A COMPARISON OF SELECTED MILK INDICATORS IN ORGANIC HERDS WITH CONVENTIONAL HERD AS REFERENCE Organic Eprints
Hanuš, O.; Vorlíček, Zdeněk; Sojková, K.; Rozsypal, Roman; Vyletělová, Marie; Roubal, P.; Genčurová, V.; Pozdíšek, J.; Landová, H..
In a historical sense, current organic farming is an old-new alternative under changed world conditions. Organic dairying (O) is an alternative of friendly use of the environment in time of presupposed global climate changes. Potential impact of organic farming on raw cow-milk quality, composition and properties, as conpared to conventional milk production (C), were evaluatedin this paper on the basis of selectedm ilk indicators (MIs). Total solids, whey volume, pH of milk fermentation ability (FAM-pH), FAM streptococci, FAM noble lactic acid bacteria, I and Cu were higher in C milk (P<0.05). The alcohol stability (AS), titration acidity, curd firmness (CF), FAM titration acidity (FAM-T), Ca, P, Mg, K and Fe were higher in O milk (P<0.05)....

Chance für Schweizer Biomilch Organic Eprints
Baars, Ton.

Detailed milk fatty acid profiling of the Danish dairy cattle population Organic Eprints
Hein, Lisa; Buitenhuis, Albert Johannes; Gregersen, Sandra Beyer; Larsen, Lotte Bach; Demirovic, Dino; Warnecke, Solveig; Nielsen, Niels Henning; Munk, Arne; Sørensen, Lars Peter; Pedersen, Jørn; Kargo, Morten.
The fatty acid (FA) composition of bovine milk may be related to human health and technological properties of dairy products. The FA composition can be altered both through management and breeding. Large scale FA profiling of the Danish dairy cattle population has now been implemented for more than a year. For the first time access to millions of FA observations across an entire dairy population enables in depth analysis of the factors affecting the FA profile of milk. This was the aim of this study. For 12 months more than 3.5 million milk samples from four Danish dairy breeds had been analyzed using mid infrared spectroscopy and application of FOSS Application Note 64 for predicting content of seven FA groups and four individual FA. The results showed...

Eine gute Prävention erhält die Eutergesundheit Organic Eprints
Walkenhorst, Michael.

Ertl, Paul; Knaus, Wilhelm.
Dairy cows are very efficient in converting fibrous forages into nutritious foods for humans. However, when fed potentially human-edible feeds, such as grains and pulses, dairy cows show very low efficiency in terms of net food production. In this debate, by-products are often mentioned as high quality feeds with reduced human-edible fractions for dairy cows. The aim of this feeding trial was therefore to evaluate the effect of a full substitution of a common concentrate mixture (COM) with a mixture including solely industrial by-products (BP) on milk production, feed intake, and the edible feed conversion ratio (eFCR) in organic dairy production. Cows receiving the BP mixture showed higher intakes of fibre fractions and ether extract, while starch intake...

Evaluating the benefits and risks of organic raw milk cheese. Challenges in the production of organic cheeses mad from raw milk Organic Eprints
Szabolcs, Elek.
Raw milk offered for sale within and into the European Union has to be produced according to the requirements of Commission Directive 89/362/EEC and to meet quality standards described in Council Directive 92/46/EEC. Together the regulations say many things about the quality of milk and the hygienic means of production including guidance and requirements for: - The means of production, farm specifications etc. - Processes, milk handling - Animal health - Milk composition related to quality - especially antibiotics, cell count and bacterial content (Hillerton & Berry, 2004) Unpasteurized milk and the associated food products (yogurt, butter, cheese etc.) made from raw milk is safely produced and consumed in many areas around the world. Cheese...

Strudsholm, Finn; Gregersen, Sandra Beyer; Larsen, Lotte Bach; Poulsen, Nina Aagaard; Hein, Lisa; Sørensen, Lars Peter; Buitenhuis, Albert Johannes; Kargo, Morten; Munk, Arne.

Gastrointestinal metabolism of phytoestrogens in lactating dairy cows fed silages with different botanical composition Organic Eprints
Njåstad, Kari Marie; Adler, Steffen A.; Hansen-Møller, Jens; Thuen, Erling; Gustavsson, Anne-Maj; Steinshamn, Håvard.
Dietary phytoestrogens are metabolized or converted in the gastrointestinal tract of ruminants, only limited knowledge exists on the extent and location of this conversion in vivo. The objective of this study was to quantify the gastro-intestinal metabolism of phytoestrogens in lactating dairy cows fed silages with different botanical composition. Four lactating rumen cannulated Norwegian Red cattle were assigned to a 4?4 Latin square with 1 cow per treatment period of 3 wk. The 4 treatment silages were prepared from grasslands with different botanical compositions: organically managed short-term timothy (Phleum pratense L.) and red clover (Trifolium pratense L.) ley (2 yr old: ORG-SG); organically managed long-term grassland with a high proportion of...

