Discontinuous frying of breaded chicken in cottonseed oil was evaluated. Three 400 g batches of foodstuff were fried daily in a 28 L fryer at 182 °C for 4.5 minutes for 7-8 days, and the experiment was repeated three times. The total polar compounds in the oil were determined by the conventional method. Changes in the oil were determined by the quick tests Testo 265, Viscofrit and Fri-check based on physical constants, and the results were compared with those of total polar compounds obtained by the conventional method. The free fatty acids, conjugated dienes, Lovibond color, oxidative stability, fatty acid composition, and polymeric compounds were also determined. During frying, the oil samples presented 6.0-39.2% total polar compounds, 0.0-12.9%... |

ABSTRACT Dietary inclusion of lipid sources has been one of the methods adopted by nutritionists aiming at better energy balancing. However, alternative energy feedstuffs have been sought in an attempt to reduce production costs. In this regard, lipid sources that can replace conventional ones, such as beef tallow, cottonseed oil, and sunflower oil have been investigated. The objective of this study was to examine the effects of different lipid sources on the performance, egg quality, biometrics of digestive organs, and bone quality of white-egg commercial layers in the first production cycle. A total of 216 Hy-Line White layers at 70 weeks of age, weighing 1.701 ± 0.103 kg, were used in a completely randomized design with four treatments and six... |

Abstract: To date, most of studies have only focused on metabolic effects of dietary oils while recent evidence proposes that they can influence kidneys structure. Therefore, the aim of this study was to evaluate the impact of long-term consumption of olive, cottonseed and sesame oils on renal morphology in rats. 70 male Wistar rats randomly assigned into seven equal groups and treated with standard diet (control), the standard diet enriched with 10% or 20% (W/W) of either olive oil (OLI10%, OLI20%), cottonseed oil (COT10%, COT20%) or sesame oil (SES10%, SES20%) for 5 months. Quantitative features of the kidney including kidney and cortex volumes and the number of glomeruli were analyzed stereologically. Moreover, kidney sections histologically were... |
