In order to establish the origine of dietetics in Arabo-Persian medicine, the Coran and the Hadith, Islamic Sacred texts, have been studied. Their quotations concerning basic dietetic notions and food products used in Arabo-Persian medicine have been taken into consideration. The second part of this study concerns patients' food, diets and dietetics mentioned in Arabo-Persian writings. According to Arabo-Persian physicians and scientists foods are classified into absolute foods, medicinal foods and food drugs. In this paper, we take up to analysing, through study of a moroccan manuscript in dietetics, the Ibn Chaqrun's Urjuzah (XVIIIth century), and through actual moroccan traditions in the matter of foods and nutritional rules, some main principles of Arabo-Islamic dietetics, and particularly : the classification of foods in accordance with theory of humours; the notion of corrective effects exerted by some foods and drugs. Moreover, we have recognized the five principal dietetical systems developed by Arabo-Islamic physicians : dietetics of physic and sexual performance, dietetics of traveller, dietetics of temperance and sobriety including mystic abstinence and nomadic way of life, dietetics of intelligence and memory, medical dietetics proper. The classical doctrine of Ayurveda, the "science of longevity", is expounded in ancient sanskrit works which may have been composed during the first centuries of our era. According to this medical system health depends on the balance and good functioning of three vital principles, and diseases are linked to imbalance in these principles, or disturbances in the secondary forms of a single principle. Consequently, the name tri-dosa or "three troubles" was given to this triad of elements. Since the derangement of the dosa is attributed chiefly to unsuitable diet, regimens and dietetics are considered as very important for the prevention of diseases.
