Múltiples compuestos naturales encontrados en frutas, cereales y vegetales presentan actividad antioxidante. Este trabajo tuvo como objetivo caracterizar las semillas de jabuticaba (Myrciaria cauliflora Berg) en cuanto a su composición proximal y potencial antioxidante, y evaluar el perfil de ácidos grasos en el aceite extraído de las mismas. Para la obtención del extracto, las semillas deshidratadas y trituradas fueron extraídas con alcohol etílico por 30 minutos, en la proporción de 1:3 de semillas:alcohol etílico, bajo agitación continua, a temperatura ambiente. ABSTRACT: In the present study, antibacterial and antioxidant [1,1-diphenyl-2-picrylhydrazyl (DPPH) free radical scavenging activity] activities of a weed, slender amaranth (Amaranthus viridis L.) were investigated. Extracts of different plant parts were prepared in n-hexane, chloroform and ethyl acetate. Clusia fluminensis Planch. & Triana (Clusiaceae Lindl.) is a native species found in regions of high luminosity and water restriction. The aim of this study was to evaluate the antioxidant activity of Clusia fluminensis crude extracts through the scavenging of the stable free radical DPPH, and the determination of flavones and flavonols content in these extracts. The fruit acetonic extract showed the lowest EC50 value (2.71 ± 0.34 g extract / g DPPH), the lowest percentage of remaining DPPH at the concentrations of 125 and 250 µg/mL (about 4% in both), and also the greatest percentage of flavones and flavonols (13.93 ± 0.21 %). Food industry generates a significant amount of seed wastes from the juice production, frozen pulps and jams. Considering that the characterization of wastes is the first step to determine their potential use, the aim of the present study was to determine the composition and the antioxidant capacity of seeds from pitanga fruits with different flesh colors (purple, red and orange). Annona crassiflora (araticum), Solanum lycocarpum (lobeira), Eugenia dysenterica (cagaita), Caryocar brasilense (pequi) e Swartzia langsdorfii (banha de galinha) são frutas do bioma cerrado, conhecidas e consumidas principalmente por populações nativas dessa região. Como objetivo de avaliar a capacidade antioxidante de 15 hortaliças comercializadas na Cidade do Recife, extratos metanólicos foram testados quanto a atividade antioxidante em sistema modelo beta-caroteno/ácido linoléico e a habilidade de seqüestrar o radical estável 1,1-difenil-2-picrilhidrazil (DPPH). Todas as hortaliças investigadas exibiram propriedade antioxidante, entretanto a ação foi diferenciada entre os vegetais. Abstract This study aimed to characterize pomegranate seed oil and evaluate its quality and stability parameters against those of linseed oil. The profile of fatty acids and phytosterols and the content of tocopherols were analyzed by gas chromatography and high performance liquid chromatography, respectively. The objective of the present study was to characterize the chemistry and the antioxidant capacity in 8 species of native fruits from Amazonia. All the fruits were collected at full physiological and commercial maturity from properties located at: Boa Vista / RR, São Luiz do Anauá / RR, Manaus / AM, and Belém / PA. At the end of the experiment, the functional pattern for the camu-camu fruits showed that the total phenolic and ascorbic acid content and antioxidant assays were superior compared to the other samples. Abstract The effect of the variety (Gala, Lis Gala and Fuji Suprema) and the ripening stage (unripe, ripe and senescent) of apples on the phenolic compounds (HPLC) and antioxidant capacity (FRAP and DPPH) of apple juices and ciders were evaluated. The phenolic content of the Gala and Lis Gala apple juices decreased from the unripe to ripe stages and increased from the ripe to the senescent stages, while in the case of Fuji Suprema these values decreased with senescence.
