowledge of its nutritional and therapeutic value. The aim of this work was to evaluate the antioxidant potential of cashew apples from different early dwarf clones during their ripening. The clones analyzed included: CCP 76, CCP 09, BRS 189 and BRS 265 in seven ripening stages. They were analyzed for vitamin C, total carotenoid, total anthocyanin, yellow flavonoids and polyphenol content and total antioxidant capacity. Clone BRS 265 ripe cashew apple presented the highest vitamin C content (279.37 mg x 100 g-1). The aim of this study was to evaluate the effects of fresh-cut in stick form of two cassava cultivars on their biochemical and antioxidant characteristics, at two harvest times. The fresh cut cassava sticks were packaged in polypropylene, maintained at 5±1ºC, with 90±5% relative humidity for 12 days. The link between diet and the incidence of chronic and degenerative diseases has already been established. The foods that play a role in preventing and/or treating these diseases are called functional foods. Buriti can be highlighted amongst these foods since it is an excellent source of vegetable oil, which is rich in β-carotene and oleic acid. This research evaluated the potential of the pulp of this fruit as a functional food focusing on its incorporation to the diet. Buriti pulp presented 62.93% moisture, 8.25% total carbohydrates, and 2.10% protein. The lipid fraction corresponded to 13.85%, and oleic acid was the main fatty acid. Characterization and optimization of oil microcapsules from Attalea phalerata Mart. for the preservation of bioactive compounds 60

This study aimed microencapsulating Attalea phalerata Mart. oil, containing high carotenoid and phenolic compounds content, with Arabic gum and gelatin, using the complex coacervation method. The yield, efficiency, morphology of microcapsules and content of phenolic compounds, carotenoids and antioxidant activity in different processes conditions (concentration of the filling, temperature and agitation speed) were evaluated. The results showed 88% of yield, efficiency up to 70% and a characteristic size of microcapsules. ABSTRACT The present study aimed to compare the changes in the bioactive compounds, color parameters and to determine consumer opinions through sensory analysis of the pumpkin using different cooking methods (boiling, steaming, microwaving and sous vide). The cooking methods reduced the ascorbic acid content (49.73-50.42%) and polyphenols (49.68-64.94%). Microwaving increased the carotenoid content by 24.58%. The brightness (L*), red color (a*) and yellow color (b*) were reduced and there was also the loss of vivid color (chroma). The color of samples was affected after cooking process. Four types of poly unsaturated fatty acids (PUFA) are essential for all shrimp species, linoleic (LOA, 18:2n-6), alfa-linolenic (ALA, 18:3n-3), eicosapentaenoic (EPA, 20:5n-3) and docosahexaenoic (DHA, 22:6n-3) acids. Moreover, the arachidonic acid (ARA, 20:4n-6), even when present, seems to be, in crustaceans, not so important or yet dispensable. It is relevant knowing that cholesterol as much as PUFA are not well absorbed when not followed by a substantial amount of lecithin, reaching 5% of the ration. The sum of PUFA reaches around 3% of the diet, even varying according to the species, stage and ration type. Caléndula (Calendula officinalis L.) es una planta herbácea anual que destaca por los usos medicinales de sus capítulos (flores). En esta especie se ha demostrado diversidad genética y de composición química entre variedades. En México no se cultivan diferentes variedades ni se ha investigado la variación posible en el rendimiento de capítulos, concentración de flavonoides y carotenoides en función de la variedad y de cortes, como es el efecto causado por cosechas continuas de los capítulos florales. Determinação de betacaroteno e licopeno em frutas e hortaliças por cromatografia líquida de alta eficiência (Clae). 14

O objetivo desse estudo foi quantificar betacaroteno e licopeno em diferentes matrizes vegetais por cromatografia líquida. Os carotenoides foram identificados e quantificados por Clae. A metodologia foi validada avaliando-se os parâmetros de seletividade, linearidade, limites de detecção e quantificação, exatidão e precisão. A seletividade foi confirmada por meio dos tempos de retenção e dos espectros de absorção dos padrões de betacaroteno e licopeno. A linearidade foi confirmada por meio do R2de 0,999 para os dois compostos. Os limites de detecção e quantificação para o licopeno foram de 0,07 mg.L -1 e 0,22 mg.L -1, respectivamente, e para o betacaroteno, de 0,01 mg.L- e 0,05 mg.L-1.