Mastitis ganzheitlich angehen Organic Eprints
Walkenhorst, Michael.

Proliferative effect of whey from cows’ milk varying in phyto-oestrogens in human breast and prostate cancer cells Organic Eprints
Nielsen, Tina Skau; Höjer, Annika; Gustavsson, Anne-Maj; Hansen-Møller, Jens; Purup, Stig.
Intake of dietary phytoestrogens has received a great deal of attention due to their potential influence on hormone-sensitive cancers such as breast and prostate cancer. Cow´s milk contains phytoestrogens and the content varies according to the composition of the feed and the type and amount of legumes used. In this study we evaluated the proliferative effect of milk with different phytoestrogen content in human breast (MCF-7) and prostate cancer cells (PC-3). Milk was obtained from cows fed either a birdsfoot trefoil-timothy silage based ration (B1) or two different red clover silage based diets (R1 and R2) resulting in total phytoestrogen contents of 403 ng/ml, 1659 ng/ml and 1434 ng/ml for the B1, R1 and R2 diets, respectively. Whey was produced from...

Qualitätssicherung Bio-Alpenmilch Organic Eprints
Walkenhorst, Michael.

Steinwidder, Andreas; Frey, H.; Hofstetter, Pius; Gazzarin, C.; Starz, Walter.
Reducing the amount of human-edible feed in livestock diets is a key factor towards more sustainable livestock systems. Based on results from a conventional wholesystem study comparing performance, efficiency, land productivity, and profitability of an indoor-feeding system (SH) and a pasture-based dairy production system (VW) in lowlands of Central Switzerland, the net contribution of these systems to human food protein and energy supply was analysed. Depending on the presumed human-edible fraction, the system VW produced between 6.6 and 11.2 times more human-edible protein and 3.5 to 6.6 times more human-edible energy via animal products than the animals consumed via feeds. For the group SH, these factors were clearly lower but still in a positive range...

Stall- und weidebasierte Milchproduktionssysteme Modellbetriebsanalysen zur Wirtschaftlichkeit unter österreichischen Produktionsbedingungen Organic Eprints
Wolfthaler, J.; Steinwidder, Andreas; Frey, H.; Hofstetter, Pius; Gazzarin, C.; Kirchweger, Stefan; Kantelhardt, Jochen.
In a whole-system study in lowland of Central Switzerland from 2007 - 2010 compared the performance, efficiency, land productivity and profitability of indoor-feeding (SH) dairy production with that of pasture-based feeding (VW) dairy production. In the present study these experimental results were economically evaluated under Austrian market und production conditions. Therefore conventional and organic model farms were created and analyzed using full cost accounting. In comparison to the barn feeding strategy a higher farm income, income per labor unit were achieved with the pasture-based feeding strategy. These economic differences were more pronounced under organic than conventional conditions.

STRUCTURE OF NITROGEN FRACTIONS ORGANIC AND CONVENTIONAL COW'S MILK Organic Eprints
Zhukova, Yaroslava; Petov, Pylyp; Mudrak, Tatyana.
Raw organic and conventional cow’s milk samples were analyzed for total nitrogen, non-protein nitrogen and milk urea content with the aim of evaluation of the different diets effect. Conventional milk contained higher level of total milk urea nitrogen as well as higher proportion in total nitrogen and non-protein nitrogen fraction. We detected that ratio of milk urea nitrogen to non-protein nitrogen is the most significant criterion for assessment of diet differences.

The impact of organic farming on mineral composition of cow milk Organic Eprints
Hanuš, O.; Landová, H.; Macek, A.; Genčurová, V.; Rozsypal, Roman; Vorlíček, Zdeněk; Roubal, P..
Milk mineral matters are important in human nutrition, especially Ca, Mg and I. Increase of milk Mg along decrease of NPK soil fertilization under the Czech Republic (CR) conditions was predicted. This hypothetical prediction is based on antagonistic relationships between K fertilization, Mg level in cow roughage feeding and transfer of Mg into milk. In difference testing the conventional (C) cow milk was reference versus organic (O) milk. Holstein bulk milk samples (BMS) from winter and summer season in 4 C (n = 32 BMSs) and in 4 O (n = 16) herds were investigated. 6 herds were and 2 C were not grazed, other nutrition was typical under the CR conditions. Average MY of C herds was 7016±1068 and MY of O herds was 7037±422 kg per lactation. Macro- and...
